2 tablespoons safflower oil, divided
9 ounces skirt steak, cut with the grain into 4-inch-long pieces, then against the grain into 1/4-inch-thick slices, or New York strip steak, cut against the grain into 1/4-inch-thick slices
Coarse salt
A 1 1/2-inch piece of peeled fresh ginger, minced (about 3 tablespoons)
1 1/2 red Thai chiles or 1/2 jalapeno, minced, seeds and ribs included
1 1/2 bunches scallions, thinly sliced on the bias, white and green parts separated
1 1/2 bunches asparagus (about 1 1/2 pounds), trimmed and sliced on the bias into 1/4-inch-thick pieces
Cooked rice, for serving
Lime wedges and dry-roasted peanuts, for serving

Steps:

  • Heat a large wok or skillet over high heat. Add 1 tablespoon oil, swirl to coat, and add steak. Season with salt and sear, stirring occasionally, until golden brown, about 3 minutes. Transfer to a plate.
  • Add remaining tablespoon oil to wok and swirl to coat. Add ginger, chiles, and scallion whites and cook, stirring, 30 seconds. Add asparagus and cook until crisp-tender, about 2 minutes. Return steak to wok, along with scallion greens. Toss to combine and heat through. Remove from heat and season with salt. Serve over rice with lime wedges for squeezing and peanuts.

1/2 cup orange juice
3 tbsp tamari sauce (or gluten-free soy sauce)
2 tbsp brown sugar
1 tbsp rice vinegar
1 tbsp ginger (minced)
2 tsp toasted sesame oil
1 garlic clove (minced)
1 tbsp cornstarch
1 tsp chilli paste (sambal oelek or sriracha )
2 tbsp peanut oil
8 oz top sirloin steak (thinly sliced)
12 oz asparagus (trimmed & sliced in half on the diagonal)
8 oz cremini mushrooms (sliced)
2 tsp fresh thyme leaves
1 large red bell pepper (cored, seeded and sliced into 1/2 inch strips)
1/2 cup cherry tomatoes (halved)

Steps:

  • Whisk all sauce ingredients in a bowl, or put them in a jar with a lid and shake*
  • Heat a wok or large skillet over high heat.
  • Add 1 tbsp of the peanut oil, heating until just beginning to smoke
  • Add the mushrooms and thyme and stir fry until tender and browned about 2-3 minutes. Transfer mushrooms to a plate.
  • Add the remaining tbsp of oil & heat, spreading around the pan.
  • In batches, add the meat, spreading pieces out.
  • Sear the meat for 30 seconds, turn and sear 30 seconds more. Transfer to the plate with the mushrooms
  • Add asparagus and red pepper to the pan and stir fry 1 minute
  • Add 1 tbsp water to the pan and cook until the water evaporates
  • Add the sauce to the pan along with the meat and mushrooms
  • Cook, stirring just until the sauce starts to thicken, about 1 minute
  • Transfer to a platter, stir in cherry tomatoes and serve immediately

2 tablespoons packed light brown sugar
2 tablespoons low-sodium soy sauce
2 teaspoons cornstarch
2 tablespoons toasted sesame oil
8 ounces top round steak, thinly sliced against the grain
2 bunches scallions, cut into 1-inch pieces
1/2 English cucumber, quartered and cut into 1-inch pieces
1/2 head napa cabbage, cut into 1-inch-thick strips
1 cup shredded carrots (about 2)
1 tablespoon minced peeled ginger
2 red jalapeno peppers, halved, seeded and thinly sliced
3 cups cooked white rice, for serving

Steps:

  • Whisk the brown sugar, soy sauce, cornstarch, 2 tablespoons water and 2 teaspoons sesame oil in a bowl. Add the steak and toss.
  • Heat a large skillet over high heat; add 2 teaspoons sesame oil. Add the scallions, cucumber and cabbage; stir-fry until the vegetables start softening, about 2 minutes. Add the carrots and 1/4 cup water; cook, stirring, until the water evaporates and the vegetables are tender, 2 to 3 minutes. Transfer to a bowl; wipe out the skillet.
  • Heat the remaining 2 teaspoons sesame oil in the skillet over medium-high heat. Add the ginger and jalapenos; stir-fry 30 seconds. Transfer the steak to the skillet using a slotted spoon; stir-fry until browned, 2 to 3 minutes.
  • Add the steak marinade back to the skillet and cook, stirring, until thick, about 2 minutes. Return the vegetables to the skillet and heat through. Serve over rice.

