Slight twist to an old favorite. Chili powder gives the potatoes and onions in this recipe some zing! I make these for breakfast every Sunday, and my family loves them!

5 medium red potatoes, diced with peel
1 medium onion, chopped
1 tablespoon garlic powder
1 tablespoon kosher salt
2 teaspoons chili powder
¼ cup extra virgin olive oil
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • Arrange the potatoes and onions in a greased 9x13 inch baking dish so that they are evenly distributed. Season with garlic powder, salt and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.
  • Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.

430g Maris Piper potatoes , cut into 1.5cm chunks
1 tbsp Cajun seasoning
2 tbsp olive oil
1 x 400g bavette steak
¼ small bunch of coriander , finely chopped
¼ small red cabbage , shredded
½ red onion , finely sliced
2 tbsp mayonnaise
1 tbsp soured cream
½ tbsp chipotle chilli paste

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Bring a large pan of salted water to the boil, add the potatoes and cook for 5 mins. Drain and leave to steam-dry in the colander for a few minutes. Toss the potatoes with the Cajun seasoning, half the oil and a good pinch of salt. Tip onto a baking tray and roast for 25-30 mins or until golden and crisp, tossing halfway through.
  • To make the slaw, combine the cabbage, onion, mayonnaise, soured cream and chipotle paste in a bowl until the cabbage and onion are well coated. Set aside.
  • Rub the steak with the remaining oil and season both sides. Heat a griddle pan or non-stick frying pan over a high heat until very hot. Add the steak to the pan, cook for 2 mins on one side, then 3 mins on the other. Remove, put on a chopping board, cover with foil and leave to rest for 5 mins. Slice into strips.
  • Serve the steak with the potatoes scattered with the coriander and a pile of the spicy slaw.

4 large baking potatoes
2 boneless beef ribeye steaks (6 ounces each)
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 tablespoon olive oil
2 tablespoons butter, melted
Toppings: Fresh arugula, blue cheese salad dressing, sour cream and crumbled blue cheese

Steps:

  • Preheat oven to 400°. Scrub potatoes; pierce several times with a fork. Bake until tender, 50-75 minutes., Meanwhile, sprinkle steak with salt and pepper. In a large skillet, heat oil over medium-high heat. Add steaks; cook until meat reaches desired doneness, 5-8 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 10 minutes; cut into bite-sized pieces. Transfer to a large bowl. Drizzle with butter; toss to coat. , With a sharp knife, cut an X in each potato. Fluff pulp with a fork; season with salt and pepper. Divide steak evenly over potatoes. Top with arugula, salad dressing, sour cream and blue cheese.

1 tsp mustard seed
1 tsp turmeric
2 tsp garam masala
140g frozen pea

Steps:

  • Cover the potatoes in cold salted water, then bring to the boil. Simmer for 5 mins, until just tender. Drain and allow to steam dry for a few mins. Heat the oil in a frying pan and fry the spices for 1 min until fragrant. Tip in the potatoes and toss well so they are coated in the spices. Gently fry for 5-10 mins until slightly golden, then add peas, mix well and cook for 3-4 mins more. Season well before serving.

1/2 tsp. dried oregano leaves
3/4 tsp. black pepper, divided
1-1/2 lb. boneless beef round steak (London broil)
1-1/2 lb. small red potatoes (about 15), halved
2 onions, cut into wedges
6 cloves garlic
2 Tbsp. olive oil
1 canned chipotle pepper in adobo sauce plus 4-1/2 tsp. reserved adobo sauce, divided
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/4 cup BULL'S-EYE Original Barbecue Sauce

Steps:

  • Mix chili powder, oregano and 1/2 tsp. black pepper; rub onto both sides of steak. Refrigerate 30 min.
  • Heat oven to 425ºF. Combine potatoes, onions, garlic, oil and remaining black pepper. Place in shallow foil-lined pan. Bake 40 to 45 min. or until potatoes are golden brown and onions are tender, stirring after 25 min.
  • Chop chipotle pepper finely; place in small bowl. Add sour cream, barbecue sauce and 1-1/2 tsp. of the reserved adobo sauce; mix well. Refrigerate until ready to use.
  • Heat grill. Grill steak 5 to 7 min. on each side or until medium doneness (160ºF), brushing with remaining 1 Tbsp. reserved adobo sauce for the last minute of grilling on each side. Remove meat from grill; let stand 10 min.
  • Cut steak across the grain into thin slices. Serve with potatoes, onions and sour cream sauce.

1 garlic clove , minced
small bunch flat-leaf parsley , finely chopped
2 beef fillet steaks (each about 140g/5oz)
1 tsp cracked black pepper
small knob of butter
watercress salad, to serve

Steps:

  • Tip the potatoes into a pan of water, bring to the boil, simmer for 2 mins, then drain. Heat the oil in a non-stick frying pan. Add the potatoes and sizzle gently for 20 mins, tossing occasionally, until golden and crispy all over. When the potatoes are cooked, add the garlic to the pan and fry for 1 min more.
