Three types of flour go into these hearty loaves: whole-wheat, bread, and rye. Cocoa and coffee add color and depth of flavor.

Number Of Ingredients 14

1 tablespoon instant coffee
2 cups plus 2 tablespoons warm water (100 to 110 degrees)
1/4 cup unsulfured molasses
5 teaspoons active dry yeast (not rapid-rise)
2 tablespoons honey
4 1/2 cups whole-wheat bread flour
1/2 cup plus 2 tablespoons unbleached bread flour, plus more for dusting
1 1/4 cups rye flour
2 tablespoons sifted Dutch-process cocoa powder
4 teaspoons kosher salt
Vegetable oil, for bowl and plastic wrap
Coarse cornmeal, for dusting
1 large egg white, slightly beaten
2 cups boiling water

Steps:

  • In a small bowl, dissolve coffee in 1/4 cup warm water. In the bowl of a stand mixer, combine remaining 1 3/4 cups plus 2 tablespoons warm water and molasses. Sprinkle yeast over top, stir, and let stand 5 minutes.
  • Add honey, flours, cocoa, and salt to yeast mixture. Attach bowl to stand mixer fitted the dough-hook attachment and beat on low speed 1 minute. Increase speed to medium-low and beat until dough is smooth and slightly tacky, about 3 minutes (or knead by hand 15 to 20 minutes).
  • Transfer dough to a lightly floured surface; knead by hand, turning dough over, 4 to 5 times before shaping into a ball. Transfer dough, smooth-side up, to a lightly oiled large bowl. Cover with plastic wrap; let rise in a warm place until doubled in volume, 1 1/2 to 2 hours.
  • Turn dough out onto a lightly floured surface and divide in half. Set one half aside, loosely covered with lightly oiled plastic wrap. Shape remaining half into a 9-inch rectangle, with a short side parallel to work surface. Fold top third of dough towards center, then fold bottom third of dough on top, pressing gently to seal. Turn dough 90 degrees and repeat folding process, pinching seam and sides closed. Place seam-side down and roll dough back and forth with palms of hands to form a loaf about 12 inches long with tapered ends. Repeat shaping process with remaining half of dough. Sprinkle a clean cotton cloth with cornmeal and place loaves on top, spacing about 6 inches apart. Loosely cover with lightly oiled plastic wrap and a clean kitchen towel. Let rise in a warm place 45 minutes.
  • Meanwhile, preheat oven to 400 degrees, with a pizza stone on rack in lower third and a skillet or baking pan on lowest rack, 30 minutes. Transfer loaves to a pizza peel or unrimmed baking sheet dusted with cornmeal. Brush tops with egg white. Using a lame (baker?s blade), razor blade, or serrated knife, make four diagonal cuts, 1/4 to 1/2 inch deep, across each loaf. Slide loaves from peel onto stone. If not using a stone, slide loaves onto a parchment-lined baking sheet dusted with cornmeal. Quickly pour boiling water into preheated skillet to create steam. Bake until loaves are dark brown and hollow-sounding when tapped on bottoms, about 30 to 40 minutes. Transfer loaves to a wire rack; let cool completely.

This is a steakhouse bread recipe that I obtained many years ago from a friend. It makes a very dense and flavorful bread. If you like, brush the rolls or bread with beaten egg, then sprinkle some uncooked oatmeal on top before baking. Enjoy!

1 ⅓ cups strong brewed coffee, room temperature
¼ cup vegetable oil
¼ cup dark molasses
2 tablespoons brown sugar
1 cup whole wheat flour
1 cup rye flour
2 cups bread flour
2 tablespoons unsweetened cocoa powder
1 ½ teaspoons salt
2 ½ teaspoons active dry yeast or bread machine yeast

Steps:

  • Place all ingredients in bread machine pan in order suggested by manufacturer. Select Dough cycle. When the machine indicates the end of the final rise, remove the dough.
  • Preheat the oven to 375 degrees F (190 degrees C). Shape the dough into 12 dinner rolls, or one 9x5 inch loaf. Let rise until doubled in size while the oven preheats, they should rise quickly.
  • Bake for 20 minutes in the preheated oven for rolls, or 35 minutes for a loaf, or until the loaf sounds hollow when tapped on the bottom.

This nutrient-dense, gluten-free quick bread keeps for days and is a great vehicle for nut butters, dips, and spreads. Snacktime, solved.

Yield Makes one 9x5" loaf

Number Of Ingredients 10

Nonstick cooking oil spray
1 cup flaxseed, divided
6 large eggs
3 Tbsp. grapeseed or extra-virgin olive oil
1 Tbsp. tahini
1 cup black sesame seeds
1/2 cup white sesame seeds
1/2 cup poppy seeds
1 Tbsp. kosher salt
A spice mill

Steps:

  • Preheat oven to 200°F. Line a 9x5" loaf pan with parchment paper, leaving a generous overhang on both long sides. Coat with nonstick spray. Grind 1/2 cup flaxseed in spice mill to a fine powder. Whisk eggs, oil, and tahini in a large bowl to combine. Add ground flaxseed, black and white sesame seeds, poppy seeds, salt, and remaining 1/2 cup flaxseed and mix well. Let sit 30 minutes to let flax hydrate.
  • Scrape batter into prepared pan and bake until top is firm to the touch (an instant-read thermometer inserted into the center should register 165°F), 1 1/2-2 hours. Transfer pan to a wire rack and let loaf cool in pan 5 minutes. Using parchment overhang, lift loaf out of pan and onto rack; remove parchment. Let loaf cool completely.
  • Loaf can be made 5 days ahead. Wrap tightly and chill.

