BEST SALISBURY STEAK
A good recipe for Salisbury steak recipe is hard to find! I remember enjoying it often when I was growing up, but when I decided to add it to my recipe collection, I wasn't able to find it in my modern cookbooks. - In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. Shape into two patties. , In a medium skillet, cook patties for 4-5 minutes per side or until browned; drain. Remove to a platter and keep warm. , In the same skillet, saute mushrooms in butter for 2 minutes. Stir in flour; blend well. Add water and bouillon; cook and stir until smooth and thickened. Stir in browning sauce if desired. Return patties to gravy and cook, uncovered, over low heat for 10 minutes, stirring occasionally. Serve with mashed potatoes.

SALISBURY STEAK RECIPE
We're cooking up Salisbury Steak with Onions and Gravy. It's one of those traditional Southern comfort food items you'll find on the menu at Mom and Pop style restaurants and diners throughout the South. Fresh ground beef, caramelized onions and a rich brown gravy make this one more delicious item to serve to your family and friends.

- In a mixing bowl, combine the Beef, Black Pepper, Salt, Garlic Powder, Worcestershire Sauce, Bread Crumbs and one whole Egg. Stir mixture together well.
- Shape into 4 equal sized patties.
- Heat a skillet over medium heat for about a minute, and then add Butter.
- Place meat patties in skillet and brown on both sides for about 4-5 minutes each. Remove from skillet and set aside.
- Add the sliced Onion into the skillet, right on top of the browned bits.
- Reduce the heat and cook the onions on medium-low heat until the onions turn translucent and brown. Don't rush this step. Cook the onions low and slow for about 20-25 minutes.
- Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook and brown for about 2 minutes.
- Add 2 cups of warm Water. Stir well. Raise the heat back up to about medium.
- Add 2 teaspoons of Beef Bouillon Granules. Stir Well.
- Place the meat patties back in the pan. Cover. Reduce heat just a little and let simmer for about 15 more minutes. Remove from heat and serve warm.
- Enjoy!

- For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
- Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
- For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
- Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.
CHEF JOHN'S SALISBURY STEAK
When I was a kid, we didn't have smartphones or the internet, all we had was a TV. But we didn't care because as we watched, we got to enjoy a little something called a "TV dinner." The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

- Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.
- Cover with plastic wrap and refrigerate for 2 hours, or up to overnight.
- While the meat is resting, melt 2 tablespoons butter in a large nonstick pan over high heat; add mushrooms, onions, and a pinch of salt. Saute, stirring occasionally, until very nicely browned, 5 to 8 minutes. Reduce heat to medium and add flour. Cook and stir for 3 minutes.
- Stir in ketchup, Worcestershire sauce, and beef broth; increase heat to high. Bring to a simmer; reduce heat to medium and cook, stirring occasionally, until the gravy thickens slightly and reduces, about 10 minutes. Taste and adjust salt as needed. Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.
- Remove meat from the refrigerator and divide into 4 equal portions. Moisten hands and form into oval patties, about 1/2 inch thick. Season both sides of the patties lightly with salt.
- Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.

BONNIE'S SALISBURY STEAK
I make these Salisbury Steaks the day before and let them set overnight. It takes all of five minutes for me to get them ready and refrigerate them. They are always better if they sit overnight and let flavors blend. This is an easy meal to make, under 30 minutes, and it tastes really delicious. My Dad, Bill, and I really enjoy this dish. - PREPARE THE MEAT THE NIGHT BEFORE: Combine the ground beef, bread, onion, mince garlic, sea salt and fresh cracked pepper in a large bowl. Add the milk. Mix well. Form into oval shaped patties, not too thick or thin. Wrap the patties individually and tightly in saran wrap and refrigerate over night. (Don't skip this step!)
- MAKING THE SALISBURY STEAKS: In a small skillet, prepare the 2 packets of gravy per instructions. Add the one tablespoon of Lipton Mushroom Onion mix. (or 1/2 tablespoon if you use one packet) Once it's thickened, add the mushrooms and simmer. Sprinkle the prepared Salsibury Steak patties with the McCormick Steak Seasoning. Heat a medium skillet over medium heat. Once it's hot, add the salisbury steak patties and cook for 3-4 minutes on each side, until nice and brown, and to your desired degree of doneness. Use oil very sparingly if you have to.
- SERVING THE SALISBURY STEAKS: You can serve the salsibury steaks two ways. You can add the gravy right into the pan and simmer it with the Salsibury Steaks for a few minutes. The gravy should be thickened. (We prefer it like that because the gravy picks up the juices of the meat) Or you can place the cooked steak patties on a serving dish and cover with the mushroom gravy. Garnish with 1 teaspoon chopped green onion. Enjoy!

- Mix ground beef, bread crumbs, salt, pepper and egg; shape into 4 oval patties, each about 3/4-inch thick.

- Drain.

- When patties are done, remove them from skillet. Keep warm.
- Heat onion mixture to boiling. Mix water and cornstarch; stir into onion mixture. Boil and stir 1 minute.
- Serve over patties and mashed potatoes.

- In a mixing bowl, combine ground beef, bread crumbs, egg, onion, Montréal Steak seasoning, Herbes de Provence, smoked paprika, and freshly ground black pepper. Shape mixture into 4 equal patties and then oval shape; place them in a plate. Cover with plastic wrap and transfer to the refrigerator for 1 hour.
- In a hot large skillet over medium heat, add oil and when hot, place beef patties; cook 3 minutes per side. Remove from the skillet and place them in a plate, covered loosely with foil.
- Return skillet on burner and add red onions; sauté for 2 minutes. If there's not enough fat, add a little oil. Add mushroom, sprinkle a pinch sea salt and sauté for 4 minutes. Pour in red wine and cook until liquid is almost evaporated. Pour in beef broth and freshly ground black pepper. Bring to a boil and then reduce to medium; simmer for 5 minutes. Place beef patties back in the skillet, reduce heat to medium low, and simmer until heat through, about 5 minutes.
- Move beef patties to serving plates, increase heat to medium-high and pour in cornstarch mixture; stir and less than a minute, the sauce will thicken. Spoon gravy over patties and sprinkle with fresh chopped parsley.

- Combine egg, soy sauce, Worcestershire sauce, mustard, salt and sriracha. Add ground beef and breadcrumbs. Combine well. Shape mixture into four patties about four inches across and 1/2" thick.
- Heat oil in a large non stick skillet. Cook patties about three minutes per side until well-browned. Remove from pan. Discard all but two or three tablespoons of fat in the pan. Add onions and cook 10 to 15 minutes until browned. Add mushrooms and cook another ten minutes or until mushrooms brown and any liquid has evaporated.
- Sprinkle mushrooms with flour and cook about a two minutes until browned. Add stock, soy sauce and Worcestershire sauce. Bring to a boil and cook a few minutes until well combined.
- Add patties back to pan, spooning sauce, onions and mushrooms over them. Cover and cook gently 15 to 20 minutes until cooked through. Season to taste. Serve 'steaks' with gravy, onions and mushrooms with mashed potatoes, noodles or rice. Sprinkle with parsley.
