1 1/2 pounds fresh sugar snap peas
1 tablespoon good olive oil
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
Sea salt or fleur de sel, for serving

Steps:

  • Remove and discard the stem end and string from each sugar snap pod.
  • Heat the olive oil in a large saute pan over medium-high heat. Add the sugar snap peas, salt and pepper and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender.
  • Place the sugar snap peas in a serving bowl, sprinkle with sea salt and serve.

  • Cook 1 1/4 pounds sugar snap peas in boiling water until bright green, about 3 minutes; drain. Cook 1 minced shallot in a skillet with 2 tablespoons butter until soft, about 3 minutes. Whisk in a splash of water, then add the peas and cook 2 to 3 minutes. Add chopped tarragon and parsley, and salt and pepper.

3 tablespoons whipped butter, softened
1 teaspoon orange rind, grated
4 cups English peas, fresh (see intro for frozen)

Steps:

  • Combine the first 4 ingredients in a small bowl, stirring until blended. Set aside.
  • Arrange the fresh peas in a vegetable steamer over boiling water. Cover and steam for 10 to 15 minutes or until the peas are tender. (If using frozen peas, follow package directions!). Remove the peas from the steamer and spread the butter over the peas. Let it melt evenly and stir. Serve immediately.

  • Stir together softened butter and wasabi powder until well combined.
  • Microwave sugar snap peas with water, covered, at HIGH 3 to 4 minutes, until crisp-tender. (If using frozen sugar snap peas, microwave without any water).
  • Toss with wasabi butter.

1 pound sugar snap peas
Salt and freshly ground pepper to taste
2 tablespoons butter
1 tablespoon shredded fresh mint

Steps:

  • Pluck off and discard the string from each pea pod.
  • Bring salted water to boil; there should be enough to cover peas when added. Add peas. When water returns to a boil, cook about 3 minutes. Do not overcook. Drain.
  • Return peas to saucepan. Add pepper, salt, butter and mint. Stir to blend until the pieces are well coated and hot. Serve immediately.

2 lbs fresh sugar snap peas
1/4 lb bacon
1 large onion, sliced
3 cloves garlic
1 teaspoon sugar
1/4 cup chicken broth
fresh lemon slice
salt and pepper, i like a lot (to season)

Steps:

  • Cook bacon till crisp set aside.
  • In the same pan removing all grease except for a little to cover bottom saute onion, garlic and sugar.
  • Add Sugar Snap Peas and broth simmer covered about 5 minutes till crisp tender stirring a couple of times.
  • Meanwhile crumble the bacon.
  • Place snap peas in a large dish season fresh lemon juice with more salt and pepper if needed.
  • Top with bacon and serve.
  • And garnish with lemon slices.

These sugar snap peas are one of our favorite side dishes. They go very well with different meats such as beef, poultry and even fish. They are also very delicious on their own, which I often eat for a light lunch. The best results are achieved when using fresh. I've used frozen and it is very good, but not to the same level as the fresh.

1 lb sugar snap pea, fresh
2 tablespoons extra virgin olive oil
1/3-1/2 cup finely diced onion (very finely diced)
2 teaspoons dried thyme
kosher salt
freshly grated black pepper
1/2 teaspoon sugar (optional)

Steps:

  • Preheat oven to 425 degrees F.
  • Remove and discard the stem end and the string from each pod. (If this is not removed, you will find yourself having to spit it out when chewing, so you want to make sure to remove it).
  • Rinse pods under cold running water. Pat dry.
  • Spread sugar snap peas in a single layer on a cookie sheet (that have ridges). Sprinkle with the olive oil, finely diced onion, and thyme.
  • Season with salt and black pepper. Sprinkle with sugar if necessary. (The sugar addition is only needed if the sugar snaps are not in season and lack natural sweetness. Adding the sugar is all a matter of taste).
  • Bake for approximately 10-12 minutes in the preheated oven, until tender crisp.

60 ml lemon juice
2 tablespoons coarsely chopped fresh dill

  • You can boil, steam or microwave the beans and peas separately until they are just tender, then drain them.
  • Heat a non stick pan that has been sprayed with olive oil and cook the capers, stirring them until they are lightly browned.
  • Add the lemon juice, peas and beans and stir until vegetables are hot.
