3 large white onions, peeled and quartered
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/4 cup balsamic vinegar
1/2 teaspoon sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss the onion quarters with the olive oil, balsamic vinegar, sugar, and season with salt and pepper. Place in an ovenproof, large, nonstick skillet, spreading them out in an even layer. Cover the skillet with aluminum foil. Roast for 20 to 25 minutes, and then remove the foil. Toss the onions well to coat with the reduced balsamic glaze and put back in the oven to roast another 20 to 25 minutes. Serve warm.

¼ cup balsamic vinegar

Steps:

  • Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste.
  • Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over.
  • Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately.

4 (1-inch) Delmonico steaks, 8 to 10 ounces each
2 teaspoons extra- virgin olive oil
Steak seasoning blend, such as Montreal Steak Seasoning, or coarse salt and pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
2 large yellow skinned onions, thinly sliced
1/4 cup balsamic vinegar, eyeball it
1 1/2 teaspoons extra-virgin olive oil, half a turn of the pan
2 cloves garlic, chopped
1 small white boiling onion, chopped
1/4 cup dry cooking sherry, eyeball it
1 cup canned tomato sauce, 8 ounces
1 tablespoon Worcestershire sauce, eyeball it
Black pepper

Steps:

  • Heat a heavy grill pan or griddle pan over high heat. Wipe hot grill or griddle with extra-virgin olive oil. Cook steaks 6 minutes on each side for medium doneness, 8 minutes for medium well. Season steaks with steak seasoning or salt and pepper and remove to a warm platter to allow the meat to rest.
  • Heat a medium nonstick skillet over medium high heat. Add oil and onions and cook, stirring occasionally, 10 to 12 minutes, until onions are soft and sweet. Add balsamic vinegar to the pan and turn onions in vinegar until vinegar cooks away and glazes onions a deep brown color, 3 to 5 minutes.
  • Heat a small saucepan over medium heat. Add oil, garlic and onions and saute 5 minutes until onion bits are tender. Add sherry to the pan and combine with onions. Stir in tomato sauce and Worcestershire and season with black pepper.
  • To serve, top steaks with onions and drizzle a little steak sauce down over the top, reserving half of the sauce to pass at table.

3 tablespoons extra-virgin olive oil
2 tablespoons coarsely ground mixed peppercorns
1 ½ teaspoons salt
1 tablespoon butter
1 clove garlic, minced

Steps:

  • Brush steak with olive oil, then press into ground peppercorns and season with salt; set aside. Melt butter in a large skillet over medium high heat. Add flat iron, and cook to desired degree of doneness, about 4 minutes per side for medium-rare.
  • Once the steak has finished cooking, remove to a plate and keep warm. Stir the minced garlic into the skillet, and cook over medium heat until the garlic begins to brown around the edges, about 1 minute. 1/4 cup olive oil
6 tablespoons (3/4 stick) butter
3 tablespoons sugar
6 tablespoons balsamic vinegar
1 tablespoon chopped fresh parsley

Steps:

  • Position 1 rack in center and 1 rack in bottom third of oven; preheat to 500°F. Line 2 large baking sheets with foil. Cut onions through root end into 3/4-inch-thick wedges. Place in medium bowl; toss with oil. Arrange onions, cut side down, on baking sheets. Sprinkle with salt and pepper. Roast until onions are brown and tender, rotating pans in oven and turning onions once, about 45 minutes.
  • Meanwhile, melt butter in heavy small saucepan over medium-high heat. Add sugar and stir until sugar dissolves. Remove from heat. Add vinegar. Return to heat. Simmer until mixture thickens slightly, about 2 minutes. (Onions and balsamic glaze can be made 1 day ahead. Cool. Cover separately and chill. Rewarm onions in 375°F oven about 15 minutes. Stir glaze over low heat to rewarm.)
  • Arrange onions on platter. Drizzle glaze over. Sprinkle with parsley.

Olive oil

1/4 cup chicken stock
1/4 cup balsamic vinegar
1 teaspoon chopped thyme

Steps:

  • Pre-heat oven to 350 degrees F.
  • Add olive oil to a large skillet over medium heat. Once hot, add the onions to the pan and lay them flat on their sides. Cook on each side for 3 to 4 minutes, or until browned, being careful as you flip them. Add chicken stock, balsamic vinegar, garlic, rosemary, and thyme to the pan. Add dots of butter around the pan. Turn the onions in the liquid so they are nice and coated.
  • Place the skillet in the oven and roast for 25 minutes, stirring on occasion so the onions don't stick to the pan. Roast until the onions are nice and soft and the balsamic is caramelized.

