STEAK PIE WITH SAUSAGES AND MUSHROOMS

A rich meat pie filled with chunks of tender beef and mushrooms. Slow cooked in beef broth and dark ale, this is the best steak pie ever.

2½-3 lbs chuck roast steak
⅓ cup all purpose flour
3 tablespoons canola oil
1 cup sliced onion
1 tbsp minced garlic
1 ¾ cups good dark ale beer or stout (divided)
¼ cup Worcestershire sauce
3 tbsp tomato paste
1 tbsp sugar
2 sprigs fresh rosemary
2 cup beef broth
½ tsp kosher salt
¼ tsp black pepper
8 oz sliced brown mushrooms
5 sausage brats sliced into chunks
2 tbsp cornstarch
2 tbsp water
1 egg beaten
1 sheet frozen puff pastry (thawed)

Steps:

  • Preheat the oven to 325° F. You'll need a 9 x 13 inch oven safe casserole dish.
  • Cut the chuck roast into cubes about 1 1/2-2 inches
  • Place the chopped beef and flour into a bowl.
  • Toss the beef until covered evenly in the flour.
  • Heat half of the oil in a large pan- at least 10 inch wide- over a high heat.
  • Gently drop in half of the beef and sear on each side until brown and crispy around the edges (about 2 minutes per side).
  • Transfer the seared beef to a plate and repeat with the remaining meat. Set beef aside.
  • To the same pan as you seared the beef, fadd the onion and garlic. Cook until the onion starts to get soft over a medium heat, about two minutes.
  • Add ½ cup of the beer and deglaze the pan by scraping the bottom with a wooden spoon. Simmer for 2 minutes.
  • Add the Worcestershire Sauce, tomato paste, sugar, rosemary and stir.
  • Add the remaining beer and the beef broth. Season with the salt and pepper.
  • Add the mushrooms, bratwurst and the seared beef and stir to combine.
  • Transfer the filling to the pie dish.
  • Bake in the oven for 2 hours, covered with foil.
  • After 2 hours, cook for a further 30 minutes uncovered.
  • Take the pie out of the oven and dissolve the cornstarch with the water. Add it to the pie filling and gently stir through.
  • Raise the oven temperature to 400 degrees F.
  • Unroll the pastry from its package into a rectangle that will be large enough to sit on top of the filling.
  • Lift the pastry onto the pie and brush it with the beaten egg. Score lightly with a knife in a diagonal form to make a cross hatch pattern.
  • Place the pie back into the oven and bake for another 20-30 minutes or until the pastry is a deep golden color and has risen up a little. Don't worry if you take it out earlier, the filling is already cooked so it just depends on how dark and crispy you want your puff pastry.
  • Let rest for 5 minutes before serving.

1 tablespoon all-purpose flour
1/2 teaspoon paprika
1/2 teaspoon dried thyme
1 clove garlic, minced
1/2 medium potato, peeled and grated
1/2 medium sweet yellow onion, minced
Kosher salt and freshly ground black pepper
1 batch Part-Butter/Part-Shortening Easy Pie Dough, recipe follows, chilled
1 large egg whisked with 2 tablespoons water, for the egg wash
2 cups (240 grams) all-purpose flour, cold, plus more for dusting
1 tablespoon sugar
1 teaspoon salt
12 tablespoons (170 grams) unsalted butter, cut into small pieces and chilled in the freezer for 10 minutes
4 tablespoons (50 grams) shortening, chilled in the freezer for 10 minutes
1/2 cup ice water
1 teaspoon lemon juice

Steps:

  • In a mixing bowl, combine the beef, flour and paprika. Stir to combine. Add the thyme, garlic, potato, onion and some salt and pepper. Stir to combine.
  • Divide one portion of the chilled Part-Butter/Part-Shortening Easy Pie Dough into 8 equal pieces. Roll each piece of dough into a round about 3 inches in diameter. You can use a 3-inch round cookie cutter to cut each round and even the edges if you desire. Repeat with the second piece of chilled dough.
  • Preheat the oven to 350 degrees F.
  • Brush each round of dough with the egg wash. Divide the filling among the rounds, piling it in the middle of each round. Bring the sides of the dough up to meet the middle and gently crimp the edges down in the center. Cut 3 small slits into each hand pie to allow steam to escape. Brush the top of the pies with egg wash.
  • Bake until golden brown, about 30 minutes. Allow to cool slightly before serving.
  • In the bowl of a food processor fitted with the blade attachment, pulse together the flour, sugar, salt, butter and shortening until the mixture resembles cornmeal but there are still pea-sized chunks of fat.
  • In a small bowl, stir together the ice water and lemon juice. Slowly add the liquid to the flour mixture, pulsing, until the dough just comes together. Squeeze a small piece of dough between your thumb and index finger to make sure it holds its shape.
  • Turn the dough out onto a lightly floured surface and divide it in half. Gently turn over each piece of dough a few times so that any dry bits are incorporated. Form each piece into a loose disk, cover the dough with plastic wrap and let it rest in the refrigerator for at least 20 minutes.

