TOMATO STEAK WITH BAKED GOAT CHEESE AND HERB SALAD



Tomato Steak with Baked Goat Cheese and Herb Salad image

1/4 cup fine dried bread crumbs
Gray salt
Freshly ground black pepper
1 large egg
4 rounds fresh goat cheese, about 2 ounces each
4 thick, ripe beefsteak tomato slices
2 tablespoons extra-virgin olive oil, plus more for the salad
2 cups lightly packed mixed tender fresh herb leaves such as basil, chervil, tarragon, Italian flat-leaf parsley, chives (1-inch lengths), or young cress
Red wine vinegar

Steps:

  • In a small, shallow bowl, mix the bread crumbs with salt and pepper, to taste. In another small, shallow bowl, beat the egg just until blended. Dip each goat cheese round in the egg, and then in bread crumbs, patting the crumbs in place. Cover and refrigerate the coated cheese rounds for about 15 minutes.
  • Center the tomato slices on 4 salad plates and season with salt and pepper.
  • Heat a large nonstick skillet over moderately high heat and pour in 2 tablespoons olive oil. When the oil is almost smoking, add the cheese rounds. Cook until lightly browned, about 45 seconds. Turn them over and cook on the other side until the cheese just feels quivery, about 45 seconds longer, depending on the thickness of the rounds. Place a cheese round on each tomato slice.
  • In a bowl, toss the herbs with a light drizzle of olive oil, a splash of red wine vinegar, and salt and pepper, to taste. Mound the herbs on top of the cheese, dividing them evenly. Serve immediately.
  • Michael's Notes: This salad looks best when the tomato slice and the goat cheese slice are about the same size. So if you can only find goat cheese in small logs, you may want to serve 2 goat cheese rounds to each diner and perch them on slices of smaller tomatoes.
  • Be sure you take all the stems off the herbs carefully so your guests can enjoy just the soft leaves.

Spice-Rubbed Flank Steak with Butternut Squash-Pepper Bacon Salad image

1 tablespoon kosher salt
3 tablespoons brown sugar
2 tablespoons ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
2 tablespoons dried oregano
1 teaspoon dried thyme
1 teaspoon dried mustard
1/2 teaspoon cayenne pepper
2 teaspoons extra virgin olive oil
1 (3-pound) flank steak
6 slices pepper bacon, diced
2 teaspoons extra virgin olive oil
4 cups peeled, diced butternut squash
2 onions, cut into large dice
2 tablespoons sherry vinegar
2 cloves garlic, chopped
1 teaspoon Dijon mustard
2 teaspoons chopped fresh oregano
1/2 teaspoon freshly cracked black pepper
Salt

Steps:

  • To prepare the spice rub: Combine all the rub ingredients in a bowl and mix well. To prepare the steak: Generously coat the steak with the rub. Cover, refrigerate, and let it cure for 4 to 6 hours. Lightly rinse the cured steak under running water to remove excess rub. Set on a plate and refrigerate, uncovered, until ready to cook. To prepare the salad: Preheat the oven to 375 degrees. Heat a very large ovenproof sautepan over high heat until very hot. Add the diced bacon and cook until crispy. Remove the bacon from the pan, and drain on paper towels. Set aside. Add the olive oil to the dripping in the pan and heat until smoking hot. Add the squash and let sit, without stirring, until brown, about 4 minutes. Toss and repeat. Add the onions, set the pan in the oven, and cook until the squash is tender about 15 minutes. Remove from the oven, add the vinegar, garlic, mustard, oregano, pepper and salt, and mix well. Add the bacon to the salad and mix well. Keep warm until ready to serve. To grill the steaks: Oil the grill and heat until very hot (to test, you should be able to hold your hand over the grill for no more than 5 seconds.) Place the steaks on the grill and cook 3 to 4 minutes per side for medium doneness. Let the steak sit for about 2 minutes, then slice very thin across the grain at a 45 degree angle. To serve: Distribute the warm salad among 6 plates and top with slices of steak.

8 slices smoky bacon
4 flat iron or sirloin steaks, 8 ounces each
2 large garlic cloves, halved
Extra-virgin olive oil, for drizzling, plus 3 tablespoons
2 sprigs rosemary, leaves chopped
Salt and freshly ground black pepper
2 pints cherry tomatoes or multi-colored baby heirloom tomatoes, halved or quartered
1/2 small red onion, chopped
1 cup shredded basil leaves
2 cups baby arugula
Parmigiano-Reggiano, for shaving

Steps:

  • Heat oven to 375 degrees F. Arrange the bacon on a slotted broiler pan or a baking rack set over a baking sheet. Bake until crisp. Remove from the oven to paper towels to drain. Reserve.
  • While the bacon cooks, heat a grill pan or outdoor grill to medium-high. Rub the steaks on both sides with the cut garlic cloves and dress with a drizzle of extra-virgin olive oil, chopped rosemary, and salt and pepper, to taste.
  • In a large bowl combine the tomatoes, onions, basil and the remaining 3 tablespoons of extra-virgin olive oil. Season with salt and pepper, to taste.
  • Grill the steaks for 5 minutes on each side for medium-rare, more or less for desired doneness.
  • Chop the bacon and add it to the tomato salad, then fold in the arugula.
  • Serve the steaks whole or sliced with lots of salad on top, garnished with a few shaves of Parmigianino-Reggiano.

2 tablespoons vegetarian Worcestershire sauce
1 teaspoon salt

1 pound sliced bacon
½ head shredded iceberg lettuce
½ head red leaf lettuce, torn
1 (10 ounce) bag baby salad greens
1 cup blue cheese salad dressing
½ pound crumbled blue cheese
½ pound shredded Cheddar cheese

Steps:

  • Rub the flat iron steaks with Worcestershire sauce, salt, and pepper; set aside. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown and crispy. Remove bacon to cool on a paper towel lined plate, while leaving the grease in the skillet.
  • Heat the bacon grease over medium-high heat until it begins to smoke. Place the flat iron steaks in the hot grease, and cook until done to desired degree of doneness, 3 to 4 minutes per side for medium. Once done, remove the steaks and keep warm.
  • Place the iceberg lettuce, red leaf lettuce, and baby greens into a large salad bowl. Toss with the blue cheese dressing, then sprinkle with the blue cheese and cheddar cheese. Crumble the bacon and sprinkle overtop. Thinly slice the flat iron steak, and arrange over the salad.
