Steps:
- Scatter shallots in bottom of a 2-quart souffle dish.
- At the knobby, small end of each chicken leg, cut through skin and tendons.
- Arrange legs and thighs along the inside rim of the souffle dish. Place breast halves, bone side up, in center of dish. Fit wings in between legs and thighs. Mound asparagus in center of dish. Pour broth over all. Cover tightly with microwave plastic wrap. Cook at 100 percent for 10 minutes.
- With dish in oven, slit plastic. Stir in dissolved cornstarch by sticking wooden spoon through slit. Cover slit with a square of wrap as a patch. Cook at 100 percent for three minutes.
- Uncover and stir in lemon juice, dill, salt and pepper to taste. Serve immediately

- Whisk the oyster sauce, chicken broth, sherry, cornstarch, brown sugar, sesame oil and garlic in a small bowl.
- Heat a large skillet or wok over medium-high heat. Add 1 tablespoon vegetable oil to the skillet and heat until shimmering. Add the asparagus, season with 1/2 teaspoon salt and cook, stirring occasionally, until lightly browned and crisp-tender, about 4 minutes. Remove the asparagus to a large plate.

- Freeze the chicken breasts for 20 to 30 minutes and then thinly slice the chicken against the grain into strips. Toss the strips with about half the garlic and ginger, the soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, and the sherry in a bowl. Marinate at room temperature for 15 minutes. Mix the remaining cornstarch with the broth.
- Heat 1 tablespoon of the oil a large nonstick skillet over high heat. Add the asparagus, scallions, remaining garlic, ginger, 1/4 cup of water, and season with 1/4 teaspoon salt. Stir-fry until the asparagus is bright green but still crisp, about 3 minutes. Transfer to a bowl.
- Heat the same skillet until very hot, then add remaining 1 tablespoon oil. Add the chicken and stir-fry until it loses its raw color and gets a little brown, about 3 minutes. Return the asparagus to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a full boil to thicken. Mound the stir-fry on a serving platter or divide among 4 plates; serve with rice.

- Take a wide, shallow casserole dish and place it on a high heat. Add the oil and make sure the base is covered to help prevent anything sticking. Put the chicken thighs in the pan, skin down and cook on high for 6 mins until the skin has turned golden. Remove and set aside.
- Add the onion and fry for 2 mins, stirring occasionally. Add the garlic, stir, and add the lettuce halves, cut side down for 30 secs. Then flip them over and return the chicken to the pan, skin side up. Add the stock and thyme and bring everything to the boil. Lower to just below boiling and cook for 12 mins.
- Add the asparagus and peas and cook in the stock for 5-6 mins until al dente.
- Check the chicken thighs are cooked through and lift out of the pan onto a plate.
- Stir in the crème fraîche and chopped parsley. Season to taste.
- Return the chicken to the pan and take the whole dish to the table to serve.

- In a bowl, stir together the first three ingredients and add chicken; coat well and set aside.
- In another small bowl, mix the cooking sauce ingredients and set aside.
- Place a wok over medium-high heat; when wok is hot, add 2 tablespoons of the oil. When oil is hot, add the cashews and stir until browned (about 1 minute). Remove with a slotted spoon and set aside.
- Add the chicken mixture and stir-fry until meat is no longer pink in the center (about 3 minutes). Remove from wok and set aside.
- Pour the remaining tablespoon oil into the wok. When the oil is hot, add the bell peppers, onion, asparagus and ginger; stir-fry until the pepper is crisp-tender to the bite (about 4 minutes).

- Heat the oil in a large, heavy pan. Add the onion, gently fry for 5 mins until softened, add the chicken, then fry until lightly coloured. Add the potatoes, stock and plenty of freshly ground black pepper, then bring to the boil. Cover, then simmer for 30 mins until the potatoes are tender and the chicken is cooked. Can be frozen at this point.
- Add the broccoli, spring greens, petit pois and spring onions, stir well, then return to the boil. Cover, then cook for 5 mins more, stir in the pesto and heat through.

- Place asparagus spears in a saucepan; mash with a fork. Pour in cream. Bring cream to a boil. Reduce heat and simmer, stirring occasionally, until thickened, about 20 minutes. Cover and keep warm.
- Place chicken between 2 sheets of heavy plastic on a solid, level surface; firmly pound with the smooth side of a meat mallet to an even thickness. Season with salt and pepper.

