The crispiest and best spring rolls filled with vegetables and deep-fried to golden perfection. This spring roll recipe is easy, authentic and 100% homemade.

6 oz. (170 g) pork butt, cut into thin strips
2 tablespoons oil
6 oz. (170 g) cabbage, sliced thinly
2 tablespoons Chopped scallions
1 tablespoon oyster sauce
1/4 cup water
1 teaspoon sesame oil
1/4 teaspoon sugar
1/4 teaspoon salt or to taste
3 dashes ground white pepper
1 packet frozen spring roll wrappers, thaw to room temperature
1 large egg, lightly beaten

Steps:

  • To make the Filling, heat the oil in a skillet over high heat. Ad the pork and stir fry until the surface turn white. Add the cabbage, stir a few times before adding all the ingredients in Seasonings. The filling is ready when the cabbage becomes somewhat dry and not wet. (Wet filling will make the spring rolls soggy and not crispy.) Transfer the filling to a big bowl, let cool.
  • To wrap a spring roll, place a piece of spring roll wrapper on a flat surface. Spread about 2 tablespoons of the filling lengthwise onto the center of the wrapper. DO NOT OVERFILL. Using a small brush or your index finger, dab the beaten egg around the outer edges of the wrapper.
  • Fold the bottom part of the wrapper over the filling.
  • Fold the left and right sides of the wrapper over the filling. Make sure the filling is packed tightly. Roll the spring roll over until it reaches the other end of the wrapper. Make sure the spring roll is sealed tight and there is no leakage. Repeat the steps until you use up the filling.
  • Heat 2 to 3 inches of oil in a wok or a small sauce pan to 350°F (176°C) for deep frying. Gently drop the spring rolls into the oil and deep fry in batches. Deep fry until golden brown. Remove the spring rolls using a strainer or a slotted spoon, draining excess oil on a plate lined with paper towels. Serve immediately.

1/2 cup packed brown sugar
1 tablespoon cornstarch
1/4 teaspoon chicken bouillon granules
1/2 cup cold water
1/2 cup red wine vinegar
1/2 cup finely chopped green pepper
1 jar (2 ounces) diced pimientos, drained
1 tablespoon reduced-sodium soy sauce
2 garlic cloves, minced
1/2 teaspoon minced fresh gingerroot
SPRING ROLLS:
2 teaspoons cornstarch
1/2 teaspoon sugar
1/4 teaspoon salt
2 tablespoons reduced-sodium soy sauce
3/4 pound uncooked medium shrimp, peeled, deveined and chopped
2 garlic cloves, minced
4 teaspoons canola oil, divided
2 cups finely shredded cabbage
1 cup finely chopped fresh mushrooms
1/2 cup finely chopped water chestnuts
1/2 cup shredded carrot
4 green onions, thinly sliced
12 egg roll or Chinese spring roll wrappers (6-8 inches)
Oil for deep-fat frying

Steps:

  • In a small saucepan, combine the brown sugar, cornstarch and bouillon granules. Whisk in water and vinegar until smooth. Add the green pepper, pimientos, soy sauce, garlic and ginger. Bring to a boil. Cook and stir for 2 minutes or until thickened; set aside., In a small bowl, combine the cornstarch, sugar and salt. Stir in soy sauce until smooth; set aside., In a large skillet or wok, stir-fry shrimp and garlic in 1 teaspoon oil until shrimp turns pink. Remove and keep warm., Stir-fry the cabbage, mushrooms, water chestnuts and carrot in remaining oil for 2-3 minutes or until carrot is crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add shrimp and green onions; set aside to cool., With one corner of egg roll wrapper facing you, place 1/3 cup shrimp mixture just below center of wrapper. Cover remaining wrappers with a damp paper towel until ready to use. Fold bottom corner over filling. Moisten remaining edges of wrapper with water. Fold side corners toward center over filling. Roll spring roll up tightly, pressing at tip to seal. Repeat., In an electric skillet or deep fryer, heat oil to 375°. Fry spring rolls, a few at a time, for 3-5 minutes or until golden brown, turning occasionally. Drain on paper towels. Serve with sauce.

