Steps:
- Put the sweet potatoes in a large bowl, cover with cling film and microwave on High for 8 mins or until soft.
- Meanwhile, heat the oil in a large pan, add the chopped onion and cook for a few mins to soften. Stir in the ginger, garlic, chilli (if using) and coriander stalks, stirring for a couple mins more until fragrant (the garlic will burn easily, so keep an eye on it). Add the curry paste and half the black onion seeds to the pan, stir for 30 secs or so until fragrant, then add the spinach and 2-3 tbsp water. Cook the spinach until wilted, then add the sweet potato and any liquid from the bowl. Season well and mash everything together with the back of a spoon, leaving some chunky bits of potato. Leave to cool completely.
- Unroll the pastry and pull out two sheets to work with - keep the rest covered with a tea towel to prevent it from drying out. Brush both sheets with a little oil and scatter some of the black onion seeds over one sheet. Put the other sheet on top. With the shortest side facing you, cut down the centre to make two long strips. Scoop a sixth of the sweet potato mixture onto the top right-hand corner of the filo in a rough triangle shape. Fold the pastry over on an angle, continuing down the length of the pastry until you reach the bottom and have a neat triangle encasing the filling. Trim off any excess pastry with a knife. Repeat to make six samosas. Heat oven to 200C/180C fan/gas 6.
- Put the samosas on a baking tray lined with baking parchment. Brush with a little more oil and sprinkle over the remaining black onion seeds. Bake for 25-30 mins or until deep golden brown. Meanwhile, peel the cucumber into ribbons, then toss with the sliced onions and coriander leaves. To serve, dollop some yogurt onto each plate, top with two samosas, a mound of the cucumber salad and mango chutney.

- To make the dough: Mix the salt and flour in a medium bowl or a food processor. With a pastry blender, incorporate the butter until crumbs have formed. Add the water a few tablespoons at a time, until you can form a ball. Knead the dough for about 5 minutes. Let it rest for about 15 minutes more. You can prepare the dough in advance and refrigerate it.
- To make the filling: Boil the potatoes until tender. Drain and set aside.
- If using fresh carrots, chop and simmer in water, to cover, in a small pot. Add the corn and peas to barely cook. Set aside to cool.
- Heat the oil in a pan and fry the onion until golden. Add the garlic, ginger, and chile and cook for 2 minutes. Add the garam masala, turmeric, chile powder, and salt and cook 2 minutes more.
- In a bowl combine the mashed potatoes, the onion and spice mixture, carrots, peas, corn, lemon juice, and chopped coriander. Mix well.
- To assemble the samosas: Divide the dough into 9 equal size balls. On a floured surface, roll each ball into a 5-inch circle. Cut each circle in half.
- Brush the straightedge side with a little water, fold it in half, and align the two straight sides so they overlap to form a cone shape. Squeeze the edges together to make a tight seal. Place approximately 1 generous tablespoon of filling inside each cone, leaving the top edge clean. Moisten the inside top rim of the cone and press the edges together to make another tight seal. Place the samosas on a tray until ready to fry. Repeat with the remaining dough and filling.
- Heat approximately 3 inches of vegetable oil in a deep saucepan. Fry several samosas at a time, being careful not to crowd them. When 1 side turns golden brown, flip it over to brown on the other side. Drain on paper towels. Serve with chutney.

- Heat olive oil in a large nonstick skillet over medium heat. Cut sweet potatoes into cubes; cook, stirring, until starting to soften, 8 to 10 minutes.
- Add curry powder. Cook 1 minute. Add water and chopped red onion. Cook, stirring, until water evaporates and potatoes are tender and browned, about 10 minutes. Transfer to a bowl.
- In the same skillet, cook spinach in 2 batches, adding second batch when first wilts, 2 minutes. Drain; add to potatoes.

- Start by preparing the filling. In a pot filled with water, cook the sweet potato cubes until they are soft, around 8 minutes. Drain the water and let the potato cubes cool down.
- Mash the potatoes coarsely, using a fork or a potato masher, and add the peas to it. Give it a good mix.
- In a pan, add the oil, and heat it on low heat. Add the turmeric powder, chaat masala, garlic powder, red chili flakes, cumin powder, ginger and saute this for a minute.
- Turn off the heat and add the potato-pea mixture.
- Add salt to season.
- Give the mixture a good stir, so that all the ingredients are well distributed.
- Pre-heat your oven to 180 C or 350 F.
- Roll out your puff pastry sheet and cut out equal-sized squares.
- Place a heaped tablespoon of the filling into each square and fold the side over, forming a triangle.
- Press down the sides, sealing in the filling.
- Using a pastry brush, brush a little egg wash on the puff pastry.
- Transfer the sealed samosas parcels onto a parchment-lined baking sheet and bake it at 180 C (350 F) for 10-15 minutes, until the puff pastry is golden and baked through.
- Serve your samosas with chutney or relish of your choice.

