1/2 cup sugar
2 tablespoons cornstarch
2 tablespoons Hersheys cocoa powder
2 1/2 cups milk
1 teaspoon vanilla
1 tablespoon butter

Steps:

  • In a small saucepan, combine sugar, cornstarch, cocoa, and milk.
  • Cook on medium until thick.
  • Remove from heat and add vanilla and butter and stir until combined.
  • Place in molds and freeze until firm.

8 ounces bittersweet chocolate, chopped fine
12 ounces (1 1/2 cups) heavy cream
8 ounces (1 cup) whole milk
2 tablespoons unsweetened cocoa powder
2 teaspoons vanilla extract
Special Equipment: Icepop molds

Steps:

  • Place chopped chocolate into a medium glass mixing bowl. Set aside.
  • Combine heavy cream, milk, and cocoa powder in a medium saucepan over medium heat. Whisk constantly until cocoa is dissolved and mixture comes to a simmer. Remove from the heat and pour over the chocolate. Let stand for 2 to 3 minutes and then whisk gently until all chocolate is melted. Whisk in the vanilla extract.
  • Divide the mixture evenly among the molds and place in the freezer. Freeze for at least 4 hours or until solid. Fudgepops can be held in the freezer for up to 1 week in an airtight container.

2 1/2 cups whole milk
2/3 cup granulated sugar
2 Tablespoons cornstarch
3 Tablespoons unsweetened cocoa powder
1/4 cup semisweet chocolate chips
1 teaspoon vanilla extract
1 Tablespoon butter

Steps:

  • Put the milk, sugar, cornstarch, and cocoa powder in a saucepan and mix carefully over medium heat. A spring whisk will help make sure you get all the lumps out.
  • Add the chocolate chips and cook, stirring frequently, until they are melted.
  • Remove from heat, add the vanilla and butter, and stir until combined.
  • Allow to cool slightly and then pour into popsicle molds. Freeze until solid (several hours to overnight).
  • When it's time to serve, dip the individual molds into hot water for a few seconds and they'll pop right out.

12 ounces heavy cream
8 ounces milk, cold
8 ounces bittersweet chocolate chips (or shavings)
2 teaspoons vanilla extract

Steps:

  • Place bittersweet chocolate into a medium bowl and set aside.
  • Using a medium sized pan over medium heat, ad coco powder, heavy cream, and cold milk. Heat to simmer.
  • Pour milk mixture over bittersweet chocolate. Let sit for 2-3 minutes.
  • Whisk gently to combine, then add vanilla and continue whisking till thouroughly mixed.
  • Pour into popsicle molds and freeze for a minimum of 4 hours. NOTE: A turkey baster will do the trick nicely for filling the molds or you can use a container with a spout, such as a large measuring cup.

Steps:

  • Prepare the pudding according to package instructions: whisk together pudding mix and cold milk for about 5 minutes or until thickened.
  • Transfer the pudding mix into popsicle molds.
  • Be sure to insert the popsicle sticks into the filled molds before freezing.
  • Freeze the fudgesicles for about 8 hours until very firm.
  • Dip the molds into warm water for about 30 seconds to help loosen the fudgesicles from the molds.

If you find it is not sweet enough, add the agave nectar or mild honey to taste and blend again until combined.
  • Add the ice cubes and blend, moving the ingredients around if necessary, until smooth and very thick. Divide into glasses and serve with spoons.
  • Spoon or scrape the mixture into popsicle moulds or small, disposable paper cups. Add the popsicle handles or sticks and freeze for 6 hours, or until frozen solid.
  • Pour the blended mixture into half-pint jars, leaving 1/2-inch of headspace in each jar to allow for expansion when it freezes. Place the frozen jars in your lunch bag or picnic basket as the ice-source for your food. By the time lunch rolls around, they should be perfectly spoonable and the picnic lunch should still be chilled.