- Heat the oven to 200C/180C fan/gas 6. Arrange the chicken pieces, onion wedges, garlic, lemon slices, asparagus and peas in a roasting tin in a single layer, then sprinkle over the oregano, drizzle with the olive oil and pour over the stock. Give everything a good stir to mix well, then dot the butter over the chicken pieces and season well. Cover the whole tin with foil and bake for 30 mins.
- Remove the foil and bake for 20-30 mins more until the chicken is cooked through and the juices run clear, and the vegetables are tender.
- Heat the grill to high. Put the tin under the grill for a few minutes to crisp up the chicken skin, if needed, being careful not to let the asparagus catch. Serve straight from the tin, or on a platter, with crusty bread to mop up the juices.

- Cut the chicken in one-inch cubes. Beat the egg white lightly and mix it with half the cornstarch and salt to form a smooth paste. Set aside.
- In another bowl, mix the rice wine, soy sauce, stock and remaining cornstarch to form a smooth paste.
- Toss the chicken into the egg white-cornstarch mixture. Heat the oil in a wok or large skillet. Fry the chicken cubes until golden and remove with a slotted spoon. Drain on paper towels. Pour off the oil, leaving about one tablespoon in the wok.
- Add the garlic, ginger and scallions and stir-fry for one minute. Add the asparagus and stir-fry for two minutes, or until bright green. Add the chicken and chili paste and mix thoroughly. Add the rice wine mixture and stir well. Just before removing from heat, stir in the sesame oil. Sprinkle with coriander and serve.

- Prepare chicken and asparagus.
- Combine butter, mustard, garlic and wine in a pie plate.
- Dip the chicken breast in butter mixture to coat them.
- Place 3 asparagus spears on each breast and roll, securing with a toothpick.
- Mix bread crumbs, parmesan and parsley together in a different pie plate.
- Roll chicken breasts in the bread crumb mixture.
- Bake 30 minutes at 350.
- I serve this with blender hollandaise sauce and lemon rice.
- Blender Hollandaise Sauce:.
- Heat butter to a full boil, being careful not to brown.
- Combine all other ingredients in blender with blender turned on high, slowly pour butter into yolk mixture in a thin stream until all is added.
- Keeps well in refrigerator for several days.
- When reheating, heat over hot (not boiling water) in top of double boiler.
- Makes 1 1/4 cups of sauce.

- Preheat oven to 450 degrees. Season chicken with salt and pepper. In a large, straight-sided ovenproof skillet, melt butter over medium-high heat. Add chicken to skillet, skin-side down; cook until golden brown, about 5 minutes a side. Transfer to a plate.
- Reduce heat to medium. Add leeks to skillet; cook, stirring frequently, until softened, about 4 minutes. Stir in wine; cook until almost evaporated, 1 minute. Add broth and potatoes; season with salt and pepper. Bring to a boil, then add chicken, skin-side up; transfer to oven. Roast 15 minutes, then remove and add asparagus; season with salt. Cover and return to oven; roast until potatoes are tender and chicken is cooked through, about 10 minutes more. Transfer chicken to a plate. Stir cream into skillet, then return chicken. - Cut away the backs from the Cornish hens. Cut each hen into quarters. In a large pot, heat 1 tablespoon of the oil over moderately high heat. Add the backs and cook until very brown, about 8 minutes. Discard all but a teaspoon of fat. Add the onion, carrot and celery and cook 3 minutes longer. Add the wine and simmer 2 minutes, scraping the bottom of the pan to dislodge any brown bits. Add the stock. Bring to a boil and simmer until the stock has reduced to 2 cups. Strain the stock. Press the vegetables and bones firmly to get all the liquid. Set the stock aside.
- Combine 1/2 cup of the flour, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Dredge each hen quarter in the seasoned flour. In a frying pan, heat the remaining 2 tablespoons oil over moderately high heat. Add some of the Cornish hen quarters and cook until brown, about 4 minutes per side. Remove. Brown the remaining quarters.
- In a large pot, heat the butter over moderate heat. Add the shallots and cook until beginning to turn golden, about 3 minutes. Add the remaining 1 tablespoon flour and cook, stirring, for 2 minutes. Add the hens with any juice that has accumulated, the reserved stock and the remaining 1 teaspoon salt. Bring to a simmer over moderate heat. Reduce the heat and cook, covered, at a bare simmer for 5 minutes. Add the asparagus and fresh peas, if using. Simmer until the hens are just done and the vegetables are tender, about 5 minutes longer.
- Add the frozen peas, if using, the cream, lemon zest, tarragon and remaining 1/4 teaspoon pepper. Bring back to a simmer and serve.
