Give a basic broccoli dish a boost by serving it with black pepper and fresh lemon.

1 bunch broccoli (about 1 pound)
Kosher salt and freshly ground black pepper
Lemon wedges

Steps:

  • Wash the broccoli in cold water and pat dry. Peel the stems and cut them into rounds up to where the florets branch off. Break apart the florets.
  • Pour about an inch of water into a skillet or wok and bring to a boil over medium-high heat. Put the broccoli florets in a steamer basket and season with salt. Set the steamer basket over the boiling water and cook until crisp-tender, 8 to 10 minutes depending on the size of the florets. Transfer the broccoli to a plate, sprinkle with black pepper and serve with lemon wedges.

Sauteed Broccoli and Almonds image

1 large head broccoli, stalks trimmed
4 tablespoons butter
2 cloves garlic, thinly sliced in rounds
1 teaspoon salt
1/4 cup slivered almonds

Steps:

  • Cut stalk of broccoli from florets. Peel the stalk and cut the stalk into 1/4-inch rounds. Cut head of broccoli into florets.
  • In a large saute pan, toast almonds until golden, about 4 minutes. Remove from pan. Add butter and when melted, add garlic and sliced stalks. Saute, until garlic turns golden and stalks start to brown, 2 to 3 minutes. Add the florets and continue cooking another 2 minutes. Add 1/4 cup water and cover pan. Cook broccoli until crisp tender, about 3 minutes more. Season with salt. Stir in toasted almonds and serve.

1 bunch broccoli, sliced into to 3 to 4-inch branches
1/4 cup water
4 tablespoons butter
2 tablespoons lemon juice
1/4 sliced almonds
Salt and pepper

Steps:

  • Place broccoli into baking dish and pour in water. Cover tightly with plastic wrap. Cook at 100 percent for 8 minutes. In a 1 cup glass measuring cup, melt butter with lemon juice, almonds and salt and pepper. Cook for 1 minute and 30 seconds.

Two 10- to 12-ounce bags steamable broccoli florets, such as Birds Eye
4 to 6 sprigs fresh thyme
1 clove garlic, grated on a rasp grater
Zest of 1 lemon
1/2 cup mayonnaise
1 tablespoon plus 1 teaspoon sriracha
1 tablespoon lemon juice
1 tablespoon sugar
Freshly cracked black pepper
1/4 cup finely chopped red onion
1/4 cup raisins
1/4 cup dried cranberries
1/4 cup toasted sliced almonds

Steps:

  • For the broccoli: Steam the broccoli according to the package directions.
  • Add the thyme, garlic and zest to a large bowl and brush or rub the ingredients against the bottom and sides of the bowl. Add the steamed broccoli and toss. Refrigerate until chilled.
  • For the dressing: In a medium bowl, add the mayonnaise, sriracha, lemon juice, sugar and some black pepper. Whisk until the sugar dissolves.
  • For the salad: Add the red onions, raisins and cranberries to the bowl with the dressing. Stir to combine.
  • Discard the thyme from the broccoli. Add the dressing and gently fold until the broccoli is evenly coated. Serve chilled or at room temperature sprinkled with the almonds.

1 2/3 pounds broccoli florets (from 2 to 3 heads of broccoli)
8 ounces cream cheese, softened
4 tablespoons Greek yogurt
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon ground cardamom
1/4 teaspoon ground or freshly grated whole nutmeg
3/4 cup ground almonds
3 tablespoons lemon juice

Steps:

  • Heat the oven to 400 degrees and line 2 large baking trays with parchment paper. Break the broccoli into bite-size pieces. Place all the other ingredients into a large bowl and mix well, using a spatula, spoon or electric mixer to combine. Add the broccoli and mix using clean hands, making sure the mixture gets into all the nooks and crannies of the florets.
