1 1/4 pounds broccoli rabe
4 medium-size ripe plum tomatoes
2 tablespoons olive oil
2 teaspoons chopped garlic
Salt and freshly ground pepper to taste
1/4 teaspoon hot red pepper flakes

Steps:

  • Cut off and discard any tough stems from the rabe.
  • Core and chop the tomatoes into 1/2-inch cubes.
  • Bring enough salted water to a boil to cover the rabe when added. Add the rabe, bring to a boil and cook for 1 minute. Drain, reserving 1/4 cup of the cooking liquid.
  • Heat the oil in a large skillet, add the rabe, tomatoes, garlic, salt and pepper to taste and the pepper flakes. Add the reserved liquid. Cook over high heat for 2 minutes, shaking and stirring. Serve immediately.

10 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
6 whole garlic cloves, peeled and crushed, plus 4 cloves peeled and thinly sliced
8 sprigs fresh thyme
10 plum tomatoes, stemmed and cut in half lengthwise
3 bunches broccoli rabe, stems trimmed up to the base of the leaves
3/4 cup chicken stock
1/4 teaspoon dried red pepper flakes

Steps:

  • Preheat oven to 400 degrees. Drizzle 6 tablespoons oil on a rimmed baking sheet. Season with salt and pepper. Add whole garlic, thyme, and tomatoes, cut sides down. Bake until tomato skins blister, about 25 minutes. Remove from oven; peel off tomato skins. Lower oven to 325 degrees. Return tomatoes to oven; bake for 30 minutes. Let cool on pan. Discard garlic and thyme.
  • Bring a large pot of salted water to a boil. Prepare an ice-water bath. Add broccoli rabe in 2 batches to boiling water; blanch for 20 seconds. Transfer to ice water. Drain and chop roughly.
  • Heat 4 tablespoons oil in a large saute pan over medium heat. Add sliced garlic; saute until lightly golden, about 4 minutes. Add broccoli rabe and stock. Stir in red pepper flakes. Season with salt. Add tomatoes and their juices and cook over medium heat, simmering until broccoli is tender. Season again.

Coarse salt and freshly ground pepper to taste
Dash extra-virgin olive oil

Steps:

  • Trim the tough stalk from the broccoli rabe and cut the leaves coarsely into pieces one to two inches long.
  • Heat the water in a steamer and place the broccoli rabe in the top half. Steam for five to seven minutes or until tender. Season with the salt and pepper and sprinkle with oil. Serve immediately.

Chicken Stuffed with Smoked Mozzarella, Roasted Tomatoes and Broccoli Rabe over Potatoes with Marsala Sauce image

8 Roma plum tomatoes, halved lengthwise and seeds removed
4 bunches broccoli rabe (rapini), divided into 8 sections
Salt and freshly ground black pepper
1/2 cup plus 2 tablespoons olive oil, divided plus more for coating potatoes
2 finely diced shallots, or 1 white onion, finely diced
1 (750-ml) bottle Marsala
1 cup vegetable stock
1 tablespoon freshly chopped thyme leaves
8 (6-ounce) boneless chicken breasts, skin on
8 ounces smoked mozzarella, sliced
6 to 8 white potatoes, scrubbed and cut into chunks
1/2 cup unsalted butter (1 stick)
1/2 bunch fresh chives, chopped

Steps:

