Steps:
- Fry bacon over medium heat, in a medium sized pot about 4 minutes.
- Add in onion, and continue until bacon is brown, and onion is tender, about another 4 minutes.
- Add in clams, and beer.
- Cover and steam clams until they pop open, about 7 minutes.
- Throw away any clams that do not open.
- Stir together and serve.
MANILA CLAMS IN GARLIC AND BEER

- Heat oil in a large stock pot. Gently saute garlic and onions until light golden brown, being careful not to burn them. Place clams in pot and season with salt and pepper. Add fresh basil and pour in beer. Cover pot and bring to boil over medium heat, cooking until clams open. Remove clams to platter or large serving bowl, discarding any that do not open. Pour broth into a serving bowl for dipping with crusty bread.

- Coat a large pot with oil and bring it to a high heat. When the oil is hot add the garlic, scallions, ginger and chiles. Saute for 1 to 2 minutes or until everything is very aromatic.
- Add the clams and stir to coat with the oil and other ingredients. Add the vinegar, beer, and kaffir lime leaves. Cover and steam the clams until they open, about 5 to 7 minutes. Discard any clams that have not opened.
- Divide the clams into serving bowls with the broth and sprinkle with the chopped cilantro.
- WOWEEE!!!
STEAMED CLAMS WITH BACON AND BEER RECIPE
Steps:
- Fry 4 slices chopped bacon in a medium pot until soft and golden, about 4 minutes. Add 1 small chopped onion and 2 cloves chopped garlic and continue cooking until the bacon is nicely browned and the onion is tender, about 4 minutes longer.
- Stir in 3 pounds well-scrubbed Manila clams and add 1 cup beer or water or chicken stock. Cover the pot and steam the clams for 3 to 5 minutes, until they open. Discard any clams that do not open.

- Place a steamer insert into a saucepan. Pour beer in and fill to 1 to 2 inches below the bottom of the steamer. Add clams to the steamer insert, cover, and bring to a boil.
- Steam until the top clams barely open, 3 to 5 minutes; do not overcook or clams will become tough and rubbery.
- While clams are steaming, melt butter in a skillet over medium heat. Add parsley and garlic and saute until fragrant, 1 to 2 minutes.

- Bring beer to a boil in a large heavy pot. Add clams. Cover pot, reduce heat to medium, and steam clams until they open, 6-8 minutes. Using a slotted spoon, transfer clams to a large bowl or platter (discard any that do not open). Serve with lemon halves.

- Crush the mustard seeds and the coriander seeds lightly in a mortar and pestle, or place the seeds in a heavy plastic bag and lightly crush with a mallet or rolling pin.

- Clean clams by sprinkling with corn meal, covering with cold (iced) water, and letting sit for 1-1 1/2 hours. Drain, scrub, and rinse before cooking.
- Combine all ingredients, except clams, in a large pot.
- Bring to slow boil over medium heat.
- Add clams, turn up heat to medium-high, and cover.
- Cook for 5-6 minutes, until shells are wide open.
- Discard any clams that do not open with the others, this means they are bad.
- Serve with broth (either poured over clams in a large bowl or for dipping in smaller bow(s). (strain through cheesecloth, if desired, to remove any remaining grit.).
STOUT-BRAISED CLAMS WITH POTATO, FENNEL, AND BACON
Clams steamed in beer is a favorite pub dish, and for good reason. The aroma of the hops in beer perfumes the shellfish and the malty flavor adds an extra roundness to the broth. Your kitchen will smell amazing! The sweetness of the clams, the licorice essence of fennel, the salty-smoky depth of bacon, and the slight bitterness of the stout make this a complex and flavor-packed dish.

- Put a Dutch oven or large pot over medium heat. When the pot is hot, add the bacon and fry until it gets crispy and renders the fat, roughly 4 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Add the potatoes to the delicious fat left in the pot. Cook, stirring with a wooden spoon, until the potatoes get a little color and start to soften up, about 5 minutes. Add the onion, fennel, garlic, and pepper. Continue to cook until the vegetables are soft, about 5 minutes.
- Raise the heat to high. Toss in the clams and pour in the stout and stock. Give everything a good stir and cover the pot. Steam until the clams open, 5 to 8 minutes, discarding any that do not open. Stir in the butter and sprinkle the reserved fennel fronds on top. Serve the braised clams from the pot, ladling portions at the table.

- In a big saucepan, combine the beer, broth, garlic, bay leaf, parsley, and salt/pepper.
- Bring to a boil; decrease heat to medium; simmer 5 minutes to blend flavors.
- Add clams; cover and simmer 4-5 minutes until clam shells open.
- Remove bay leaf and discard; remove any clams that did not open and discard.
- Place clams in 4 large individual bowls and ladle some of the liquid from the saucepan over the clams.
- Serve with individual bowls of melted butter for dipping; serve immediately.

- Clean and purge clams using the instructions in my Fresh Clams Guide. Cultivated clams should only need one, 20 minute, soaking. Discard any clams that are chipped, don’t close when you gently tap them on the counter, or float when you soak them.
- Add bacon to a cold, heavy-bottomed pot, place over medium-high heat, and cook until just starting to brown. Add shallots and a few grinds of black pepper and continue cooking until shallots are softened and bacon is lightly crisped. Add garlic and cook for 1 minute, until fragrant.
- Pour the lager into the pot and bring to a boil, scraping the bottom to release any browned bits. Add clams and thyme sprigs, cover, reduce heat and steam for 5-10 minutes (depending on variety), gently shaking the pan a few times, until clams have opened. (I start checking a few minutes early and remove them as they open to avoid overcooking.)
- If some of the clams don’t open, cover and continue cooking for an additional 3-5 minutes, checking them often. Discard any clams that haven't opened after this time.