1 pound cremini mushroom, trimmed, halved if medium or quartered if large
1 1/2 cups beef broth
1 large onion, chopped
1 garlic clove, minced
1/2 teaspoon dried thyme
1/4 cup all-purpose flour
3/4 cup beer
CRUST:
1 large egg, lightly beaten
1/4 cup sour cream, chilled
1 1/4 cups all-purpose flour, 6.25-ounces
1/2 teaspoon salt
6 tablespoons unsalted butter, cut into 1/2-inch pieces and chilled

Steps:

  • Don't substitute bone-in short ribs; their yield is too variable. Instead, use a 4-pound chuck-eye roast, well trimmed of fat. Use a good-quality beef broth for this recipe; the test kitchen's favorite is "Better Than Bouillon Roasted Beef Base." If you don't have a deep-dish pie plate, use an 8x8-inch baking dish and roll the pie dough into a 10-inch square. We prefer pale and brown ales for this recipe. FILLING: Combine water and baking soda in large bowl. Add beef, salt, and pepper and toss to combine. Adjust oven rack to lower-middle position and heat oven to 350°F. Cook bacon in large Dutch oven over high heat, stirring occasionally, until partially rendered but not browned, about 3 minutes. Add mushrooms and 1/4 cup broth and stir to coat. Cover and cook, stirring occasionally, until mushrooms are reduced to about half their original volume, about 5 minutes. Add onion, garlic, and thyme and cook, uncovered, stirring occasionally, until onion is softened and fond begins to form on bottom of pot, 3 to 5 minutes. Process flour and salt in food processor until combined, about 3 seconds. Add butter and pulse until only pea-size pieces remain, about 10 pulses. Add half of sour cream mixture and pulse until combined, about 5 pulses. Add remaining sour cream mixture and pulse until dough begins to form, about 10 pulses. Transfer mixture to lightly floured counter and knead briefly until dough comes together. Form into 4-inch disk, wrap in plastic, and refrigerate for at least 1 hour or up to 2 days. Roll dough into 11-inch round on lightly floured counter. Using knife or 1-inch round biscuit cutter, cut round from center of dough. Drape dough over filling, it's okay if filling is hot. Trim overhang to 1/2-inch beyond lip of plate. Tuck overhang under itself; folded edge should be flush with edge of plate. Crimp dough evenly around edge of plate using your fingers or press with tines of fork to seal. Brush crust with reserved egg. Place pie on rimmed baking sheet. Bake until filling is bubbling and crust is deep golden brown and crisp, 25 to 30 minutes. If filling has been refrigerated, increase baking time by 15 minutes and cover with foil for last 15 minutes to prevent over browning. Let cool for 10 minutes before serving.

1 tablespoon all-purpose flour, or as needed
2 (9 inch) frozen pastry crusts, at room temperature
3 (3x5-inch) loaf pans
2 tablespoons vegetable oil
2 medium potatoes, diced
2 stalks celery, diced
½ large white onion, chopped
1 large carrot, diced
1 pound ground beef
¼ cup frozen peas
¼ cup frozen corn
1 (12 fluid ounce) can or bottle dark ale
2 tablespoons all-purpose flour
2 cups reduced-sodium beef stock
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon kosher salt
1 tablespoon tomato bouillon
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 egg, beaten

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Lightly flour a work surface. Roll each crust out to about 1/8-inch thick. Cut dough to fit three 3x5-inch loaf pans. Push dough into tins and up the edges using your fingertips. Roll out remaining dough for use as top crusts and set aside.
  • Heat oil in a large pot over medium heat. Add potatoes, celery, onion, and carrot. Cook, stirring occasionally, until onions are translucent, about 5 minutes. Add beef and cook until browned, 5 to 7 minutes. Add peas, corn, and ale; cook and stir until reduced by a bit more than half, stirring occasionally, about 5 minutes.
  • Add flour to the vegetable-ale mixture and stir constantly until thick and almost pasty, 1 to 3 minutes. Add stock slowly, stirring constantly. Add ketchup, Worcestershire sauce, salt, tomato bouillon, rosemary, and garlic powder. Reduce heat and simmer until filling mixture reduces to desired thickness and potatoes are cooked through, 7 to 10 minutes.
  • Remove pot from heat and allow filling to cool slightly. Fill crusts with filling. Top with remaining dough and pinch edges to seal. Brush tops of pies with beaten egg wash. Cut 3 slits in the top of each pie for air to escape. Place tins on a baking sheet.
  • Bake in the preheated oven until golden brown, about 30 minutes.