Marinated Venison Loin Steaks with Onions and Sweet Peppers image

Onions and peppers are a classic accompaniment to grilled steaks, their pungency and sweetness acting as a perfect foil for the richness of the meat. Trouble is, the vegetables often are sauteed in copious amounts of butter or oil. When you pair them with steak, even relatively lean venison, any hopes of a healthy meal go out the window. I address this by cooking the roasted peppers and onions lightly in a small amount of oil in a saute pan set directly on the grill. Venison loin steak is a treat worth having, particularly if you serve it with these simply prepared onions and peppers. If you prefer, serve beef tenderloin steaks instead.

1/2 cup molasses
1/2 cup balsamic vinegar
1/2 cup Roasted Garlic Cloves, recipe follows
1 branch fresh rosemary
1/2 small Thai chile, thinly sliced or 1 teaspoon red pepper flakes
1 teaspoon freshly cracked pepper
6 (1-pound) venison loin steaks, bone in
6 bell peppers, red and yellow
Salt and freshly ground black pepper
3 tablespoons grapeseed oil
1 large Vidalia or other sweet onion, cut into 1/4-inch-thick slices
Unpeeled garlic cloves, as needed

Steps:

  • In a small, heavy saucepan, combine all the marinade ingredients and bring to a simmer over medium heat. Cook for about 10 minutes, stirring occasionally. Remove from the heat. Set aside and let cool to room temperature.
  • Lay each steak flat on the counter and tie each one horizontally so that the meat forms a tight, round package. You will need 6 pieces of kitchen twine, each measuring about 18 inches long.
  • Spread half the marinade over the bottom of a nonreactive casserole or deep baking pan just large enough to hold all 6 steaks snugly but without crowding. Arrange the steaks in the pan and coat with the remaining marinade. Cover and refrigerate for at least 3 hours or up to 5 hours.
  • Remove the steaks from the marinade and place them on a double thickness of paper towels to dry.
  • Light a fire in a charcoal grill or preheat a gas grill to medium.
  • Set the peppers over the hottest part of the grill and cook until they begin to char. Turn with tongs and continue grilling until the peppers are charred on all sides. Stand by the grill during this time, the peppers cook quickly. Using tongs to turn them prevents them from splitting open. Transfer immediately to a container just large enough to hold them. Cover tightly with plastic wrap and let the peppers cool to the touch. Rub the charred skin off the peppers. Remove the seeds and ribs from the peppers. Cut the peppers into strips.
  • About 15 minutes before grilling, remove the steaks from the refrigerator and let sit at room temperature. Season the steaks with salt and pepper and brush with half the oil. Grill for 7 minutes on 1 side. Turn and grill for 7 minutes longer on the other side. Turn 1 more time and grill for about 2 minutes longer for rare steak. Grill for 1 to 2 minutes longer for medium-rare. Take care when turning the steaks to that the grill marks on the meat are perpendicular to the grate.
  • Transfer the steaks to a warmer platter and remove the twine.
  • Place a medium saute pan or skillet on the hottest part of the grill. Put the remaining 1 1/2 tablespoons oil and the sliced onions in the pan and cook, stirring, for about 5 minutes, or until the onions are lightly browned. Add the pepper strips and cook for about 2 minutes, or until heated through.
  • Serve the steaks on warmed large plates with the grill marks showing. Carefully spoon the pepper and onions over half of each steak so that the grill marks are clearly visible.
  • Put the cloves in a dry cast iron skillet and cook over low heat for 20 to 30 minutes, or until softened. Turn frequently so that the cloves soften but do not brown. Slide the cloves from the skillet onto a plate to cool to the touch. Squeeze the softened garlic pulp from the individual cloves.

  • Preheat oven to 400°. In large skillet, heat 2 tablespoons oil over medium-high heat; saute onion until softened. Reduce heat to medium-low; cook until golden brown, 25-30 minutes, stirring occasionally., Toss tomatoes with 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper; spread in a 15x10x1-in. pan. Roast until softened, 10-15 minutes. Stir tomatoes into onion, mashing lightly. 24 ounces tuna steaks, sushi grade (4 6 oz. steaks)

Steps:

  • Heat 1 tablespoon of oil in a large skillet over medium heat.
  • Add the onion and sprinkle with sugar.
  • Sautee about 10 minutes, until light brown and soft.
  • Season with salt and pepper, and add the red wine vinegar. Cook 1-2 minutes, until most of the liquid evaporates.
  • Add balsamic vinegar and cook for about 30 seconds.
  • Transfer to a bowl.
  • Wipe out pan and set over medium high heat, and add 1 tablespoon oil.
  • Season the tuna with salt and pepper.
  • When oil is hot, add the tuna steaks and sear for about 1 1/2 minutes on each side for rare.
  • Top each tuna steak with 1/4 of the onion and garnish with chopped parsley.

