SPLIT-SECOND COOKIES
I love baking cookies, and this is a recipe I've used for many Christmases over the years. Raspberry jam makes these cookies flavorful and colorful.

- Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture. , Divide dough into four portions; shape each into a 12x3/4-in. log. Place 4 in. apart on two greased baking sheets. Make a 1/2-in. depression down center of each log; fill with jam., Bake until lightly browned, 15-20 minutes. Cool 2 minutes. Cut diagonally into 3/4-in. slices. Remove from pans to wire racks to continue cooling.

Steps:
- Sift together flour, sugar, salt and baking powder.
- Cut in butter, unbeaten egg and vanilla.
- Form into dough. Place on lightly floured board.
- Divide into 4 equal parts. Shape into rolls 13" long x 3/4" thick. Place on ungreased cookie sheet 4" apart and 3" from edge.
- Make a depression with handle of knife about 1/3" deep lengthwise and down the center of each.
- Fill with red jelly or jam.
- Bake at 350° for 15-20 minutes.
- While warm, slice diagonally.

SPLIT - SECOND COOKIES
Super easy and quick to make. I think this came from a TOH insert. I have made these cookies alot sice I first got this recipe. They are easy to make just form into logs and slice after baking. And you get 40- 50 cookies depending on how big a slice you cut. You can use any jam of your coice.

- In a mixing bowl cream butter and sugar.
- Add eggs and vanilla, mix well.
- Combine flour, baking powder and salt; gradually add to creamed mixture and mix well.

This cookie recipe has been in my mother's family for more years than I've been alive. It's my favorite cookie; my comfort food!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- In a medium bowl, cream together the butter, white sugar and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 1 inch balls. If dough is too soft, refrigerate for 15 to 20 minutes. Place balls 2 inches apart onto ungreased cookie sheets. Use your finger or an instrument of similar size to make a well in the center of each cookie. Fill the hole with 1/2 teaspoon of preserves.
- Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool on wire racks.

These are so delicious. I love the taste of raspberry jam in these. The kids go nuts over them. the secret to the chewiness in the cookie, is the syrup.

Steps:
- Mix in order.
- Chill dough in fridge for about half an hour, as they roll out easier that way.
- Roll out and cut cookies in circles.
- Put one piece of dough down on cookie sheet, place a 1/2 teaspoons of jam on, and then cover up with another circle of dough on top, sealing edges.
- Bake about 15 minutes in a 350° oven until golden brown.
- Yields about 24 cookies.

- Heat oven to 190C/fan 170C/gas 5. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs. Alternatively, you can do this in the food processor. Add enough egg to bring the mixture together to form a stiff dough.
- Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices and place on a large baking sheet. Space them out as the mixture will spread when baking.
- Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the centre. Bake for 10-15 mins until slightly risen and just golden. Cool on a wire rack.

Steps:
- Mix exactly 2 cups crushed strawberries and 1/2 cup mashed bananas in large bowl.
- Stir in sugar and lemon juice; let stand 10 minutes, stirring occasionally.
- Add chocolate syrup; mix well.
- Mix water and pectin in small saucepan.
- Bring to boil on high heat, stirring constantly.
- Continue boiling and stirring 1 minute.
- Add to fruit mixture; stir 3 minutes or until sugar is dissolved and no longer grainy.
- (A few sugar crystals may remain.) Fill clean plastic containers immediately to within 1/2 inch of tops.
- Wipe off top edges of containers; immediately cover with lids.
- Let stand at room temperature 24 hours.
- Jam is now ready to use.
- Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year.
- Thaw in refrigerator before using.

- Preheat the oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper for easier cleanup later, or you can just use an ungreased cookie sheet.
- Cream the butter and sugar together in a large bowl until light and fluffy using a standing mixer with a paddle attachment or a hand mixer. You can even make this batter by hand, but you will have to beat it for a long time.
