1 teaspoon light brown sugar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1 pound skirt steak
3 multi-colored bell peppers, cut into thick strips
1 large yellow onion, sliced
2 tablespoons extra-virgin olive oil
1 tablespoon vegetable oil
1/4 cup packed fresh cilantro leaves
Iceberg lettuce, shredded
1/2 cup sour cream
8 small flour tortillas, warm

Steps:

  • Stir together the sugar, chili powder, cumin, garlic powder, paprika, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a small mixing bowl to make the dry rub for the steak.
  • Put the steak on a parchment-lined baking sheet. Rub both sides generously with the spice rub. Allow the steak to come up to room temperature for about 30 minutes. Meanwhile, prepare the vegetables.
  • Place a grill pan over medium-high heat and allow the pan to heat for 5 minutes.
  • Put the bell peppers and onions in a large mixing bowl. Drizzle with the olive oil. Sprinkle generously with salt and pepper. Spread the vegetables out over the hot grill pan. Cook, tossing occasionally, until caramelized and softened, 8 to 10 minutes. Put the grilled vegetables on a serving platter and tent with aluminum foil to keep warm.
  • To cook the steak, brush the hot grill pan with the vegetable oil. Place the steak on the grill and cook for 3 minutes. Flip the steak over and cook for another 3 minutes. Transfer the steak to a cutting board and allow it to rest for at least 5 minutes.
  • Slice the steak into thin strips, against the grain of the meat. Layer the steak over the warm vegetables and sprinkle with the cilantro leaves. Serve with shredded iceberg lettuce, sour cream and warm tortillas.

CASSAVA FLOUR TORTILLAS

Soft and pliable, these easy-to-make cassava flour tortillas taste similar to a whole wheat tortilla but are naturally gluten free. Use them for your sloppiest filling, and you'll be surprised how well they hold up and how delicious they taste!

½ cup lukewarm water
¼ teaspoon salt
1 cup cassava flour
2 ½ tablespoons vegetable oil

Steps:

  • Prepare a tortilla press with 2 pieces of parchment paper. Set aside.
  • Pour warm water into a bowl and stir in salt until it dissolves.
  • Combine flour, salt water, and oil in a bowl and mix with your hands until a smooth dough forms. Move dough to a smooth surface and lightly knead until dough feels compact and does not crumble. Separate into 4 equal pieces and roll them into balls.
  • Heat a griddle over medium-high heat. Press one dough ball between 2 pieces of parchment paper in the tortilla press. Press down. Open press and carefully peel off the top piece of parchment paper. Flip tortilla onto your hand and carefully peel off the 2nd piece of paper. Return paper back onto tortilla press. Immediately cook the pressed tortilla on the hot griddle. Cook until bubbles form, flip over, and cook on the other side until browned. Do not flip the tortilla before bubbles form or the tortilla will break. Repeat with remaining dough balls.
  • Serve immediately or cover with a cloth and reheat in the microwave for 30 seconds at 600W.

Veggie-packed, grilled steak fajitas are a classic SoCal meal. This recipe is made gluten-free and paleo-friendly with cassava flour tortillas.

1 lb flank steak or skirt steak
1 onion (sliced)
2 bell pepper (sliced (choose different colors for variety))
2 avocados (peeled and sliced)
1 tbsp olive oil
1/2 cup fresh cilantro
1/2 cup crumbled goat cheese (optional)
1 recipe Cassava Flour Tortillas
1/2 cup coconut aminos
1/2 cup lime juice
3 tbsp honey
4 cloves of garlic (minced)
2 tsp cumin
1 tsp salt
1/2 tsp cayenne pepper
1/2 tsp black pepper

Steps:

  • Make the cassava flour tortillas. These can be made ahead of time and frozen, then reheated when ready to use.
  • Add all marinade ingredients to a bowl and stir. Pour the marinade into a ziploc bag (or shallow, covered dish) and add the steak. Marinade for at least 4 hours.
  • Heat a grill to medium high heat. Add the steak and cook for 4 minutes each side. Let the steak rest on a cutting board for several minutes before cutting.
  • While the steak is resting, heat the oil in a skillet (this is the one I use) on medium-high heat. Add the bell pepper slices and cook, stirring frequently for 4-5 minutes. Add the onion slices and cook for another 2-3 minutes.
  • Slice the steak into long, diagonal strips.
  • Assemble the fajitas by adding steak, grilled vegetables, slices of avocado, fresh cilantro and crumbled goat cheese to a tortilla.

