GRANDMA'S GREEN BEAN CASSEROLE
This recipe is much better than the standard mushroom soup and French fried onion version.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
- Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
- Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.

VEGAN GREEN BEAN CASSEROLE
Green bean casserole is a true fall comfort dish; its creamy sauce, tender green beans and crunchy onion topping will have everyone coming back for seconds. We substituted a few vegan ingredients, such as unsweetened almond milk and vegan sour cream, for an equally comforting side dish that all can enjoy. Assemble the entire casserole in a large oven-proof skillet for easy cooking and minimal cleanup.

- Preheat the oven to 400 degrees F.
- Bring a large pot of salted water to a boil and fill a large bowl with ice water.
- Add the green beans to the boiling water and cook until crisp-tender and bright green, 4 to 5 minutes. Drain well and transfer to the ice water to cool completely. Drain again and transfer to a paper towel-lined baking sheet; pat dry.
- Meanwhile, heat the olive oil in a large oven-proof skillet over medium-high heat. Add the mushrooms, a pinch of salt and several grinds of pepper and cook, stirring occasionally, until almost all the excess moisture has cooked off and the mushrooms start to turn golden brown, about 6 minutes. Add the onion, garlic and thyme, then continue to cook, stirring, until tender, about 2 minutes.
- Pour 1/4 cup of the vegetable broth into the skillet. Cook, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Simmer until broth is reduced by half, about 1 minute. Stir in the flour and cook, stirring, until completely absorbed, then add the remaining 1/2 cup vegetable broth, almond milk, 1/2 teaspoon salt and several grinds of pepper. Cook, stirring, until thickened and saucy, 3 to 4 minutes. Stir in the vegan sour cream and soy sauce until smooth. Taste and adjust the seasoning with salt and pepper.
- Stir the blanched green beans into the sauce, tossing until evenly coated, then spread into an even layer. Top evenly with the fried onions.
- Bake until golden brown and bubbling at the edges, about 15 minutes. Let sit 5 minutes before serving.
GREEN BEAN CASSEROLE
Steps:
- Preheat oven to 350 degrees F.
- Make the Onion Straws: Combine all the ingredients in a small bowl, toss to mix, and arrange in a single layer on a baking sheet. Set aside.
- Make the Casserole: Bring a small pot of water to boil and season lightly with salt. Boil the green beans until tender, but still crispy, about 5 minutes. Drain and chill beans in an ice water bath or under running cold water. Drain again and transfer to a bowl.
- Heat the oil in a large pan over medium-high heat. Add onion, mushrooms, salt, garlic, and pepper and cook, stirring, about 2 minutes. Add the chicken broth and thyme and cook until almost all the liquid is evaporated, about 3 to 4 minutes. Transfer the mushroom mixture to the bowl of green beans, add the sour cream, and toss to combine.
- Pour the green bean mixture into the glass pie pan. Bake the casserole and onion straws on separate racks until the straws are well browned and crispy (almost burnt, otherwise they will be soggy), about 15 to 17 minutes. Top the casserole with the straws, and serve garnished with thyme sprigs.

SOUR CREAM GREEN BEAN CASSEROLE
This recipe was given to me as a wedding gift 22 years ago. I have made it every year since for Thanksgiving and Christmas, although it is wonderful throughout the year. It is different from the traditional mushroom soup green bean casserole, using a sour cream base instead.

- Cook green beans and drain well.
- Combine butter, flour, salt, pepper, onions, mushrooms, water chestnuts, and sour cream in a medium sized bowl.
- Mix lightly with green beans.
- Place mixture in lightly greased casserole. Top with grated cheese; sprinkle with Durkee onlons.
- Bake at 400 degrees or until cheese is bubbly. (Watch the onions that they don't start to get too brown; cover with a loose tent of foil if they get brown too quickly).
ABSOLUTELY DELICIOUS GREEN BEAN CASSEROLE FROM SCRATCH
No cans here! Fresh mushrooms, onion, and herbs with frozen green beans, sour cream, and cheddar cheese make this a delightfully tasty twist on the traditional casserole. I developed this recipe, longing for a 'no cans' version of the classic dish. I made this one year for my husband's family at Christmas time, and now they ask for it every year! My husband asks me to make it for dinner throughout the year.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place green beans into a saucepan and fill with about 1/2 inch of water. Bring to a boil and steam until beans are tender but still bright green, about 5 minutes. Drain and toss with the mushrooms. Set aside.
- Melt the butter in a large skillet over medium heat. Add the onion and parsley; cook and stir until onion is tender. Whisk in flour until blended, then mix in the lemon zest, salt, and pepper. Gradually whisk in milk, stirring constantly, so that no lumps form and then stir in sour cream. Warm over medium heat until the sauce begins to bubble. Dump in the green beans and mushrooms, stirring to coat.
- Remove from the heat and toss briefly with some of the Cheddar cheese and French fried onions, saving some of each to sprinkle over the top. Spoon into a 1 1/2 quart casserole dish and top with the reserved onions and cheese.
- Bake in the preheated oven until the cheese melts, about 15 minutes.

CREAMY GREEN BEAN CASSEROLE
This is my own version of Green Bean Casserole, It uses a different ingredient, but I think it's the best. I hope You will like it too :) This recipe is what I make for holidays, but you can certainly scale it down to suit the amount you want to make. It does make less than it seems though, especially if you use the French style green beans (not to mention how good left overs are). Exact measurements aren't really neccesary though so don't be afraid to make less or more. For one can beans I'd use 2oz cream cheese and 1/3 can of cream of chicken.

- Heat over to 350°F and grease a 9x9 or whatever sized dish you want to use. I don't suggest a 9X13 but anything smaller will do.
- Drain green beans VERY well, and mix with softened cream cheese, the soup, a pinch of garlic powder and salt and pepper to your liking.
- Add 1/2 cup of the french friend onions.
- Pour into greased pan and cover loosely with foil. Bake for about 25 minutes Then remove cover and stir.
- Add remaining french fried onions to the top and bake uncovered for another 20 to 30 minutes Until it's bubbly and looks done.
- Cool for at least 5 minutes and enjoy! :).

- Bring about 2 cm of lightly salted water to the boil in a medium-size saucepan. Add the trimmed beans and cook, covered, for 8 minutes or until crisp-tender. Drain in a colander.
- In the same saucepan, melt the butter and cook the onion over low heat for one minute.
- Return the beans to the saucepan, add the sour cream and paprika, and stir together. Heat the mixture gently. but do not let it boil or the sauce will curdle.
- Serve!

This is my friend Joe Comb's recipe -- he was a great friend and a great cook! He moved away from the Atlanta area several years ago, and I no longer know how to contact him. Wherever Joe is, I hope he is aware of Recipe Zaar -- The original recipe called for french cut green beans, but I prefer whole beans that I can actually chew! 2 1/2 - 2 3/4 pounds blanched fresh beans can be substituted!

- Preheat oven to 350 degrees.
- Mix butter, flour, sugar, salt, onion, cheese, and sour cream.
- Add drained beans and mix gently. (Blanched fresh beans can be substituted for the canned beans.).

- Top with 1 1/2 - 2 cups cornflakes (or crushed buttery crackers).