This is a dish bursting with different flavours, textures and brilliant autumn colours. It looks so pretty plated up - or serve it on a platter for extra visual impact. I adapted this from a recipe by Michelle Reedy in Australia's "Who" magazine.

2 (160 g) steaks (rib fillet, scotch fillet, sirloin, rump or similar)
2 large red onions
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
2 tablespoons olive oil
200 g pumpkin (I used Jap pumpkin)
110 g feta cheese, soft textured (use Persian Feta for a special occasion)
100 g rocket (rocket is also known as arugula) or 100 g rocket, and fresh spinach combined
75 -100 g pine nuts
salt and pepper
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard

Steps:

  • Preheat oven to 180°C (350°F).
  • Peel red onions and cut into wedges about 2cm (3/4") thick.
  • Place onions into a small baking dish or pie plate and drizzle over 2 tablespoons of balsamic vinegar, the brown sugar and olive oil.
  • Cover dish with foil and bake for 1 hour and 10 minutes (but set timer for 30 minutes).
  • Meanwhile, cut the unpeeled pumpkin into wedges or chunks around 5cm (2" thick).
  • Toss with a little olive oil, salt and pepper and place into another small baking dish or pie plate.
  • When onions have been in the oven for 30 minutes, put the dish of pumpkin into the oven as well and bake for 40 minutes - but set timer for 30 minutes.
  • In the meantime, heat a small, dry pan over medium heat, add the pine nuts and toast until lightly golden brown, moving the pan and tossing the pine nuts constantly so as not to burn them. Transfer from pan into a small bowl and set aside until needed.
  • Crumble feta into a small bowl, cover and refrigerate until needed.
  • Make dressing by combining all ingredients in a small bowl and whisking well. Set aside until needed.
  • When the onions have been in the oven for 60 minutes (and the pumpkin for 30 minutes), remove the foil cover from the onions, close oven and bake onions and pumpkin for another 10 minutes.
  • While this is happening, heat oil in a medium frying pan and cook steaks.
  • Remove cooked steaks from pan and transfer to a plate. Cover with foil and rest for 5 minutes.
  • Meanwhile, toss together the rocket and the salad dressing.
  • To serve, place the steak on a plate, scatter over pumpkin and caramelised red onion. Scatter rocket decoratively over the top and around the sides, and then sprinkle over pine nuts and feta.

1/2 teaspoon salt

1 tablespoon balsamic vinegar
1 teaspoon fresh rosemary, minced
1 tablespoon light brown sugar

Steps:

  • Heat 2 tablespoons of the oil in a large heavy skillet over medium heat.
  • Add onions & salt and cook, stirring often, until lightly browned, about 10 minutes. Transfer to a bowl. Wipe out skillet with paper towels.
  • Add remaining oil to skillet & adjust flame to medium high.
  • Pat steaks dry & add to oil. Leave them alone for for 4-5 minutes then flip & cook other side 3-4 minutes. Remove & wrap tightly in foil.
  • Discard any remaining fat in skillet, return onions to pan & reduce temp to medium. Add garlic & cook 30 seconds.
  • Add 1/2 cup vinegar, rosemary and brown sugar and cook, scraping up browned bits, until thick & syrupy, about 2 minutes.
  • Unwrap steak & pour any accumulated juices in skillet along with remaining vinegar. Salt & pepper to taste.
  • Slice steaks crosswise in 1/4 slices & serve topped with onions & sauce.

  • Peel the onions and slice crossways in half.

  • Whisk in the vinegar, wine, salt, sugar, and pepper.
  • Place the onion slices side by side in the dish, cut side down.

