- In an electric coffee/spice grinder finely grind star anise. In a 1- to 1 1/2-quart heavy saucepan bring anise, sugar, butter, and vinegar to a boil over moderate heat, stirring, and boil 1 minute. Remove pan from heat and stir in flour and a pinch salt until mixture is smooth. Cool dough to room temperature. Form and bake cookies as directed at below.
- To form and bake lace cookies:
- Preheat oven to 350°F and line 2 large baking sheets with parchment paper.
- Roll level 1/2-teaspoons dough into balls and arrange 4 inches apart on baking sheets. Bake cookies in batches in upper and lower thirds of oven, switching position of sheets halfway through baking, 10 minutes, or until cookies are flat and golden. Transfer parchment with cookies to racks to cool. Cool baking sheets and line with fresh parchment between batches.

- Preheat oven to 350°. In a large bowl, beat sugar and honey until blended. Beat in eggs. In another bowl, whisk flour, baking soda and star anise; gradually beat into sugar mixture., Divide dough in half. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 1-1/2-in. star-shaped cookie cutter. Place 1 in. apart on greased baking sheets., Bake 4-6 minutes or until edges are light brown. Remove from pans to wire racks to cool.

MY NANA'S LACE COOKIES
These are delicate lace cookies with an amazing taste! A tradition in our family for Christmas since I was a little girl. These cookies spread to make a very thin wafer, almost transparent. Super easy to make, but be careful, as they can be quick to burn or cool too much on your cookie sheet - and then you'll be chipping the cookies off of your cookie sheet! I hope you enjoy these as much as my family does. Store in an airtight container until serving.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Mix oats, brown sugar, flour, and salt together in a bowl. Stir in melted butter until well blended. Pour in egg and vanilla extract and mix until well blended.

- Heat oven to 180C/fan 160C/gas 4. Put all the ingredients except the flour and bicarb in a pan and heat until melted. Sift the flour and bicarb into a bowl, then stir in the wet ingredients to form a soft dough. Bring together with your hands into a disc, wrap in cling film and chill for 30 mins.
- Dust a board, then thinly roll out dough. Lightly oil a baking sheet, stamp out 24 x 6cm circles and place on the sheet. Bake for 10-15 mins until golden and firm to the touch. Leave on the tray for 5 mins, then transfer to a cooling rack and allow to cool completely before serving.

- In an oiled sautè skillet oiled with Canola oil& Sesame oil, add all the ingredients& bring to a boil.
- Reduce heat& simmer about 5 minutes.
- Check for seasoning.
- Bring to a boil again.
- Reduce heat& simmer another 10 minutes, stirring constantly until sauce somewhat thickens, almost like a syrup.
- Strain& use the sauce to cook over duck, chicken, pork chops or beef cubes.

- With a Kitchenaid mixer: beat eggs 20 minutes with 2 cups of granulated sugar (yes I mean 20 minutes as this is what will make the cookies light as a feather with a crisp melt in you mouth top crust).
- Add flour gradually, beating well after each addition. Add 1 tsp anise oil and blend well.
- Drop by tablespoonsful onto greased cookie sheets and let stand in a draft free place overnight.
- Bake in a 375°F oven for 10 minutes until light golden but do not brown.
- Cool on baking racks thoroughly before storing.
- Store in a tightly covered cookie tin (not plastic).
- The longer you let the cookie age, the better it will be.

- In a bowl cream the butter with the brown sugar until the mixture is light and fluffy and beat in the flour, the milk, and the vanilla. Stir in the oats, drop rounded teaspoons of the dough about 3 inches apart onto ungreased baking sheets, and bake the cookies in batches in the middle of a preheated 350°F. oven for 10 to 12 minutes, or until they are golden. Let the cookies stand on the sheets for 1 minute, or until they are just firm enough to be moved with a metal spatula. (If desired, turn the cookies upside down on the sheets and, working quickly, roll them into cylinders on the sheets. If the cookies become too hard to roll, return them to the oven for a few seconds and let them soften.) Transfer the cookies to a rack and let them cool completely.
