STEAMED VEGETABLE SPRING ROLLS

2 teaspoons peanut or olive oil
2 cups shredded coleslaw mix
1/2 cup Thai Peanut Sauce, recipe follows
8 spring roll wrappers (sold in the refrigerated section of the produce aisle)
1 (6-ounce) can sliced water chestnuts, drained and chopped
1 (11-ounce) can asparagus, drained and cut into 1-inch pieces
1/4 cup reduced-sodium soy sauce
3 cups reduced-sodium beef broth
2 tablespoons reduced-sodium soy sauce
2 tablespoons creamy peanut butter
2 teaspoons toasted sesame oil
1 teaspoon hot sauce

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the coleslaw mix and cook, stirring, until the cabbage wilts, about 3 minutes. Add the peanut sauce and mix well to combine. Remove from the heat.
  • Place 2 inches of water in the bottom of a steamer or large saucepan and set over medium-high heat.
  • Meanwhile, arrange the spring roll wrappers on a flat surface. Top each wrapper with an equal amount of the coleslaw mixture, water chestnuts, and asparagus, making an even layer down the center. Roll up the wrappers, tuck in the ends and place side by side in steamer basket or large colander. Set the steamer basket (or colander) over the now simmering water, cover, and steam until the wrappers are translucent, about 5 minutes.
  • Serve the spring rolls with soy sauce on the side for dipping.
  • In a medium saucepan, whisk together the sauce ingredients until well blended and set the pan over medium heat. Bring to a simmer and let simmer for 10 minutes.
  • The leftover peanut sauce will keep in the refrigerator up to 4 days or in the freezer up to 3 months; thaw completely in the refrigerator or microwave for about 3 minutes on LOW before using.
  • Yield: approximately 3 1/2 cups

2 teaspoons toasted sesame oil
8 ounces tempeh (cut into two by 1/4 inch strips)
1/2 cup bean sprouts
4 scallions (cut into 3 in. pieces)
1/2 cup Chinese cabbage (shredded)
1/2 red bell pepper (roasted 1/2 cut into strips)
1 lemon, juice of
8 egg roll wraps

Steps:

  • Heat sesame oil in a skillet over medium heat.
  • Add tempeh and cook, turning, until golden brown on all sides; drain and set aside.
  • Combine green onions, cabbage, and bell pepper with lemon juice in a medium bowl.
  • Place one egg roll wrapper on work surface.
  • Arrange 1/8 of the vegetables, about 3 tablespoon, and a strip of tempeh close to the middle of the wrapper.
  • Fold over the corner near you, then the two sides corners.
  • Gently roll toward the far corner.
  • Moisten the edges with water, to seal the roll.
  • Arrange rolls in a steamer, and steam over boiling water for ten minutes.
  • Transfer rolls to serving platter.

16 shrimp (16 to 20 count), peeled and deveined, tails removed
3 cups dry white wine
2 bay leaves
Juice from 1 lime
1 tablespoon kosher salt
2 ounces thin rice vermicelli
1 cup shredded carrots
1/2 English cucumber, peeled and julienned
1/2 red bell pepper, thin julienne
2 tablespoons rice wine vinegar
2 teaspoons soy sauce
8 large rice paper wrappers (8 1/2-inch rounds)
1 jalapeno, cut into 1/8-inch slices
8 fresh Thai basil leaves, chiffonade
Peanut Dipping Sauce, for serving, recipe follows
1 tablespoon peanut oil
2 cloves garlic, minced
1/2 cup peanut butter
1/4 cup hoisin sauce
1 to 2 teaspoons sambal olek
Chopped roasted peanuts, for garnish

Steps:

  • Score the shrimp on the underside in three equally spaced horizontal cuts. Press firmly on the shrimp to straighten.
  • In a soup pot, combine 4 cups water, the wine, bay leaf, lime juice and salt and bring to a simmer. Turn off the heat, add in the shrimp and cover until the shrimp are pink, about 4 minutes. Scoop out the shrimp and shock in ice water to stop the cooking. Then drain and dry. Reserve the poaching liquid, keeping it hot but not simmering.
  • Add the vermicelli to the hot poaching liquid (no need to simmer or boil the water because that may over cook the noodles). Cook until just al dente, about 8 minutes. Drain.
  • Toss the carrots, cucumbers and red bell peppers with the rice wine vinegar and soy sauce.
  • Dip each rice paper wrapper in warm water, one at a time, for a second (no longer or they will get too soft). The wrapper should still feel somewhat hard when you first start working with it. By the time you finish getting all of your fillings in, the wrapper will have continued to soften. Layer the first one with 2 shrimp, a basil leaf, jalapeno slice, some vermicelli and vegetables. Gently wrap like a tiny burrito and cut on the sharp bias. Serve with Peanut Dipping Sauce.
  • Add the peanut oil to a small saute pan over medium heat and add the garlic. Cook for 1 minute, and then turn off the heat. Then add the peanut butter, hoisin, sambel olek and 3 tablespoons water and mix together. You may need to add a little extra water if the mixture is too thick. Garnish with the chopped peanuts.

1 cup finely shredded cabbage
1 (6.5 ounce) can shrimp, rinsed and drained
⅓ cup sweet and sour sauce
⅓ cup minced celery
¼ cup shredded carrots
20 rice wrappers (6.5 inch diameter)

Steps:

  • In a medium bowl, mix the cabbage, shrimp, sweet and sour sauce, celery and carrots.
  • Fill a small bowl with hot water. Dip rice wrappers one at a time into the water. Allow wrappers to soften, then remove from the water and drain. As wrappers are removed from the water, fill each with 2 tablespoons of the cabbage mixture. Roll the wrappers and chill covered until serving.

These tasty spring rolls are packed with vegetables, seafood and pork. They contain a lot of ingredients but are worth the effort. Serve them with your favorite sauce. Some types of mushrooms may need to be soaked 2 to 3 hours before use. Ground turkey may be substituted for pork.

2 ounces dry soy vermicelli
4 eggs, beaten
1 onion, finely chopped
2 ounces mushrooms, drained and chopped
¾ (4 ounce) can small shrimp, drained and chopped
1 pound lean ground pork
2 tablespoons vegetable oil
1 carrot, shredded
2 ounces crabmeat
3 ounces bean sprouts
2 pinches ground black pepper
1 tablespoon soy sauce
3 tablespoons fish sauce
1 clove garlic, chopped
20 rice wrappers (6.5 inch diameter)
1 quart oil for deep frying

Steps:

  • Soak the vermicelli 30 minutes in warm water; drain.
  • In a large bowl, mix the vermicelli, eggs, onion, mushrooms, shrimp, pork, vegetable oil, carrot, crabmeat, bean sprouts, pepper, soy sauce, fish sauce and garlic.
  • One by one, moisten the rice wrappers with a damp tea towel and fill with 2 to 3 tablespoons of the vermicelli mixture. Roll the wrappers, and allow them to set for 30 minutes.
  • In a large saucepan, heat the oil to 375 degrees F (190 degrees C).
  • Fry the spring rolls one or two at a time until golden brown, about 3 minutes. Drain on paper towels.