SPINACH AND POTATO PHYLLO SAMOSAS

- Stack the thawed phyllo pastry between 2 sheets of waxed paper, cover with a damp kitchen towel, and set aside.
- Simmer the potatoes in salted water until just tender, about 12 minutes, then drain and cut into 1/4-inch cubes.
- Set the potatoes aside.
- Heat a heavy skillet over moderate heat, and then add the fennel seeds, cumin, and turmeric.
- Dry roast the spices for about 2 minutes, stirring occasionally, and taking care not to burn them.
- When the spices are fragrant and darker in colour, add the oil, onion, chilies, gingerroot, and garlic, and cook, stirring, until the onion is softened.
- Now add the potatoes and spinach to the skillet and sauté over moderately high heat, stirring, until spinach is wilted but still bright green, about 2 minutes.
- Season to your taste with salt and pepper, then set aside to cool.
- Heat oven to 400F and lightly grease a baking sheet.
- To assemble samosas, place a sheet of phyllo dough on a flat surface with the long side facing you, and brush lightly with melted butter.
- Top with a second phyllo sheet and brush that lightly with butter also.
- Cut the stacked phyllo crosswise into 5 strips, each approximately 12" by 3 1/2" inches.
- Put 1 heaping teaspoon of potato/spinach filling near one corner of each strip.
- Fold the corner of phyllo over to enclose filling and form a triangle.
- Continue folding the pastry strip, maintaining a triangle shape.
- Place samosa, seam side down, on a baking sheet and cover with plastic wrap.
- Continue making the samosas with the remaining phyllo and filling in the same manner.
- You can prepare the samosas up to this point, six hours ahead of cooking - keep them covered, in the refrigerator.
- Bake the samosas in middle of oven until golden brown, about 10 minutes.
- Garnish samosas with mint and serve warm with mint chutney.

- Thaw the samosa sheets on the kitchen counter while you prepare the samosa filling.
- To a wok/ pan, add 1 tbsp oil and heat on flow flame. Add grated ginger, chopped green chillies and cook for a few seconds. Add peas and cook for 1 minutes. Add coriander powder, chilli powder, salt, cumin powder and mix well until peas are well coated with the spices. Keep aside to cool for about 4-5 minutes. To a large bowl, add mashed or grated sweet potato and add the cooled down pea-mixture. Mix well.
- Shape the samosas by adding 1 1/2 tbsp of filling to each samosa sheet. For tips on how to shape samosa, click here.
- To a large wok, add oil and leat heat until very hot. Now add samosas one by one (3-4 at a time) and cook on medium low flame for about 3-4 minutes (turn in between) until they are brown, golden and crispy. Transfer to serving dish and serve with homemade coriander chutney.

Steps:
- Instructions * Place a pot over high heat.* Add the ground pork and water stirring frequently.* Chop the onion and stir well to combine well and let it simmer until it's cooked.* Meanwhile wash the spinach and bring to the boil for approximately 10 minutes* Remove the ground pork from heat add the boiled spinach* Add the curry powder, salt and pepper of your desire.* Set it aside for 30 minutes so it can cool.* In your working surface place the phyllo dough sheets and cut into stripes.* Place 2 strips, one over the other.* Add 1 tsp of the filling on the edge and fold diagonally so that you creat a triangular shape. Brush the edge with corn flour paste so that it can stick together. Follow the same process until all phyllo sheets and the filling are done. Cooking Method 1: Fry samosas: Heat oil in frying pan or saucepan so that is covers the bottom of the samosas. Cook the samosas in batches until golden on both sides. Transfer immediately to a paper-towel and pat dry. Best served immediately but also good warmed up later! Serve with lemon juice and slices. Cooking Method 2: Bake the samosas: Bake at 180, for 20 minutes or until golden brown.

- In a large frying pan add the olive oil and heat for 1 minute.
- Combine all the ingredients for the samosa filling into a frying pan (excluding the tortillas).
- Cook over low heat for 5-7 mins, while continuously stirring and blending the ingredients together.

- Cut the flour tortillas into long strips.

- In a mixing bowl, combine the cream cheese, feta cheese, spinach, garlic, salt and pepper. Mix until full incorporated. A couple of things to note: make sure the cream cheese is at room temperature so that it is easier to mix it. Also, all excess water should be squeezed out from the spinach.
- Preheat oven to 400 F / 200 C and prepare a baking sheet by lightly greasing it with oil. Set aside.
- Place a samosa pastry strip vertically on a plate / tray, and start by adding about 1-2 teaspoons of the spinach cheese on the bottom corner.