8 tablespoons (1 stick) chilled unsalted butter, divided
1 large shallot, minced
1/2 cup balsamic vinegar
2 large fresh rosemary sprigs
2 pounds mixed sweet onions, large shallots, baby leeks, and green onions
2 tablespoons olive oil
4 (1 1/4-inch-thick) New York strip steaks (each about 6 ounces)
2 tablespoons orange juice

Steps:

  • Melt 6 tablespoons butter in heavy small saucepan over medium heat. Add minced shallot and cook until translucent, about 2 minutes. Add vinegar and rosemary and simmer until syrupy and reduced to 1/2 cup, about 6 minutes. Remove from heat (balsamic sauce will separate as it stands).
  • Prepare barbecue (medium-high heat). Peel sweet onions, then cut into 1/2-inch-thick rounds. Skewer horizontally with toothpicks to keep intact. Peel shallots; cut in half lengthwise. Trim root ends and tops of leeks. Cut in half lengthwise; rinse to remove any dirt. Trim root ends of green onions. Place sweet onions, shallots, leeks, and green onions on rimmed baking sheet and drizzle with oil; toss. Sprinkle with salt and pepper.
  • Sprinkle steaks with salt and pepper. Grill sweet onions, shallots, leeks, and green onions until tender, turning often, about 5 minutes for green onions and 10 minutes for sweet onions, shallots, and leeks. Move onions to cooler part of grill to keep warm. Grill steaks to desired doneness, about 7 minutes per side for medium-rare. Transfer steaks and onions to platter; cover.
  • Remove rosemary sprigs from balsamic sauce; add orange juice and bring to simmer. Remove saucepan from heat; add remaining 2 tablespoons chilled butter and whisk until melted and sauce is smooth. Season sauce to taste with salt and pepper. Drizzle some of sauce over steaks and onions. Serve, passing remaining sauce separately.

6 (8 ounce) steaks
6 cloves garlic, peeled and minced
6 sprigs fresh rosemary
6 tablespoons olive oil
12 tablespoons soy sauce

3 medium onions (sweet Vidalia, regular white or red)
2 tablespoons olive oil
1 teaspoon sugar
salt
pepper
1/2 cup balsamic vinegar

Steps:

  • Prepare steak: Marinate the steak overnight in the refrigerator with the garlic, rosemary, olive oil and soy sauce.
  • Season with salt and pepper.
  • Prepare onions: Peel the onions and slice them 3/4-inch thick.
  • In heavy saute pan, heat olive oil over medium heat.
  • Arrange onion disks in pan in a single layer so they all touch the bottom.
  • Cook for 6 to 8 minutes without turning, until brown on one side.
  • Add sugar, salt and pepper.
  • Turn the onion disks over without separating them.
  • Cook on the other side for 6 to 8 minutes.
  • When brown, add half the vinegar and reduce until nearly evaporated.
  • Stir the onions, separating them into rings.
  • Add remaining vinegar to the pan and cook until almost evaporated.
  • Remove onions from pan and allow to cool.
  • Season the steaks with salt and pepper, and grill on both sides to desired doneness (about 8 minutes total for medium rare).
  • Slice steak and arrange on plate, garnished with the onions.

Steps:

  • This recipe works great as a stand-alone dish, but also as a component in Jamie's Steak night from Together - see the full collection of menus here.
  • ON THE DAY Preheat the oven to 200°C/400°F/gas 6. Peel the onions, cut into 1cm-thick rounds and place in a large roasting tray. Dot over the butter and drizzle with 1 tablespoon of olive oil, then peel, slice and scatter in the garlic, as well as the sprigs of thyme. Add a pinch of sea salt and black pepper, toss together, then arrange in a single layer. Roast for 30 minutes on the middle shelf, giving the tray a jiggle halfway through. Remove, drizzle with the honey and red wine vinegar, mix well and shake flat. Cover with tin foil until needed.
  • TO SERVE When the steak is resting, return the onions to the oven, covered, for 15 minutes, or until sticky and sweet. Before serving, season to perfection, tasting and tweaking.

  • Serve it tonight: Preheat grill to medium. Season steak with Ultimate Steak™ Seasoning. Grill or broil to desired doneness. Meanwhile, heat olive oil in a large skillet over medium heat. 1 tablespoon unsalted butter
3 large onions, peeled and sliced about 1/2 inch thick
Pinch of salt
3 tablespoons balsamic vinegar

4 14-ounce T-bone steaks
1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper

Steps:

  • 1 To make the onions, melt the butter in a nonstick large skillet over medium heat. Add the onions and salt and stir well. Add 1 cup water. Cook, stirring often, until the water evaporates and the onions are softened, about 20 minutes. Stir another cup of water into the onions. Cook, stirring often, until the water evaporates and the onions are tender and beginning to brown, about 20 minutes more.
  • 2 Stir in the vinegar and honey. Cook, stirring often to avoid scorching, until the onions are caramelized and the liquids are syrupy, about 10 minutes. Remove from the heat and cover the skillet to keep the onions warm.
