EASY SPAGHETTI SQUARES
An old recipe I found in a Treasured Recipe Book.It is easy and always a hit; kids love this and you can make it ahead! Serve with a salad and crusty bread;they will think you slaved all day to prepare this gem. For extra flav I make this with Our Spaghetti Sauce; # 254148. I use one jar.

Steps:
- Break the pasta up.
- Cook pasta according to package directions, drain and set aside.
- Coat a 9 inch pan with non-stick vegetable spray.
- Pour 1/2 the cooked pasta mixture into pan.
- Cover pasta with 1/2 the spaghetti sauce.
- Combine cottage cheese, egg and 1/2 the other cheeses.
- Add to first layer.
- Add remaining pasta,then spaghetti sauce and top with remaining Mozzarella and Parmesan.
- Bake in a preheated 350-degree oven for 45 minutes or until golden brown.
- Remove from oven and let stand for 10 minutes.
- Cut into squares to serve.
- Tip:.
- This dish can be made ahead and frozen.
- You can double or triple this recipe for a crowd.

*SPAGHETTI SQUARES*
I found this from the Kraft Canada website and I tweaked it a bit to suit my tastes. I found the original recipe bland (which some of my family members would love!). The original recipe didn't call for salt and pepper but it really does need some. You may need to season it more when serving.

Steps:
- HEAT oven to 350ºF. Cook spaghetti as directed on package.
- BROWN meat in large nonstick skillet on medium-high heat; drain. Add peppers; cook until tender, stirring occasionally. Stir in pasta sauce. Add jalapeno puree. Add more to taste if necessary.
- DRAIN spaghetti; toss with Romano cheese, margarine and eggs. Season with salt and pepper. Place in greased 13x9-inch pan; top with layers of ricotta cheese, meat mixture and mozzarella cheese.
- BAKE 20 minute or until heated through.

SPAGHETTI SQUASH WITH PEANUT SAUCE

- Microwave 1 halved, seeded spaghetti squash with 2 tablespoons water, covered, until tender, 15 minutes. Cool slightly, then scrape into strands with a fork. Puree 2 tablespoons peanut butter, 1 tablespoon each soy sauce, rice vinegar, lime juice and water, 1 teaspoon grated ginger, 1 garlic clove and 1/4 teaspoon red pepper flakes; toss with the squash. Season with salt. Top with chopped peanuts, mint and cilantro.
BAKED SPAGHETTI SQUASH AND CHICKEN

- Preheat the oven to 375 degrees. With a sharp knife, prick the squash in 2 to 3 places and set it on a baking pan. Bake for 30 minutes. Remove it from the oven, cut it in half lengthwise and scoop out the seeds. Return the squash halves, cut side down, to the baking sheet and bake for another 30 minutes or until tender.
- While the squash is cooking, heat the butter in a medium sized saucepan. Add the flour and cook for 1 minute, stirring continuously. Add the garlic, broth and bring the mixture to a boil, whisking all the while. Add the chicken and simmer, uncovered, for 3 to 5 minutes or until chicken is cooked through. Remove from the heat and stir in the milk or heavy cream. Season with 1 teaspoon of salt and pepper to taste; set aside and reheat over low heat when you remove the squash from the oven.
- Remove the squash from the oven. With a fork rake the squash until it separates fully into strands and only the shell remains. Transfer the strands to pasta bowls. Remove the chicken sauce from the heat, stir in the cheese and parsley or basil and adjust the seasoning. Serve the sauce over the strands of squash.
VELVEETA BAKED SPAGHETTI SQUARES
We're convinced there aren't many savory dishes that VELVEETA can't improve. Case in point: these fabulously cheesy baked spaghetti squares.

- Heat oven to 350°F. Beat eggs and milk in large bowl with whisk until well blended. Add all remaining ingredients except sauce; toss to evenly coat.
- Spoon into 13x9-inch baking dish sprayed with cooking spray; press onto bottom of dish with back of spoon.
- Bake 30 to 35 min. or until heated through. Cut into squares; serve topped with sauce.

PROPERLY PREPARED SPAGHETTI SQUASH
This recipe can be substituted in ANY pasta sauce or recipe, and it can be eaten hot or cold. Very versatile main or side dish - and very hard to screw up.

- Preheat oven to 350-375.
- Halve raw spaghetti squash with a sturdy sharp knife, scoop out, and discard the squash poop with a spoon.
- Place halves onto an oven safe cooking dish face up.
- Clean head of garlic and thinly slice garlic, (the larger pieces of garlic brown nicely, and offer a wonderful layer of complexity to the dish).
- Spread garlic into the bowl like shape of the squash, salt and pepper vigorously, drizzle with a 50/50 mixture of olive oil, and vegetable oil (get the oil everywhere inside the squash).
- Place onto the upper middle rack of the oven for about 30-40 minutes. (You will know it is ready when the squash separates with little resistance from the skin).
- Remove from oven, and place in coldest location possible for at least 20 minutes, before separating from skin.
- Use a fork to scoop and separate squash strands, add any other ingredients you like at this point.
- Parmesan, Romano, or Pecorino, Feta, are all excellent additions to this dish, as well as, meat, sausage, veggies, olives, the list is endless.
- WARNING **** If you use a loose tomato based sauce DO NOT add it immediately to the squash; this makes the squash runny, mushy, and unpalatable. Instead garnish the dish with a little bit of sauce atop the squash, and then offer more sauce on the side, in a separate dish.
- If you ever had it served this way you know what I mean.
- You can also take any leftovers and add a little bit of flour, and make into patties and fry.

TOMATO-BASIL SPAGHETTI SQUARES
Steps:
- Heat oven to 350ºF.
- Cook spaghetti in large saucepan as directed on package, omitting salt. Meanwhile, brown meat with peppers and onions in large nonstick skillet; drain. Stir in 1-1/2 cups pasta sauce.
- Whisk Neufchatel, remaining pasta sauce and milk until smooth; set aside. Drain spaghetti; return to pan. Add half the Neufchatel mixture and Parmesan; toss to coat. Place in 8-inch square baking dish sprayed with cooking spray; press onto bottom of dish with back of spatula. Cover with layers of remaining Neufchatel mixture and meat sauce.
- Bake 25 min. or until heated through. Top with mozzarella; bake 5 to 10 min. or until melted.