1 ¼ pounds cubed beef stew meat
1 onion, diced
1 (12 fluid ounce) can pale ale or lager beer
2 cloves garlic, minced
½ teaspoon dried thyme
1 ½ teaspoons chopped fresh parsley
2 tablespoons Worcestershire sauce
salt and pepper to taste
2 cups peeled and cubed potatoes
1 ½ cups quartered fresh mushrooms
1 tablespoon all-purpose flour
1 pastry for double-crust pie

Steps:

  • Place the beef stew meat, onion, and ale in a large saucepan. Simmer over low heat until the meat is tender, about 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Season the beef with garlic, thyme, parsley, Worcestershire sauce, salt and pepper. Mix in the potatoes and mushrooms. Cover and simmer over medium heat until potatoes are just tender enough to pierce with a fork, 10 to 15 minutes. British Open Top Steak, Ale and Stilton Pub Style Pies image

Delicious individual pies which are perfect for supper, lunch or a picnic. These contain steak & onions cooked in good quality ale with a Stilton cheese & mashed potato topping, instead of the usual pastry. My own invention which is requested regularly now; this recipe was born out of left over mashed potato, stewed steak in ale and the dried up end pieces of some Stilton cheese! Here I have given instructions for my basic steak in ale casserole, but have assumed that you will know how to make mashed potatoes - I have also suggested frozen shortcrust pastry for ease! Serve these pies with chips, more mashed potatoes and seasonal vegetables....and don't forget the pint of ale to accompany them! "British Open Top" is a play on words, based on the British Open Top Mini car I used to have when I was a student....NO pastry tops here you see!!

1 1/2 lbs braising steak
1 pint english ale
1 pint water (approximately)
2 beef bouillon cubes
2 tablespoons plain flour
2 large onions, peeled and diced
cooking oil or beef dripping
2 teaspoons English mustard
salt and pepper
12 ounces ready made shortcrust pastry
8 tablespoons ready-made mashed potatoes, approx
6 -8 ounces Stilton cheese, crumbled
1 ounce butter, for the pie topping

Steps:

  • Peel and chop the onions. Cut up the braising steak into small cubes.
  • Heat some oil in a large and deep saucepan. Add the onions and sauté gently for about five minutes until soft.
  • Add the meat and cook to seal.
  • Add the flour and stir in to meat juices.
  • Continue to cook to cook out the flour, adding the beer gradually to prevent sticking to the pan until all the beer has been added.
  • Add beef stock cubes, salt and pepper to taste and stir until dissolved.
  • Add water to thin down the gravy. The amount will vary according to how much juice has come out of the meat so add gradually until the right consistency is achieved.
  • Add the English mustard and mix well.
  • Once boiling reduce the heat, cover and simmer very gently for at least two hours.
  • Allow to cool slightly.
  • Pre-heat oven to 210C/425°F.
  • Roll out the ready made shortcrust pastry and line 4 individual pie moulds with it - I used a Yorkshire pudding tin - the diameter of the moulds in the tin was 5" - or use individual aluminium pie containers.
  • Line each pastry round with greaseproof paper and bake blind for about 5 - 10 minutes; using baking beans or heavy beans to keep the pastry flat.
  • Remove the greaseproof paper and beans; divide the steak in ale mixture between the 4 pies.
  • Mix the Stilton cheese into the ready-made and well seasoned mashed potato and pile on top of the steak and pastry bases.
  • Place a knob of butter on top of each mashed potato topping and bake in the oven for about 10 - 15 minutes, or until the pastry is crisp and the potato and Stilton cheese topping is golden brown & bubbling.
  • Serve with extra ale gravy if desired and seasonal vegetables - OR allow to cool, wrap and take on a picnic!
  • You can prepare and part cook your Steak and Ale Pie on the one day and then complete the cooking on the following day which will allow the flavours to come out even more.
  • Suggested Ales: Theakson's Old Peculiar; Old Speckled Hen; Hobgoblin Strong Dark Ale; Hooky Dark.

1 pint beef stock, made from stock cubes
500 ml beer

  • fry beef until browned.
  • transfer to a large pan, add onions and mushrooms, beef stock, beer and salt and pepper. simmer for 1 hour until tender and the sauce thickened.
  • add beef mixture to a large oven proofed dish.
  • roll out puff pastry and place on the top of the beef mixture ensuring no gaps. brush milk with a pastry brush.
  • bake in a preheated medium oven for 30 to 40 minutes until risen and brown.
  • serve.
