- Rinse and dry potatoes with a paper towel and transfer to a large bowl. Add olive oil, seasoned salt, salt, and black pepper; mix well. Spread potatoes on a baking sheet.

OVEN-ROASTED POTATOES
Steps:
- Heat the oven to 375 degrees F.
- Cut the Peruvian potatoes in half or in quarters, about the same size as the small new potatoes. Do the same for the red bliss potatoes. Place all potatoes, garlic cloves, shallot quarters and rosemary sprigs on a baking sheet. Season well with salt and pepper and drizzle oil on top. Toss all to combine and coat in oil.
- Place the potatoes in the oven and roast for about 30 to 40 minutes, shaking the baking sheet occasionally, until the potatoes are nicely browned and fork tender and the garlic cloves and shallots are caramelized.
- Remove rosemary sprigs and serve immediately.

I created this recipe by accident. After already starting dinner one night I realized I didn't have enough potatoes on hand to make mashed, so I improvised and came up with these baked potato slices. - Preheat oven to 450 degrees. Cover potatoes with water by 2 inches in a medium pot. Bring to a boil, season with salt, and reduce heat to a rapid simmer. Cook until potatoes are tender when pierced with a fork, about 20 minutes; drain. Gently smash each potato until slightly flattened but still in one piece (edges will split).
- Brush a rimmed baking sheet with 1 tablespoon oil. Place potatoes on sheet in a single layer and brush tops with remaining 1 tablespoon oil. Bake until golden brown and crisp, flipping once, about 25 minutes. Remove from oven, season with salt, and serve.
SLICED BAKED POTATOES

- Peel potatoes only if the skin is tough, otherwise, just scrub and rinse them.
- Cut potatoes vertically, into thin slices, but not all the way through. Lay a spoon next to the potato to prevent knife from cutting all the way through. (A wooden spoon works great.).
- Put potatoes in a baking dish. Fan them slightly.
- Sprinkle with salt, and drizzle with the melted butter. Sprinkle with herbs.
- Bake potatoes at 425 degrees for about 50 minutes.
- Remove from oven. Sprinkle with cheeses.
- Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
- To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
- Sprinkle with melted butter and herbs.
- Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
- Let rest for 5 minutes.
- Sprinkle with grated cheese and Parmesan cheese.
- Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.
- Sprinkle with salt, and serve.
- Note: You may substitute 2-3 teaspoons dried herbs of your choice for the fresh, if you prefer.
- After the potatoes are done, a little sour cream on top, sprinkled with bacon bits might be good.

- Slice potatoes in half lengthwise and pierce the meat using a fork or knife. Preheat oven to 350 degrees. - Prepare a fire and let the charcoal burn down to a bed of embers, coals, and ashes for rescoldo. If cooking indoors, preheat the oven to 375°F (190°C).
- Bury the sweet potatoes in the embers, coals, and ashes, making sure they are completely and evenly covered. Roast until they are tender all the way through. If cooking indoors, arrange the sweet potatoes on a sheet pan and roast for about 45 minutes, or until tender all the way through. The cooking time will vary depending on the size of the sweet potatoes: after about 20 minutes, part the embers with long-handled tongs and try to pierce a sweet potato all the way through with a long bamboo skewer. It will probably meet with some resistance toward the center and feel about half baked.
