Oysters with Tosazu Dressing 3 Ways image

Tosazu is a light Japanese dressing made up of vinegar, soy sauce, mirin and bonito dashi stock. It is a delicious way to enjoy fresh oysters. Try three different toppings on Oysters with Tosazu Dressing.Total Time does not include time required to make Tosazu but even if you make it from scratch, it takes only 5 minutes or so.

1 dozen oysters in opened shells ((note 1))
1 tbsp salt
4 tbsp Tosazu ((for 12 oysters, note 2))
2 tbsp momiji oroshi ((note 3))
2 tbsp shallot/scallions (, finely chopped (note 4))
4 perilla leaves
½ tbsp grated ginger
2 tbsp chives (, finely chopped)
1 tbsp dried wakame seaweed (, ground finely (note 5))
20 g ikura ((salmon roe))

Steps:

  • Remove oysters from the shells and place the oysters in a sieve. Sprinkle salt over the oysters and massage gently several times with your hand.
  • Rinse the oysters well under cold running water and drain well.
  • Clean the shells, removing tiny broken shell pieces. Drain water well.
  • Return the oysters back to the shells and place them on a large serving plate.
  • Pour 1 teaspoon of Tosazu over each oyster, then place ½ teaspoon of shallots on each oysters.
  • Pick ¼ teaspoon each of momiji oroshi, squeeze slightly to get excess moisture out if necessary, and place it on the oysters.
  • Roll perilla leaves together and cut the roll to 1mm thick all the way through. Untangle the rolled strands.
  • Pour 1 teaspoon of Tosazu over each oyster.
  • Spread equal portions of perilla on the oysters, then place a small pinch of grated ginger in the centre of each oyster.
  • Pour 1 teaspoon of Tosazu over each oyster.
  • Sprinkle 1 teaspoon of chives on each oyster, covering half of the lip-side of the oyster.
  • Sprinkle ground seaweed over the white side of the oyster.
  • Place several ikura in the center of each oyster.

2 green onions (scallions), sliced thinly
24 oysters (600g), on the half shell
1 dried red thai (serrano) chilli
1/2 cup (125ml) rice wine vinegar
2 1/2 tablespoon white (granulated) sugar
2 teaspoon sea salt
2 centimetre piece fresh ginger (10g), cut into thin strips

Steps:

  • Place green onions in a small bowl filled with iced water. Leave at room temperature until they curl.
  • Meanwhile, make chilli and ginger dressing: Dry-fry chilli in a small frying pan until blackened and puffed; cool. Using a mortar and pestle, pound chilli to a fine powder. Combine ground chilli with vinegar, sugar, salt and half the ginger in a small saucepan; stir over low heat, without boiling, until sugar is dissolved. Bring to the boil. Reduce heat; simmer, uncovered, without stirring, 5 minutes. Cool.
  • Place oysters on a serving platter. Drizzle with dressing; top with remaining ginger and the onion. Or, serve chilli and ginger dressing separately as a dipping sauce.

1 garlic clove , minced
thumb-sized piece ginger , finely chopped
2 tbsp mirin
1 tbsp soy sauce
4 spring onions , finely sliced
1 red chilli , finely chopped
2 tbsp sesame oil
bunch chives , finely chopped, to serve

Steps:

  • Shuck your oysters if not already prepared. Watch our video guide.
  • To make the sauce, mix all the ingredients together in a small bowl. Drizzle the sauce over the oysters, then sprinkle with chopped chives and serve straight away.

1 c. Yellow Cornmeal
1/2 c. All-purpose Flour
1 tsp. Salt
1 tbsp. Baking Powder
1 c. Buttermilk
1/2 c. Milk
1 whole Egg
1/2 tsp. Baking Soda
1/4 c. Shortening
2 tbsp. Shortening

Steps:

  • Preheat oven to 450 degrees.Combine cornmeal, flour, salt, and baking powder in a bowl. Stir together.Measure the buttermilk and milk in a measuring cup and add the egg. Stir together with a fork. Add the baking soda and stir.Pour the milk mixture into the dry ingredients. Stir with a fork until combined. In a small bowl, melt 1/4 shortening. Slowly add melted shortening to the batter, stirring until just combined. In an iron skillet, melt the remaining 2 tablespoons shortening over medium heat. Pour the batter into the hot skillet. Spread to even out the surface. (Batter should sizzle.)Cook on stovetop for 1 minute, then bake for 20 to 25 minutes or until golden brown. Edges should be crispy!

1/3 cup rice vinegar
2 tablespoons lime juice (fresh)
1 tablespoon olive oil
2 tablespoons fresh coriander (finely chopped)
48 oysters (in half shell)
2 shallots (spring onions)
ice (crushed)

Steps:

  • Cut shallots (spring onions) into 5 cm lengths then shred legthwise very finely.
  • Put the sweet chilli sauce, lime juice and olive oil in a bowl and mix until well combined. Add finely chopped coriander.
  • Arrange the oysters on a platter on a bed of crushed ice. Place a couple of shreds of shallot (spring onion) on each oyster and serve immediately, either with a little of the dressing spooned over each oyster or, if you prefer, with the dressing served separately.
