FILET MIGNON WITH MUSTARD SAUCE

Number Of Ingredients 7

1 (7-ounce) filet mignon (2 inches thick)
1/2 teaspoon olive oil
1 1/2 tablespoons Cognac
1/4 cup beef broth
1/4 cup water
2 tablespoons coarse-grained mustard
1 teaspoon unsalted butter

Steps:

  • Halve filet crosswise and season with salt and pepper. Heat oil over moderate heat in a small heavy skillet until hot but not smoking, then cook filets 2 to 3 minutes on each side for rare. Let stand on a cutting board, tented loosely with foil, 5 minutes. While filets are standing, deglaze skillet with Cognac over moderate heat, scraping up brown bits. Add broth and water and boil until reduced to about 1/4 cup. Remove from heat and whisk in mustard, butter, any meat juices from cutting board, and salt and pepper to taste. Thinly slice filets and serve with sauce.

4 (6 ounce) beef tenderloin fillets
1 teaspoon salt
1 teaspoon pepper
3 tablespoons butter, divided
3 tablespoons brandy
1 tablespoon light brown sugar
1/4 cup whipping cream
fresh chives, for garnish

Steps:

  • Sprinkle steaks evenly with the salt and pepper.
  • Melt 1 tablespoon butter in a medium skillet over medium-high heat.
  • Add steaks, and cook 3 minutes on each side or to desired degree of doneness. Remove steaks from skillet; keep warm while preparing the sauce.
  • Add brandy to skillet, stirring to loosen residue from bottom of the skillet. Add remaining 2 tablespoons butter and sugar, and cook, stirring constantly, until sugar dissolves and browns.
  • Remove skillet from heat; whisk in cream until blended. Return to heat, and bring to boil; cook, stirring constantly, 1 minute or until thickened. Serve immediately over steaks. Garnish with chives, if desired.

This is yummy (and versatile) sauce to use over steaks, chicken, pork chops, veal, etc. You can even try it on seafood, poached eggs, baked potatoes, or even steamed veggies. A lovely accompaniment to just about any dish.

1 tablespoon butter
1 green onion, finely chopped
1/4 cup chopped mushroom (optional)
1/4 cup broth (chicken beef or veggie depending, or even apple cider)
2 tablespoons brandy
1/2 cup heavy cream
salt and black pepper, to taste (optional)

Steps:

  • Melt butter in a 1 quart saucepan over medium-high heat. Add green onion and saute' until tender, about 1-2 minutes. If desired, add mushrooms and saute' 1 more minute.
  • Stir in broth and brandy. Cook about 5 minutes or until mixture is reduced (should coat back of spoon).
  • Stir in the heavy cream and season with salt and pepper if desired. Serve over just about anything.

1 cup whipping cream
1 1/2 cups firmly packed brown sugar
1/4 cup butter
2 tablespoons brandy
1 teaspoon pure vanilla extract

Steps:

  • Bring whipping cream to a light boil in a large saucepan over medium heat; stirring occasionally. Add sugar and cook; stirring occasionally, 4-5 minutes or until sugar is dissolved and mixture is smooth. Remove from heat, and stir in butter, brandy, and vanilla. Let cool for 10 minutes.
  • Store in airtight container in refrigerator. To reheat, let stand to room temperature for 30 minutes. Place mixture in a microwave-safe bowl, and microwave on HIGH for 1 minute, stirring after 30 seconds.

Steak Fillet With Tarragon Cream Brandy Sauce image

I bought some thick steak fillets the other night and was going to serve them with a peppered sauce and creamed spinach. I still made the creamed spinach as we have not had it in a while and I knew my hubby would like it as it is a favorite of his. I noticed I had some tarragon to use up and new I would not be making anything to use it in over the next few days, so I came up with this sauce, to utilize it. The sauce turned out surprisingly well and we both enjoyed it very much, instead of cooking the onions I was using up in the sauce. I sliced 2 onions thinly and fried them separately and placed them on top of the steak.

4 steak fillets (nice thick cut ones.)
2 onions, sliced thinly
3 tablespoons brandy
1 teaspoon beef stock granules
3 teaspoons french creamy mustard
1/2 teaspoon garlic powder
180 ml double cream
120 ml light cream
2 teaspoons cornflour
1 1/4 teaspoons pepper
1 tablespoon fresh tarragon, chopped finely (I did a generous tablespoon it was not quite 11/2 but a little over 1.)
2 teaspoons lemon juice

Steps:

  • Add sliced onion to a small pan with a little olive oil and cook until onion is soft and browned, can either be kept warm on stove or reheated in a microwave later.
  • Sauce.
  • Add brandy, beef stock and mustard to a pan bring to the boil, whisk to blend mustard.
  • Add garlic and both creams, mix a little water with cornflour, add to sauce stir until mixture boils and thickens, turn down heat.
  • Add pepper, tarragon and juice stir to combine, keep sauce warm on a low heat, on the stove, stirring occasionally to prevent a skin forming over the top.
  • Steaks.
  • Season steaks on both sides with salt and pepper, BBQ, Grill or pan fry until browned and cooked as desired.
  • I like mine medium rare so when I have thick steaks like these, I sear each side for 2 minutes and then place in the oven for 15 minutes at 180°C.
  • To Serve: Top each steak with some onion, pour sauce over and serve with whatever veg and starch you want. I served mine with creamed spinach.

VENISON STEAKS W/ CREAMY PEPPER & BRANDY SAUCE

1 1/2 lbs venison steak (I like back strap)
3 tablespoons oil
1 large shallot, minced
1 tablespoon butter
2 tablespoons fresh ground pepper
1/3 cup brandy
1/4 cup red wine
1 cup beef stock
1/3 cup sour cream
salt and pepper

Steps:

  • Melt butter and oil in large saute pan over med-high heat.
  • Salt and pepper each side of steaks and add to pan. Venison at it's best should be served at med-rare. Quickly sear each side of steaks, just about 2 minute per side.
  • Remove steaks and cover with foil to keep warm.
  • Turn heat down to med. and add shallots and ground pepper to pan and saute.
  • Add brandy to pan and de-glaze. Cook for a minute or so to slightly thicken.
  • Add wine and beef stock and turn heat back up to med-high. Let simmer for 3-4 minute then add sour cream. Let this mixture cook until it reaches a nice, thick consistency.
  • Add steaks back to pan and cook 2 minute.
  • Serve and enjoy!