2 teaspoons olive oil
1 medium onion, sliced 1/4 inch thick
1 medium green pepper, sliced 1/4 inch thick
1 garlic clove, crushed
1/2 teaspoon oregano
8 -10 ounces filet of beef, trimed of all fat
2 tablespoons fresh cilantro, chopped
8 corn tortillas, heated
guacamole or avocado, slices
sour cream
salsa
olive oil flavored cooking spray, as needed

Steps:

  • Spray a large, non-stick skillet with olive oil spray and add 2 teaspoons olive oil; Add the onions and green peppers and cook over medium heat until onion is translucent.
  • Add the garlic and oregano and cook for 1 minute more; (this can be done a day ahead and reheated) Or kept warm while steaks are grilling.
  • Grill the meat to rare to medium rare as you like; then remove from heat and cut into strips on a cutting board.
  • Add the hot cooked steak and cilantro to the warm peppers and onion and mix together in skillet, cooking for 2 to 3 minutes, just to blend flavors.
  • Serve with warm corn tortillas, sour cream, salsa and avocados as garnishes.

1 pound lean steak, cut into strips
½ cup fresh lime juice
½ tablespoon ground black pepper
1 tablespoon chopped fresh cilantro
2 tablespoons vegetable oil
1 large onion, cut into thin strips
1 julienned green bell pepper
2 lemons, quartered
salt and pepper to taste
6 (12 inch) flour tortillas

Steps:

  • Combine the lime juice, ground pepper and cilantro in a shallow dish. Place steak strips into the marinade and refrigerate for two to four hours.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add steak strips, and fry until cooked to your liking. Remove meat and set aside.
  • Add remaining oil and onions to the skillet. Cook over medium low heat, until translucent, stir in green peppers and steak. Squeeze the juice of 1 lemon over the top and stir. When the green bell peppers are just tender remove the pan from the heat. Season with salt and pepper to taste. Serve the steak fajitas with tortillas and lemon wedges on the side.

1/2 cup olive oil
1/2 cup tamari
3 green onions
4 large garlic cloves
1/3 cup lime juice
1 teaspoon red pepper flakes
1 teaspoon cumin
3 tablespoons dark brown sugar
2 lbs inside skirt steaks
2 green peppers
1 large yellow onion
6 (8 inch) flour tortillas (or more)

Steps:

  • Tamari is aged soy sauce and can be found in most grocery stores.
  • In a blender combine the olive oil, tamari, green onions, garlic cloves, lime juice, red pepper flakes, cumin and brown sugar.
  • Blend until smooth.
  • Cut your skirt steak into 3 equal pieces.
  • Place steaks in a large zip-lock baggie.
  • Pour in marinade, remove as much air as possible and seal.
  • Move steak around in baggie so that all sides are coated.
  • Marinate in the fridge for 1 hour.
  • Wrap your tortillas in aluminum foil-seal.
  • Slice green peppers in half-remove seeds.
  • Peel and slice your onion into 1/4 inch slices.
  • Heat charcoal until grey ash is achieved.
  • Place grill grate "directly" on top of hot coals.
  • Heat grate for 10 minutes.
  • While grate is heating up get a 2 foot length of aluminum foil and fold over once. Crimp sides well to make a foil pouch. You will want to double if not using heavy duty foil.
  • Remove steaks from marinade-place directly onto hot grate.
  • Discard marinade in baggie.
  • Cook for 1 minute 30 seconds per side.
  • Remove, place on foil and seal.
  • Let stand in sealed foil packet for 15 minutes.
  • While steak is resting grill peppers and onion slices to desired doneness.
  • Place foil wrapped tortillas on grate for 3 minutes, flip and continue to heat for another 3 minutes.
  • Open foil packet carefully so that you reserve the juices.
  • Slice steaks thinly across the grain, straight down-no need to angle the slice, no more than 1/4 inch thick.
  • Return meat to foil packet and coat with juices.
  • Slice peppers and cut onion slices in half.
  • Dress your tortillas with meat, peppers and onions.
  • Optional condiments are sour cream, guacamole, shredded sharp cheddar or queso cheese, sliced jalapeños.
  • We have used flank steak with equal success. Lay the flank steak flat on a cutting board and carefully cut it in half widthwise (so that it looks like you have two thin flank steaks), cut one into 3 pieces and continue with recipe directions, freezing the other half for another night.
  • Prep time includes marinating time.