½ cup water, plus 1 tablespoon, divided
3 cloves garlic, minced
2 large fresno chiles, minced
¼ cup sugar
⅓ cup rice vinegar
2 teaspoons kosher salt
1 tablespoon cornstarch
2 large carrots, peeled
½ lb green beans, trimmed
1 tablespoon vegetable oil
1 small yellow onion, diced
3 cloves garlic, minced
1 teaspoon fresh ginger
1 lb shrimp, peeled, deveined and finely chopped
1 tablespoon fish sauce
1 teaspoon kosher salt
1 teaspoon pepper
1 tablespoon rice vinegar
2 cups bean sprout
16 lumpia wrappers
egg wash, for brushing
canola oil, for frying

Steps:

  • Make the sweet chili sauce: In a small pot over medium heat, mix together ½ cup (120 ml) of water, the garlic, Fresno chilies, sugar, rice vinegar, and salt. Bring to a boil, then reduce the heat to low and simmer for 2 minutes.
  • In a small bowl, whisk together the cornstarch and remaining tablespoon of water.
  • Whisk the cornstarch slurry into the sauce until fully incorporated. Continue to simmer for 1 minute, or until the mixture has thickened. Remove from the heat and let cool.
  • Make the lumpia: Julienne the carrots. Cut the green beans on the diagonal.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the onion and cook for 3 minutes or until slightly tender.
  • Add the garlic and ginger, and continue cooking for 2 minutes more, until fragrant.
  • Add the carrots and green beans, and toss to combine. Add the shrimp, fish sauce, salt, pepper, and rice vinegar, and cook for 2 minutes or until shrimp is pink.
  • Add the bean sprouts, toss to incorporate, and remove the pan from the heat.
  • Lay out a lumpia wrapper in a diamond shape and spoon 2 tablespoons of filling onto the bottom of the wrapper, leaving about 1½ inches (4 cm) of space from the bottom point.
  • Fold the bottom point over the filling, then fold in the edges to create an envelope shape. Roll the wrapper toward the top point. Brush the top point with egg wash and finish the roll to seal the end. Repeat with the remaining wrappers and filling.
  • In a large, deep skillet, heat 1 inch (2.5 cm) of canola oil to 300°F (150°C).
  • Carefully add 4-5 lumpia at a time to the hot oil. Fry on each side for 1-2 minutes, or until golden brown. Note: If the lumpia are cooking too quickly or burning, reduce the heat. Remove the lumpia from the oil and drain on a wire rack or paper towels.
  • Garnish with cilantro and serve with the sweet chili sauce.

16 shrimp (16 to 20 count), peeled and deveined, tails removed
3 cups dry white wine
2 bay leaves
Juice from 1 lime
1 tablespoon kosher salt
2 ounces thin rice vermicelli
1 cup shredded carrots
1/2 English cucumber, peeled and julienned
1/2 red bell pepper, thin julienne
2 tablespoons rice wine vinegar
2 teaspoons soy sauce
8 large rice paper wrappers (8 1/2-inch rounds)
1 jalapeno, cut into 1/8-inch slices
8 fresh Thai basil leaves, chiffonade
Peanut Dipping Sauce, for serving, recipe follows
1 tablespoon peanut oil
2 cloves garlic, minced
1/2 cup peanut butter
1/4 cup hoisin sauce
1 to 2 teaspoons sambal olek
Chopped roasted peanuts, for garnish

Steps:

  • Score the shrimp on the underside in three equally spaced horizontal cuts. Press firmly on the shrimp to straighten.
  • In a soup pot, combine 4 cups water, the wine, bay leaf, lime juice and salt and bring to a simmer. Turn off the heat, add in the shrimp and cover until the shrimp are pink, about 4 minutes. Scoop out the shrimp and shock in ice water to stop the cooking. Then drain and dry. Reserve the poaching liquid, keeping it hot but not simmering.
  • Add the vermicelli to the hot poaching liquid (no need to simmer or boil the water because that may over cook the noodles). Cook until just al dente, about 8 minutes. Drain.
  • Toss the carrots, cucumbers and red bell peppers with the rice wine vinegar and soy sauce.
  • Dip each rice paper wrapper in warm water, one at a time, for a second (no longer or they will get too soft). The wrapper should still feel somewhat hard when you first start working with it. By the time you finish getting all of your fillings in, the wrapper will have continued to soften. Layer the first one with 2 shrimp, a basil leaf, jalapeno slice, some vermicelli and vegetables. Gently wrap like a tiny burrito and cut on the sharp bias. Serve with Peanut Dipping Sauce.
  • Add the peanut oil to a small saute pan over medium heat and add the garlic. Cook for 1 minute, and then turn off the heat. Then add the peanut butter, hoisin, sambel olek and 3 tablespoons water and mix together. You may need to add a little extra water if the mixture is too thick. Garnish with the chopped peanuts.