6 ounces shoulder steak, trimmed, frozen 30 minutes to 1 hour
1/2 teaspoon baking soda
3 large cloves garlic, crushed plus 2 tablespoons chopped
1 egg white
1/4 teaspoon salt
1 tablespoon sesame seeds
5 teaspoons sugar
1 teaspoon peanut oil plus 4 cups, for deep-frying
3/4 teaspoon cornstarch
2 tablespoons thin soy sauce
2 tablespoons Shao Hsing (Chinese rice wine) or dry sherry
2 teaspoons Chinese dark vinegar* or balsamic vinegar
2 teaspoons sesame oil
1 teaspoon Chinese sesame paste*
1/4 pound pencil-thin asparagus tips (4 inches)
1/2 small red bell pepper, very thinly sliced (about 1/3 cup)
4 dried red chili peppers
3 scallions, chopped
2 tablespoons chopped ginger
Serving suggestion: Rice

Steps:

  • Slice steak into broad 1/8-inch thick strips, about 1 inch wide and 6 inches long. In a small bowl combine steak strips with baking soda, crushed garlic cloves and 1/4 cup cold water. Mix well and soak 5 hours.
  • Rinse steak slices and dry well on paper towels. In a small bowl mix together egg white and salt, stirring vigorously until egg white foams. Stir in sesame seeds, 1 teaspoon sugar, 1 teaspoon peanut oil and cornstarch. Add steak and toss to coat. Marinate 1/2 hour at room temperature. In another small bowl, combine thin soy sauce, Shao Hsing, remaining 4 teaspoons sugar, vinegar, sesame oil and sesame paste; set aside.
  • In a wok heat remaining 4 cups peanut oil over high heat to 375 degrees. Drain beef, pat dry then deep-fry 45 seconds, turning pieces several times with a metal spoon. Using a slotted spoon, remove beef and drain on paper towels. When oil returns to 375 degrees, deep-fry 15 seconds more, remove beef, and drain. Repeat deep-frying, 15 seconds, a third time. Remove beef and drain on clean paper towels. When oil returns to 375 degrees, deep-fry asparagus and red bell pepper 30 seconds. Drain on paper towels.
  • Drain off all but 1 tablespoon oil from wok and increase heat to high. Add chili peppers, scallions, chopped garlic and chopped ginger; stir-fry 1 minute. Add asparagus and red pepper; stir-fry 10 seconds and add beef. Stir in soy sauce mixture, bring to a boil and serve immediately with rice.

3 tablespoons canola oil, divided
1 teaspoon sugar
2 teaspoons fresh ginger, minced, divided
1 lb sirloin steak, thinly sliced
2 tablespoons cornstarch
1 cup beef broth
3 tablespoons soy sauce
1/2 teaspoon sesame oil
1 tablespoon rice wine vinegar
1 1/2 lbs fresh asparagus, trimmed and cut into 2 inch pieces
1/2 cup red pepper, sliced
1 cup mushroom, sliced
1 (8 ounce) can water chestnuts, drained
1/4 cup green onion, chopped
1 tablespoon sesame seeds, toasted

Steps:

  • In a shallow glass container, combine 1 Tablepoon of oil, sugar, and half of the ginger. Add beef and turn to coat. Let stand for 15 minutes.
  • In a bowl, combine the cornstarch, broth, soy sauce, sesame oil, vinegar and remaining ginger until blended. Set aside.
  • In a large skillet or wok, brown beef in 1 Tablespoon of oil. Remove and keep warm. Add 1 more tablespoon of oil to the pan. Stir fry asparagus, red pepper and mushrooms for a minute or two. Add water chestnuts and onions; stir-fry for 1 minute. Add cornstarch mixture to the skillet.
  • Bring to a boil, stirring constantly; cook and stir for 2 minutes or until thickened. Return beef to the pan; heat through.
  • Serve over hot rice. Garnish with sesame seeds.

4 garlic cloves, thinly sliced

1/2 tablespoon mustard
2 tablespoons extra-virgin olive oil
2 cloves garlic, sliced
Salt and freshly ground black pepper
1/3 cup chopped scallions

Steps:

  • Snap off the ends of the asparagus where they break naturally and peel the spears. Slant-cut them about one-inch long.
  • Beat the lemon juice and mustard and set aside.
  • Heat the oil in a wok or skillet. Add the garlic, stir-fry about a minute, then add the asparagus and stir-fry about 5 minutes, until they are crisp-tender, lightly seared but still bright green. Stir in the lemon-mustard.

