Steps:
- You will need 2 empty cans such as the ones in which fruit or tomato sauce come. Or you can use a mold.
- To prepare them, grease and flour generously.
- Combine dry ingredients in a medium bowl.
- Add buttermilk and molasses while mixing on low.
- Stir in raisins and mix only enough to distribute.
- Pour into prepared cans or mold. (Should be about 2/3 full).
- Cover with foil and secure with string.
- Place cans on a wire rack in the bottom of a large pot.
- Pour boiling water into the pot to reach about half way up the cans but not enough to float them.
- Put lid on pot and steam for 3 hours, checking water occasionally to make sure there is enough.
- To remove breads from cans, the bottoms of the cans can be "opened" with a can opener and the breads can then be pushed out. They come out more easily when the bread is still warm.

- Combine all bran cereal, raisins, nuts, egg, buttermilk, and molasses.
- Sift flour, baking soda, baking powder, and salt.
- Add dry ingredients into wet mixture; stir just until combined.

- Steam for 2-1/2 hours.

STEAMED CRANBERRY BROWN BREAD (CROCK-POT)
A healthier, crockpot version of brown bread, with dried cranberries. This is good for breakfast or dessert.

Steps:
- Coat the inside of a 13-oz coffee can with cooking spray.
- Combine first 6 ingredients in a large bowl.
- In a small bowl, combine buttermilk and molasses; stir well. Add to flour mixture, stirring just until moistened.
- Fold in dried cranberries and walnuts.
- Spoon mixture into coffee can. Cover with foil coated with cooking spray; secure with a rubber band.
- Place can in a crockpot; add enough hot water to crockpot to come halfway up sides of can.
- Cover with lid and cook on high-heat setting for 2 1/2-3 hours, or until a wooden pick inserted in center comes out clean.
- Remove can from crockpot.
- Let bread cool, covered, in can on a wire rack for 5 minutes.
- Remove bread from can and let cool completely on wire rack.
HOMEMADE BOSTON BROWN BREAD
Wonderful bread! Although tradition dictates that this bread should be served with Boston Bake Beans it is also great with a bowl of soup, a salad or with a main dish. You will need 3 10-ounce coffee cans to bake this bread, although it can also be baked in 8X4 loaf pans (but then you will not have the beautiful rounds that make this bread special). The loaves can be frozen for up to 1 month. This recipe is from Massachusetts' infamous baker René Becker of the Hi-Rise Bread Company. I have only made it with fragrant organic flours, but I am sure non organic flours would work as well.

- Remove one of your oven racks and preheat oven to 300°.
- Generously butter three 10-ounce coffee cans. In an extra large mixing bowl combine all the flours. Stir in cornmeal, baking soda, baking powder, salt and dried fruit.
- In a separate bowl, whisk the milk with the molasses. Slowly add to the dry ingredients, stirring until the batter is smooth and combined.
- Pour the batter into the greased coffee cans. Stand the cans in the center of the oven and bake for about 1 1/2 hours, or until the loaves are springy to the touch. Place cans on wire rack and let cool for about 10 minutes, then unmold. Slice bread into rounds and serve.
- When the loaves have reached room temperature, they can be wrapped in wax paper and placed in a thick plastic bag and stored in the refrigerator for up to 5 days.

NANNY'S BROWN BREAD
My grandmother used to make this often and send it to her brother who is/was a monk at Weston Priory, VT. The traditional method of baking is in cans. Coffee cans, vegetable cans. whatever. I'm sure you can use a loaf pan. It's important to let the raisins soak- because that is what gives the bread it's color.

- Preheat oven to 350 degrees. grease 3-4 vegetable cans or 2-3 coffee cans.
- In a medium bowl add raisins, baking soda, and butter.add in boiling water. Stir a little, and let cool.
- In a large bowl mix together flour and sugar. Mix in vanilla, egg, walnuts, and the raisin mixture. Stir unil well blended.

- Cream the shortening and sugar together.
- Beat in the egg and molasses.
- Beat in the flour through the buttermilk.
- Stir in the raisins.
- Spoon into 2 well-greased coffee cans, making them a little more than half full.
- Cover with greased lids or foil.
- Set coffee cans on a rack or an inverted dinner plate in a deep kettle and add boiling water to come halfway up the sides of the cans.
- Cover and steam 2½ hrs.

- Heat oven to 425°F Coat a large baking sheet with cooking spray. In a large bowl, mix flours, oats, wheat germ, baking soda and salt.
- Whisk together buttermilk and honey. Add to flour mixture; stir to combine until soft dough forms.

- Sieve plain flour, salt, and soda into a bowl.
- Add in brown flour and wheatgerm.
- Rub in butter, mix in sour milk (or buttermilk) and onion and then mix to a very soft consistency.
- Divide dough between 2 greased loaf tins and cover with brown paper.
