Steps:
- Peel and devein shrimp.
- Sprinkle with lemon juice and set aside.
- Melt butter in large skillet.
- Saute garlic, green onion tops and tomato wedges.
- Add shrimp and season with oregano, salt and pepper to taste.
- Turn shrimp frequently and saute until pink.
- Add feta cheese and cream sherry.
- Bring to boil and cook 3 to 4 minutes.
- Remove shrimp carefully to casserole.
- Spoon cheese-sherry mixture over shrimp.

SHRIMP IN LEMON SAUCE: GARIDES AVGOLEMENO
Steps:
- Marinate the shrimp in the olive oil, oregano, and garlic 30 minutes
- Preheat a grill. Preheat an oven to 450 degrees F.
- Slide 4 shrimp onto each skewer. Place on a hot grill and mark on both sides quickly, not cooking them through. Put them in a baking dish and pour the fish broth over the shrimp with the tomatoes and place in the oven for about 4 minutes.
- Remove from the oven, take the shrimp out of the baking dish, and place on a platter.
- In a bowl whisk together the eggs and lemon juice. Slowly pour in the fish broth with the tomatoes and incorporate it until foamy. Season with salt and pepper. Pour it over the shrimp and sprinkle with parsley. Serve warm, as an appetizer.

Steps:
- Preheat oven to 450°F.
- In a skillet, over medium heat, cook the onion in the olive oil until soft and golden.
- Add the garlic, tomato sauce, wine, half the parsley, salt and pepper to taste and the cayenne.
- Cook at a simmer, uncovered, for 15 minutes, stirring frequently (the sauce should be rather thick).
- Meanwhile, peel and devein shrimp.
- Put shrimp, sauce and cheese in a shallow baking dish, cover and bake in the oven for 8 to 10 minutes.
- Sprinkle with remaining parsley and serve hot.

GREEK SHRIMP DISH FROM SANTORINI
An authentic Greek entree that is easy to make and makes you feel like you are in the Greek islands. My sister and I originally ate this dish at a restaurant in Santorini, Greece and went back 3 days in a row to order it again and analyze the ingredients so we could replicate it at home. It is easy to prepare ahead of time and stick in the oven so your cooking is complete before guests arrive! Serve over rice.

- Melt the butter in a saucepan over medium heat. Stir in the garlic, chopped parsley, tomatoes, and wine. Bring to a simmer, then reduce heat to medium-low, and cook for 1 hour, stirring occasionally, until the sauce has slightly thickened.
- Preheat oven to 250 degrees F (120 degrees C).
- Stir the shrimp into the tomato sauce, and cook for 2 minutes; remove from the heat. Pour the shrimp mixture into a shallow baking dish, and sprinkle with crumbled feta cheese. Bake in the preheated oven until the feta has softened and the shrimp are no longer translucent, 45 minutes to 1 hour. Squeeze the lemon halves over the shrimp and garnish with the parsley sprigs to serve.
