3-Bean Salad with Lemon Vinaigrette image

2 cloves garlic
1/3 cup lemon juice
1 teaspoon ground cumin
1 teaspoon honey
1 teaspoon Dijon mustard
2/3 cup extra-virgin olive oil
Salt and pepper
3 stalks celery, finely chopped
1 bunch green onions, green parts only, finely chopped
One 15-ounce can black beans, drained
One 15-ounce can red kidney beans, drained
One 15-ounce can white beans, drained
Salt and pepper
3 tablespoons chopped fresh parsley

Steps:

  • For the lemon vinaigrette: Using a rasp grater, grate the garlic into a bowl. Add the lemon juice, cumin, honey and Dijon. Whisk in the olive oil and season with salt and pepper.
  • For the 3-bean salad: Mix the celery, green onions, black beans, kidney beans and white beans in a large bowl.
  • Dress the salad with 1/4 cup of the vinaigrette and toss well. Season with salt and pepper and toss with the parsley.

1 tablespoon vegetable oil
1 pound fresh bean sprouts
1 medium red bell pepper, seeded and thinly sliced into strips
2 scallions, chopped
2 tablespoons rice wine vinegar
2 teaspoons sugar
Salt
Dash of sesame oil

Steps:

  • Heat oil in large skillet over medium high heat. Add the bean sprouts and cook quickly for 30 seconds. Add the peppers and stir fry. Add the scallions and stir. Remove vegetables to a strainer to drain.
  • In a large bowl, mix together vinegar, sugar, salt and sesame oil. Add vegetables and toss tocoat. Refrigerate for 6 hours before serving.

2 tablespoons Santa Cruz Organic® Pure Lemon Juice
3/4 teaspoon minced garlic
1/2 teaspoon ground cumin
1/2 teaspoon Salt
1/4 teaspoon pepper
1 cup diced English cucumber
2/3 chopped fresh parsley
1/4 Thinly sliced green onions
1/2 crumbled feta cheese

Steps:

  • 1. COOK bean & lentil medley in water according to package cooking instructions. Drain.
  • 2. WHISK oil, lemon juice, garlic, cumin, salt and pepper in large bowl.
  • 3. ADD medley, cucumber, parsley, onions and cheese to bowl. Toss to coat evenly with dressing. Cover and chill at least 30 minutes before serving.

3 cups chicken broth
2 cups water
3 whole boneless skinless chicken breasts (about 2 1/4 pounds), halved
2 1/2 tablespoons white-wine vinegar
2 tablespoons fresh lemon juice
1/2 teaspoon sugar
1/3 cup olive oil
2 tablespoons mayonnaise
1 tablespoon finely chopped fresh tarragon leaves
2 1/2 cups assorted sprouted beans (about 6 ounces)
1 cup chopped celery
3 scallions, sliced thin

Steps:

  • In a 6-quart kettle bring broth and water to a boil. Add chicken and simmer, covered, 9 minutes. Remove kettle from heat and let chicken stand in cooking liquid, covered, until cooked through, about 20 minutes. Chicken may be poached 1 day ahead, cooled completely, uncovered, in cooking liquid, and chilled, covered. Bring chicken to room temperature to continue. Cut chicken into 1/2-inch pieces.
  • In a large bowl whisk together vinegar, lemon juice, sugar, and salt and pepper to taste until sugar is dissolved. Whisk in oil and mayonnaise in a stream, whisking until emulsified. Add chicken and remaining ingredients and toss until combined well.

10 cups sprouted mung beans (try to use organic)
1 bunch cilantro, leaves only
1/2 cup lemon juice
1/2 cup extra virgin olive oil
1 tablespoon muchi curry (or any curry paste or sauce)
1 pinch cayenne pepper
2 1/2 tablespoons soy sauce
1 tablespoon minced garlic
1 tablespoon stone ground mustard

Steps:

  • Toss all of the ingredients together in a large serving bowl.
  • Serve immediately.

1 lb green beans, trimmed and cut into 1-inch pieces
1 lb frozen shelled edamame
1/2 lb fresh bean sprout
1/4 cup japanese pickled ginger, minced
3 tablespoons japanese pickled ginger liquid, see note
2 garlic cloves, minced
2 tablespoons canola oil
2 tablespoons Braggs liquid aminos
1 tablespoon wasabi powder or 1 tablespoon wasabi paste
1 teaspoon salt
4 scallions, minced

Steps:

  • NOTE: Save the 3 tbsp ginger liquid for that step. The zaar computer didn't like Japanese pickled ginger liquid so I had to change it. Also note simply save what the ginger came inches.
  • In pot of lightly salted water cook green beans for about 5 minutes then add the soybeans.
  • Place bean sprouts in colander and rinse: when water returns to boil after adding soy drain over sprouts.
  • Rinse the green bean/soy with cold water to stop cooking.
  • Whisk ginger, liquid, garlic, oil, Braggs, wasabi and salt together in a bowl.
  • Add in the beans and sprouts plus the scallions and toss.
