BROOKVILLE SWEET & SOUR COLESLAW
From the old Brookville Hotel restaurant in Kansas, famous for their fried chicken, slaw, and creamed corn, all served family style. (The creamed corn is recipe #44906) This was the recipe that finally got me to eat cole slaw; everything else on their table was so good I decided to take a chance and was hooked forever! Cook time does not include initial chilling of cabbage & total servings vary depending on serving size.

- Cover shredded cabbage and refrigerate several hours or until well chilled.
- 30 min before serving time, mix ingredients in order given.
- Chill and serve.
FAMOUS DAVE'S CREAMY SWEET & SOUR COLESLAW
This is one of the only times I ever use Miracle Whip (We are a Hellman's/Best Foods Family.) We just love a good coleslaw and there are a lot of different variations. This particular recipe is from Famous Dave's and one of our favorites.

- Toss the cabbage and carrot in a bowl.
- Mix salad dressing, sugar, horseradish, dry mustard, white pepper, salt, garlic power and celery seeds in a bowl.
- Add to the cabbage mixture and mix well. Chill, covered, until serving time.

- In a large bowl, combine the cabbage, carrots, celery, green pepper and onion. In a jar with a tight-fitting lid, combine the vinegar, oil, sugar, salt, pepper and paprika; shake well. Pour over cabbage mixture and toss to coat. Cover and refrigerate until serving.

SWEET & SOUR COLESLAW
This is a great receipe which can be made a few days ahead of time. I always bring it to our family reunion picnic every year and it is always a hit. For best results do make it at least 24 hours ahead to allow the flavours to penetrate and soften the vegetables.

- Shred or chop all vegetables finely. I use a sharp knife and chop by hand
- first removing the hard core from the cabbage (dispose).Place all vegetables in a large bowl.
- For dressing, mix all remaing ingredients in saucepan and boil for 2-3 minutes.Pour over vegetables, cover and place in fridge.Let set at least 24 hours. Keeps for 2-3 weeks in coverd container or jar in fridge.

Clipped this from a magazine from Eat Smart by Jean Carpenter who says " the ultimate in simplicity and refreshing taste, this coleslaw is flecked with green, red and yellow vegetables, the colors signifying the presence of antioxidants (cabbage is thought to have anti-cancer activity). This is a crispy salad. I may have ripped this from a diabetic magazine.