2 tablespoons sesame oil
1 tablespoon vegetable oil
1 tablespoon minced fresh ginger
1 teaspoon minced garlic
2 cups fresh bean sprouts
1 1/2 cups uncooked small shrimp, peeled,deveined and chopped
1 cup minced water chestnut
1/2 cup minced smoked ham
1/2 cup minced green onion
1 medium carrot, grated
4 teaspoons soy sauce
2 teaspoons cornstarch, blended with
2 tablespoons cold water
15 phyllo pastry sheets
1 cup melted butter
sesame seeds

Steps:

  • For filling: Heat oils in wok, add ginger and garlic and stir-fry 30 seconds.
  • Add sprouts, shrimp, water chestnuts, ham, green onion and carrot and stir-fry until sprouts start to wilt, about 2 minutes.
  • Add soy sauce and cornstarch mixture and stir until vegetables are slightly glazed.
  • Let cool.
  • To assemble: Cut filo in half crosswise to form 8 x 11 inch rectangles.
  • Fold in short end of 1 rectangle to for 8 inch square (cover remaining filo with damp towel).
  • Brush square lightly with melted butter; turn square so corner is pointed towards you.
  • Place 1 tblsp filling in corner and fold over to enclose.
  • Fold over again.
  • Fold left and right corner flaps towards center.
  • Roll up from bottom to form neat rectangular package.
  • Set seam-side-down on baking sheet.
  • Repeat with remaining filo and filling.
  • (can be prepared ahead to this point; freeze, uncovered, until firm, then transfer to plastic bags and freeze until ready to use.) Preheat oven to 375 degrees F.
  • Brush rolls lightly with melted butter and sprinkle with sesame seeds.
  • Bake until golden-brown 10-15 minutes (Bake frozen rolls unthawed, 15-20 minutes).
  • Serve immediately.

These crunchy, delicate spring rolls can be fried and frozen for up to 2 weeks. Just let them come to room temperature, then reheat in a 400 degree F oven. The sweet-and-spicy sauce can be used for other fried goodies, like shrimp or chicken tenders. Look for spring roll pastry wrappers, which are slightly different from eggroll and wonton wrappers, in the freezer section of Asian specialty markets.

1/3 cup sugar
1 1/2 teaspoons ketchup
1 1/2 teaspoons rice wine vinegar
1 1/2 teaspoons Sriracha
3/4 teaspoon cornstarch
1 tablespoons vegetable oil
2 teaspoons grated ginger
2 cloves garlic, minced
1 cup finely chopped green cabbage
1/2 carrot, shredded (about 1/2 cup packed)
6 ounces small shrimp, finely chopped
3 scallions, thinly sliced on the diagonal
2 tablespoons mirin
1 tablespoons soy sauce
Kosher salt and freshly ground black pepper
1/2 teaspoon toasted sesame oil
1/2 cup mung bean sprouts
9 large sheets spring roll pastry wrappers, cut into quarters (See Cook's Note)
1 large egg, beaten
Peanut or canola oil, for frying

Steps:

  • For the sauce: Whisk together 1/3 cup water, the sugar, ketchup, vinegar, Sriracha and cornstarch in a small saucepan over medium-high heat, and bring to a boil. Remove from the heat when the sauce begins to thicken, 30 to 45 seconds. Let cool.
  • For the spring rolls: Meanwhile, heat a large skillet or wok over medium-high heat. Add the oil, ginger and garlic, and cook, stirring constantly, until aromatic, about 30 seconds. Add the cabbage and carrots, and cook, stirring, until wilted, about 1 minute. Add the shrimp, scallions, mirin, soy sauce, 1/4 teaspoons salt and a few cracks of black pepper, and cook, stirring, until the shrimp turn pink, about 2 minutes. Remove from the heat, and stir in the sesame oil. Let the mixture cool for 15 minutes. Fold in the bean sprouts. When completely cool, roughly chop the mixture and set aside.
  • Put 1 spring roll wrapper on a work surface with a point facing you (it should be a diamond shape). Put about 1 tablespoon of the shrimp mixture in the center of the wrapper, and spread to make a 1-inch log. Fold the bottom of the wrapper over the filling, rolling tightly to keep the spring rolls firm. Fold the sides of the wrapper over the filling. Brush the top edge of the wrapper with egg. Roll up tightly, pressing to seal the edge. Put finished rolls, seam-side down, on a plate or baking sheet until ready to fry. Repeat with the remaining wrappers and filling.
  • Fill a large heavy-bottomed pot or Dutch oven with 3 inches of oil, and attach a deep-fry thermometer to the side. Heat the pot over medium-high heat to 375 degrees F. Fry the spring rolls in batches, 4 or 5 at a time, until lightly golden, about 2 minutes. Remove with a slotted spoon to a paper towel-lined plate to absorb excess oil. Serve with the dipping sauce.

1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons peanut oil
1 teaspoon hot sesame oil
1 teaspoon minced garlic
Pinch of sugar
2 tablespoons finely chopped garlic
1/2 cup smooth peanut butter
1/2 cup soy sauce
1 teaspoon sugar
1 tablespoon rice vinegar
1 tablespoon hot chile oil
1/2 cup cilantro leaves, finely chopped

Steps:

  • Combine all vegetables in a bowl and season with salt and pepper to taste. Lay the spring roll wrappers on a flat surface, pointed edge toward you. Put a 1/8 of the filling in the bottom third of the wrapper, bring the pointed edge over the filling, fold in the sides tightly. Dab the top pointed edge with water and roll tightly. Serve with sauces.
  • Combine all ingredients in a small bowl.
  • Combine all ingredients in a bowl and whisk until smooth, add cilantro just before serving.

2 ounces rice vermicelli
8 rice wrappers (8.5 inch diameter)
8 large cooked shrimp - peeled, deveined and cut in half
1 ⅓ tablespoons chopped fresh Thai basil
3 tablespoons chopped fresh mint leaves
3 tablespoons chopped fresh cilantro
2 leaves lettuce, chopped
4 teaspoons fish sauce
¼ cup water
2 tablespoons fresh lime juice
1 clove garlic, minced
2 tablespoons white sugar
½ teaspoon garlic chili sauce
3 tablespoons hoisin sauce
1 teaspoon finely chopped peanuts

Steps:

  • Bring a medium saucepan of water to boil. Boil rice vermicelli 3 to 5 minutes, or until al dente, and drain.
  • Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat. In a row across the center, place 2 shrimp halves, a handful of vermicelli, basil, mint, cilantro and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.
  • In a small bowl, mix the fish sauce, water, lime juice, garlic, sugar and chili sauce.
  • In another small bowl, mix the hoisin sauce and peanuts.

8 large shrimp, peeled and deveined (prawns)
1 ounce cellophane noodle
1 cup boiling water
1/2 cup shredded carrot
1/4 cup peeled seeded and julienne cucumber

1/2 cup bean sprouts
2 tablespoons chopped fresh cilantro or 2 tablespoons fresh coriander
4 rice paper, rounds 8 inches in diameter
4 large fresh basil leaves, halved lengthwise
2 tablespoons hoisin sauce
fresh lime juice
1 1/2 teaspoons fish sauce
1 1/2 teaspoons unsalted natural-style peanut butter
1/4 teaspoon red pepper flakes
1 pinch brown sugar

Steps:

  • In a saucepan, bring the 2 cups water to a boil.
  • Add the shrimp and immediately remove the saucepan from the heat.
  • Cover and poach until pink and opaque throughout, about 3 minutes.
  • With a slotted spoon, transfer the shrimp to a bowl of ice water and let cool for 3 minutes.
  • Drain and cut each shrimp in half lengthwise.
  • Refrigerate until ready to use.
  • In a heatproof bowl, combine the noodles and boiling water and soak for 10 minutes.

  • Tuck 2 basil leaf halves along the inside crease of the half-rolled wrapper.

  • Fold the right and left edges of the wrapper over the filling and finish rolling up.
