SPLIT PEA SOUP
Thick and hearty, this Split Pea Soup is a creamy old fashioned recipe that's easy to make right on the stove top. Perfect to use up leftover ham and warm you up on a cold day.

Steps:
- Dump split peas into a large bowl. Cover with hot water. Set aside.
- In a large pot over medium heat, melt butter.
- Add onion, carrot, and celery. Cook until vegetables are tender, about 8-10 minutes.
- Add garlic, and cook for an additional 2 minutes, until fragrant.
- Drain split peas and add to pot with ham bone, bay leaves, thyme, chicken stock, and water. Stir to combine.
- Bring soup mixture to a boil. Reduce heat, and simmer uncovered for about 1 hour, stirring occasionally until split peas are cooked down.
- Add diced ham and potato. Stir to combine. Continue simmering for an additional 1 hour, until soup is cooked down to desired consistency and peas are broken down and very soft.
- When ready to serve, remove ham bone and bay leaves. Season with salt and pepper to taste. Serve hot with croutons.

- 1. 1st Evening:.......Put pork hocks in a crock pot, covered with fresh water,cook on low OVERNIGHT.. Next morning:....Remove pork hocks to a platter. When cool remove meat and skin and any fat from the bones. Set meat aside covered in the refrigerator. Strain crockpot broth into a bowl,let cool. Cover and put in the refrigerator, to cool for the next morning. Put peas in a pot with 10 cups of water, cover set aside OVERNIGHT. 2nd morning:....Skim most of the fat from the top of the broth. Leave a little for the great flavor. Drain the peas. # 1.(Picture of Brigham Young)
- 2. Put the strained broth,and drained peas into the crock pot along with onion,celery,carrots, garlic, sugar, thyme,cayenne and 8-10 cups of water. Cook on medium about 3-4 hours. Add the meat.Combine flour and butter to form a roux. Mix with one cup of the soup. Return this to crockpot and heat till thickened. MORMON SPLIT PEA SOUP
This came from an older "American Heritage" cookbook. The small sage flavored meatballs give it quite a different taste!!!

Steps:
- Rinse split peas.
- In a large kettle or dutch oven, combine split peas, cold water, onion, celery, 2 teaspoons salt, marjoram and 1/4 teaspoon black pepper.
- Bring to boiling, cover and simmer until peas are tender (about 1 hour).
- Do not drain.
- Meanwhile, combine ground pork, sage, 3/4 teaspoon salt and 1/8 teaspoon black pepper (mix thoroughly).
- Shape mixture into 24 1-inch balls.
- Drop meatballs and potatoes into soup mixture and return soup to boiling.
- Cover and simmer 20 minutes longer (until potatoes are tender.
- Adjust seasoning to taste.

- In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. SPLIT PEA SOUP
This classic yellow split pea soup has some versatility when it comes to one of the main ingredients: the ham.

Steps:
- In a large Dutch oven, melt the butter over medium heat; add the carrots, celery, onion and garlic, stirring occasionally, until the mixture has softened and golden, around 15 minutes.
- Add the yellow split peas, bay leaves and thyme. Season with salt and pepper, cooking for about 2 minutes to impart flavours into the peas.
- If using a ham bone, trim off any excess fat.
- Add in the ham and chicken stock, then bring up to a boil. Cover and let simmer and medium-low, stirring occasionally, until the soup has thickened, 1.5 to 2 hours.
- Remove bay leaves. If using ham bone or hock, remove and let cool enough to handle to remove the meat, cut it into bite-sized pieces and put it back into the soup.
- Serve with fresh bread rolls.

- Drain the peas and bring to the boil in a pan of salted water. Cook for 10 mins, drain, rinse and put in a slow cooker with the remaining ingredients except the dill. Cover and cook on low for 6-8 hrs, or until everything has softened. Remove and discard the thyme.
- Stir, adjusting the soup with 250-300ml boiled water as needed. Season to taste. Sprinkle over the dill and serve with rye bread, mustard and pickle, if you like.

- In a saucepan simmer peas, basil and bay leaf in the water and broth, partially covered, until peas are tender, about 35 minutes; discard bay leaf.
- Meanwhile, heat oil and saute onion and cuminseed over moderately low heat until onions are golden brown, 35-45 minutes.
- In a blender, puree soup in batches until smooth; return to pan and stir in onions and salt and pepper to taste.
MOM'S SOUTHERN STYLE SPLIT PEA SOUP
This soup's flavor is very different from your traditional pea soup. It is not sweet but has a spicy flavor very different from the 'savory' flavor of most pea soups. I love any pea soup but this one is the one I yearn for. Sometimes I add even more carrot if I think we need more carrots in our diet.

- You may substitute a meaty hambone, diced smoked ham, cut up smoked pork butt, or, if like my husband prefers and no pork is allowed, use smoked turkey.
- Put all ingredients except salt into large heavy-bottomed stock pot.
- Cook over low-med. heat. Stir occasionally.
- Simmer until meat falls off bone and split peas have become mush. Be careful not to burn. Stir more often as soup thickens.
- Remove bone, bay leaves and spices.
- Puree and test for salt. Add salt if needed and cook an additional 15 minutes. Adjust water if necessary.
- The soup should be very thick. It becomes almost paste when cold. You may need to add some water to reheat.
- This soup freezes very well.
- If you leave out the cloves you won't have this special recipe. They are the secret ingredient.
- I'm guessing on servings and amount. it depends on how much you cook it down.
OLD-FASHIONED SPLIT PEA SOUP
This is my own spin on my French-Canadian grandmother's pea soup. It's actually about the same, I just never use green split peas because I don't like the color. Serve with some nice homemade bread and you've got a full meal. You can omit the step where you thicken the soup with a roux, but this stabilizes the soup so that it doesnt separate with time.

- Put split peas and ham hock in a large soup pot. Cover with water and bring to a boil.
- Cover the pot and reduce heat to low. Simmer for two and a half hours.
- Add vegetables and seasonings. Continue to cook for another half hour.
- Remove soup from heat. Remove the ham hock and let it cool. Strip any meat from the hock and finely chop. Add back to the soup.
- Put the soup back on low heat.
- In a small skillet melt the butter over medium heat, and add the flour. Cook for about one minute and add about one ladle full of soup. Cook until it begins to boil and then add the soup. Stir the soup until it thickens.
- Serve with bread.

SPLIT PEA SOUP
This one is simple and inexpensive. My husband liked it a lot. He walked in while it was cooking and said, "Mmm". Normally, he would not touch split pea soup. It's practically vegetarian too--no bacon or ham hocks to touch--and yet still tastes great. Biscuits go really well with this. In fact, I think you need them to make a filling meal.