  • To roast vegetables, preheat oven to 400 degrees F. Place tomatoes and rapini on a baking sheet and season with salt and pepper and coat with 1/4 cup of the olive oil. Roast the vegetables until tender, then remove and allow to cool.
  • Begin the Marsala sauce by heating 1/4 cup of the oil in a saute pan and cooking the shallots or onion gently until translucent. Deglaze the pan with the wine and add the stock and fresh thyme. Allow to reduce by 2/3.
  • For the stuffed chicken, preheat oven to 350 degrees F. Lay a long piece of plastic wrap over your cutting board and tuck it underneath the sides of the board. The chicken breasts should be placed on the covered cutting board, skin side down, with enough space between them so they can lay flat after you "butterfly" them. To make the butterfly cut, carefully slice open (without slicing the chicken all the way through) and spread the flesh of the chicken out so you will be able to pound it out into a single thin piece on which you will place stuffing and then roll up. Season the breasts with salt and pepper. Then put another length of plastic wrap over the seasoned chicken breasts and flatten with meat mallet to integrate the seasoning into the chicken. (Covering the chicken with the plastic will also keep the mess down when you pound with the meat mallet.) Pound chicken thin and remove plastic. Lay sliced smoked mozzarella on each breast followed by broccoli rabe and roasted tomatoes. Fold in each end and roll tightly, securing with toothpicks as needed, and placing on a baking sheet. Season with salt and pepper and brush with 2 tablespoons olive oil. Place in the oven and roast until fork tender about 45 to 50 minutes.
  • Place the potatoes on a baking sheet, season with salt and pepper, and coat with olive oil. Place in the oven and roast potatoes until they are also fork tender.
  • Strain Marsala sauce and whisk in butter to finish. Season with salt and pepper, as needed.
  • Remove any toothpicks securing the chicken. Slice each chicken roll to reveal the stuffed interior. Place on serving plate with roasted potatoes. Spoon Marsala sauce around chicken. Garnish with chopped chives.

1 pound tender fresh unblemished broccoli rabe
2 tablespoons olive oil
1 tablespoon finely chopped garlic
1/2 teaspoon hot red pepper flakes
4 small plum tomatoes, about 1 pound, cut into 1/2-inch cubes
Salt and freshly ground pepper to taste

Steps:

  • Using a small paring knife cut off and discard the bottom stalks of the rabe. The tender leaves and stems plus the buds of the vegetable should be left intact. Rinse the rabe well in a colander. Drain, but allow the water that clings to the leaves to remain.
  • Heat the oil in a heavy skillet or casserole with a tight-fitting lid. Add the garlic and pepper flakes and cook briefly. Do not brown. Add the rabe and stir. Add the tomatoes, salt and pepper and cook, stirring, until wilted. Cover closely and let cook for about 5 minutes, turning the vegetable occasionally so it cooks evenly. Serve immediately.

1 tablespoon extra virgin olive oil
2 garlic cloves, sliced (I used more)
1/2 cup grape tomatoes, halved (I use more)
1/4 teaspoon crushed red pepper flakes (I use more)

Steps:

  • Bring 2 quarts of water to a boil. Place broccoli rabe in boiling water and cook for about 2 minutes.
  • Drain. Place in ice water to cool.
  • Squeeze liquid from broccoli rabe and set aside.
  • Heat oil in skillet over medium heat and add garlic. Saute' for 1 minute or until lightly browned.
  • Add broccoli rabe, tomatoes, and pepper. Cook 3 minutes or until tender.

Steps:

  • Trim broccoli by cutting off the bottom of the stalks. Rinse well and drain allowing water droplets to remain on broccoli.
  • Heat oil in a heavy skillet. Add garlic and red pepper flakes. Add broccoli rabe and stir until the leaves start to wilt. Season with salt and pepper. Cover skillet and let cook 3 to 5 minutes, turning occasionally.

4 sun-dried tomatoes, sliced
1/4 cup olive oil
4 -6 garlic cloves, minced
water or chicken stock, for moisture
salt and pepper
crushed red pepper flakes

Steps:

  • Clean the rapini in lots of water, removing any loose dirt & the bottom portion of the stems which appear tough. Cut into 4-inch lengths.
  • Heat the oil in a large saute pan over medium-high heat. Add the garlic and saute until slightly softened, about 1 minute. Add the rapini, just enough water or stock to add moisture to the bottom for cooking, sun-dried tomatoes, salt and pepper. Cover and simmer until desired tenderness, about 15-30 minutes adding extra water if needed.
  • Remove the lid and allow the water to evaporate.
  • Garnish with Crushed pepper flakes.