Steps:

  • Pat steak dry with paper towels. Slice meat crosswise as thinly as possible and place in a medium bowl. Add cornstarch, 1 Tbsp. soy sauce, and 1 Tbsp. oil and toss with tongs to coat meat.
  • Toss asparagus, sugar snap peas, ginger, and three-fourths of scallions in another medium bowl.
  • Stir oyster sauce, mirin, vinegar, and remaining 1 Tbsp. soy sauce in a measuring glass or small bowl to combine.
  • Heat 2 Tbsp. oil in a large skillet, preferably stainless steel, over medium-high. Cook vegetable mixture, shaking skillet often to move them around, just until asparagus is tender but still retains a hint of crunch, about 3 minutes. Return vegetables to bowl.
  • Heat remaining 1 Tbsp. oil in skillet over medium-high. Add steak, arranging slices in a single layer, and cook, undisturbed, until undersides are browned, about 3 minutes. Using a thin metal spatula, scrape bottom of skillet and loosen meat. 1 bunch watercress
1/2 tablespoon vegetable oil
1/2 teaspoon sugar

Steps:

  • Snap off the ends of the asparagus where they break naturally, then cut them into slices one-half inch thick sharply at an angle.
  • Rinse and drain the watercress and trim off any heavy stems. Separate the watercress into branches.
  • Shortly before serving time, heat the oil in a wok or large skillet. Add the asparagus and stir-fry them two to three minutes until they begin to lose their rawness and turn bright green. Sprinkle them with sugar.
  • Add the watercress and stir-fry until the watercress wilts. Season with salt. Transfer to a serving dish and serve hot or at room temperature.

1 tablespoon cider vinegar

2 pounds fresh asparagus, trimmed and cut into 1 inch pieces

Steps:

Beef Stir-Fry With Asparagus, Red Bell Peppers and Caramelized O image

A great summer dish with fresh, local and organic ingredients! Do not be fooled by the long list of ingredients. This recipe is very easy and incredibly tasty, inspired by the sharp, tangy flavors of Asian cooking. A wok would be ideal, but a good skillet or saute pan will do the trick. Serve this dish with plain or white rice.

1 tablespoon dry sherry
1 tablespoon tamari soy sauce
2 teaspoons cornstarch
1 lb flank steak
2 -3 tablespoons peanut oil
1 sweet onion
1/2 lb asparagus
1 red bell pepper
2 tablespoons balsamic vinegar
1 teaspoon sugar
1/2 cup chicken stock
1 tablespoon cornstarch
3 tablespoons water

Steps:

  • Trim the excess fat and cut the flank steak in small, bite-size pieces. Combine the ingredients for the marinade and let the beef marinate for at least 20 minutes.
  • Meanwhile, cut the onions in thin slices. The bell peppers should be seeded and cut in 1-inch slices. Cut the tougher ends of the asparagus and slice them on the diagonal into 2-inch long pieces.
  • Bring a medium pan of water to a boil, reduce to a simmer and throw the asparagus in for about 2 or 3 minutes. Drain them, run them under cold water and dry them.
  • In a wok or sauté pan over a high flame, heat 1 tablespoon of the oil. Add the marinated beef strips, making sure it makes a nice sizzling sound. Once the meat is nicely browned on the outside, but still tender in the middle, about 2-3 minutes depending on the size, take it out and set it aside on a plate. You may need to sear the beef in two batches if your wok is not big enough.
  • Add 1 more tablespoon of the oil, and briefly stir-fry the asparagus for 3-4 minutes at medium-high eat. Set the asparagus aside and keep warm.
  • Add another tablespoon of oil, if necessary, and add the onions. Toss and turn until they have a nice golden brown color, 7 to 10 minutes. Add the peppers and stir until softened, about 4-5 minutes. Add sugar and vinegar, and cook for a few more minutes until the onions begin to caramelize.
  • Add the stock and bring to a simmer cooking for another 2 minutes to reduce the liquid. Mix the cornstarch with the 3 tablespoons of water and add slowly add it to the mixture until the sauce is a thick as you desire.
  • Return the beef and the asparagus to the pan and stir for another minute or so to amalgamate the flavors. Serve immediately with some white or brown rice.