Steamed black bean spareribs (si zap zing pai gwat in Cantonese) are popular at dim sum restaurants but they are a dinnertime go-to in my family. With just a little marinating and simple steaming you have a tasty dish that is easy to round out with rice or noodles and blanched or stir-fried vegetables. (You can prepare them while the ribs cook.) Fermented black beans are the primary flavoring agent here, providing a unique savory saltiness. Pork sparerib tips come from the ends of spareribs that are butchered to yield St. Louis ribs. The ones sold in Asian markets tend to be about 1 inch thick, while the ones at many grocery stores are about 2 inches thick. If you use thinner rib tips, reduce the steaming to 15 minutes. If you can only find whole spareribs, ask the butcher to cut them crosswise into 2-inch-thick pieces.

2 pounds meaty pork sparerib tips, about 2 inches thick (see Headnote)
1 1/2 tablespoons light soy sauce
1 tablespoon Chinese fermented black beans, rinsed and roughly chopped
1 tablespoon Chinese cooking wine, such as Shaoxing
1 1/2 teaspoons sugar
1/2 teaspoon toasted sesame oil
2 cloves garlic, minced
Kosher salt and ground white pepper
2 tablespoons cornstarch
1 tablespoon neutral oil, such as vegetable or canola
1 small red chile, such as Fresno, or mini bell pepper, thinly sliced crosswise
1 scallion, thinly sliced on the diagonal

Steps:

  • If the sparerib tips come in a slab, cut them into individual ribs.
  • Toss together the ribs, light soy sauce, fermented black beans, cooking wine, sugar, sesame oil, garlic, 1 teaspoon salt and 1/8 teaspoon white pepper in a large bowl. Let marinate at room temperature for at least 30 minutes and up to 2 hours.
  • When the ribs are almost ready, prepare a steamer setup with a rack in a large pot or wok (see Cook's Note). Add enough water to the pot so it reaches just below the rack, cover the pot and bring to a boil.
  • Add the cornstarch and oil to the ribs and mix well. Place the ribs in a single layer on a large heatproof rimmed plate or shallow bowl that fits inside the pot. Sprinkle the ribs with the chiles.
  • Place the plate on the rack in the pot, cover and steam until the ribs are opaque on the exterior and cooked through, 25 to 28 minutes (see Cook's Note). Garnish with the scallions and carefully remove the plate from the pot using tongs or oven mitts.

2/3 cup all-purpose flour
2/3 cup old-fashioned oats
2/3 cup cornmeal
2 teaspoons baking soda
1/2 teaspoon salt
1-1/3 cups buttermilk
1/2 cup molasses

Steps:

  • In a large bowl, combine the flour, oats, cornmeal, baking soda and salt. Combine buttermilk and molasses; stir into dry ingredients. Pour into two greased 10-oz. ramekins or custard cups; cover with foil., Place ramekins on a rack in a deep kettle; add 1 in. of hot water to kettle. Bring to a gentle boil; cover and steam for 35-45 minutes or until a toothpick inserted in the center comes out clean, adding more water as needed. , Remove ramekins from kettle; let stand for 5 minutes before removing bread from ramekins.

I love steamed fish in black bean sauce! It is my favorite item to order at our local authentic Chinese Food restaurant. They add tofu, but I have read so much about how unhealthy tofu is lately, that I avoid all soy when possible. This recipe came from the 3 Hungry Tummies blog and I'm posting here so that I don't loose it because it was yummmmmy! I made a few changes to the original recipe, and I am posting it changed here. Furmented Black Beans are NOT canned black beans!! You can find them on Amazon or if you are lucky enough to live close to an Asian grocery store like I am in So Cal, you can find them there.

about 1 lb firm white fish, cut into 4 inch chunks (I love rock fish for this)
1 shallot, chopped
1 red chili, chopped (optional)
3 garlic cloves, chopped
1/2 inch knob ginger, chopped
3 tablespoons fermented black beans, rinsed and drained
2 tablespoons sugar
2 tablespoons , light soy (or if gluten free, like I am Tamari or Coconut Aminos)
1 teaspoon sesame oil
1/3 cup stock (fish, veggie or chicken)
1/3 cup Chinese wine
1/2 cup cilantro leaf
2 green onions, chopped
peanut oil

Steps:

  • Mince together the shallot or yellow onion, chili (if using), garlic and ginger.
  • In a small bowl, combine fermented black beans, sugar, soy and sesame oil and stock. Mash beans with the back of a spoon to soften and break down.
  • In a saute pan with a tight fitting lid, over medium heat, saute shallot/garlic mixture in a small amount of oil for 2-3 mins or until translucent.
  • Add the black bean mixture and cook, stirring frequently, until thickened. Add the wine and half the cilantro.
  • Place the fish on top of the sauce and cover the pan with the lid.
  • Cook until fish flakes easily.
  • Top with the remaining cilantro and green onion and serve over rice or quinoa.

1 cup all-purpose flour
1 cup whole wheat flour
1 cup cornmeal
2 tablespoons baking soda
1 teaspoon salt
2 cups buttermilk
3/4 cup molasses
1 cup raisins

Steps:

  • You will need 2 empty cans such as the ones in which fruit or tomato sauce come. Or you can use a mold.
  • To prepare them, grease and flour generously.
  • Combine dry ingredients in a medium bowl.
  • Add buttermilk and molasses while mixing on low.
  • Stir in raisins and mix only enough to distribute.
  • Pour into prepared cans or mold. (Should be about 2/3 full).
  • Cover with foil and secure with string.
  • Place cans on a wire rack in the bottom of a large pot.
  • Pour boiling water into the pot to reach about half way up the cans but not enough to float them.
  • Put lid on pot and steam for 3 hours, checking water occasionally to make sure there is enough.
  • To remove breads from cans, the bottoms of the cans can be "opened" with a can opener and the breads can then be pushed out. They come out more easily when the bread is still warm.
