12 hard-boiled eggs, peeled
1 (3 ounce) package cream cheese, softened
1/3 cup grated parmesan cheese
1/3 cup sour cream
2 tablespoons chopped green onions
1/2 teaspoon seasoning salt
1/8 teaspoon cayenne pepper
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
fresh chives, chopped,for garnish (optional)

Steps:

  • Cut eggs in half lengthwise; remove yolks and reserve.
  • Blend together cream cheese, Parmesan cheese, sour cream, green onions, reserved yolks, seasoned salt and pepper; stir in spinach and mix well.
  • Spoon or pipe into egg white halves and garnish with chives.
  • Cover and refrigerate until firm, about 1 hour; serve cold.

5 ounces frozen chopped spinach, cooked, cooled, drained and squeezed dry, finely chopped
12 hardboiled egg, peeled and cut in half
1/2 cup parmesan cheese
1/8 teaspoon nutmeg
1/4 cup milk
1/4 cup mayonnaise
pepper, to suit taste

Steps:

  • Remove yolks from the eggs and mash, Combine with the finely chopped spinach, cheese, nutmeg,dash of pepper Stir in the milk& mayo, mix well.
  • Spoon a well rounded tbsp of the mixture into each half egg, cover& chill until serving (up to 24 hours).

This is something that my Nee used to cook as a quick side dish. Don't be afraid, it really is a good dish despite the weird combination of ingredients.

1/2 cup onion, chopped
1 (16 ounce) package frozen spinach
2 tablespoons butter
1/4 cup water
2 eggs
seasoning salt

Steps:

  • In a large skillet, saute your onion in the butter until translucent.
  • Dump the frozen spinach into the skillet with the onion and add the 1/4 cup water. Cover and cook on medium heat, stirring occasionally to keep the spinach from sticking.
  • Once the spinach is wilted and appears done, pour in the 2 eggs which have been whisked well.
  • Stir continually until the egg turns white and the spinach appears "dry", but make sure not to overcook.
  • Sprinkle with seasoned salt (to taste) immediately before serving.

Jumbo pasta shells stuffed with ricotta cheese and baked in tomato sauce is a comforting classic. For this version, add in loads of cooked greens to the filling to add a fresh and colorful vegetable component, without skimping on the oozy cheese.

1/4 cup extra-virgin olive oil
6 cloves garlic, thinly sliced
2 28-ounce cans San Marzano tomatoes, crushed by hand
1 teaspoon dried oregano
Pinch of red pepper flakes, plus more for topping
Kosher salt and freshly ground pepper

9 ounces jumbo pasta shells (30 to 34 shells)
1 tablespoon extra-virgin olive oil
1 8-ounce bag fresh spinach
2 cups ricotta cheese
2 cups shredded low-moisture mozzarella cheese
1/3 cup finely chopped fresh parsley
1/4 cup grated Parmesan cheese, plus more for topping
2 teaspoons finely grated lemon zest
1 large egg, beaten
Freshly ground pepper

Steps:

  • Make the sauce: Heat the olive oil in a large wide pot over medium-high heat. Add the garlic and cook until golden brown, about 2 minutes. Add the tomatoes, oregano, red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper. Bring to a boil, then reduce the heat to a simmer. Cook, stirring, until thickened, 15 to 20 minutes; season with salt. (You should have about 4 heaping cups of sauce.)
  • Make the stuffed shells: Preheat the oven to 375˚ F. Bring a large pot of salted water to a boil. Add the pasta shells and cook as the label directs for baking, about 9 minutes. Rinse under cold water to stop the cooking. Spread out on a baking sheet.
  • Heat the olive oil in a large skillet over medium-high heat. Add the spinach and cook, tossing occasionally, until wilted, 2 to 3 minutes. Remove to a large plate lined with a kitchen towel. Squeeze to remove any excess liquid, then finely chop.
  • Put the spinach in a large bowl and add the ricotta, mozzarella, parsley, Parmesan, lemon zest, beaten egg, 1/2 teaspoon salt and 1 teaspoon pepper. Stir until combined.
  • To assemble, spread about half of the sauce in the bottom of a 10-by-14-inch baking dish. Evenly fill the shells with the spinach-ricotta mixture using a spoon, or pipe it in using a pastry bag. Arrange the shells side by side, open-side up, in the baking dish on top of the sauce, then top with the remaining sauce.
  • Cover the dish with foil and bake until heated through and the sauce is simmering around the edges, about 30 minutes. Remove the foil and bake until any shells or cheese poking through the sauce are lightly browned in spots, about 10 more minutes. Let sit 10 minutes. Top with more Parmesan and red pepper flakes.

3 bunches flat-leaf spinach (10 1/2 cups), stems removed

1 cup packed fresh cilantro
4 large eggs
2 cups cooked quinoa, warmed

Steps:

  • In a straight-sided skillet, heat 2 inches water over medium to a gentle simmer until a few bubbles break the surface.
  • Meanwhile, in a large skillet, heat oil over medium-high. Add spinach to pan and toss until slightly wilted. Season with salt and pepper. Cover and cook 1 minute. Add 3/4 cup cilantro, then transfer to a colander and press excess liquid from greens.
  • Crack 1 egg into a small bowl and gently tip into simmering water. Repeat with remaining 3 eggs. Cook until whites are set and yolks are runny, 2 to 3 minutes. With a slotted spoon, transfer to a plate lined with paper towels to drain. Divide quinoa, spinach, and eggs among 4 bowls, and season with salt and pepper. Sprinkle with remaining 1/4 cup cilantro, and drizzle with olive oil to serve.

100g bag spinach
400g can chopped tomatoes
1 tsp chilli flakes
4 eggs

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the spinach into a colander, then pour over a kettle of boiling water to wilt the leaves. Squeeze out excess water and divide between 4 small ovenproof dishes.
  • Mix the tomatoes with the chilli flakes and some seasoning, then add to the dishes with the spinach. Make a small well in the centre of each and crack in an egg. Bake for 12-15 mins or more depending on how you like your eggs. Serve with crusty bread, if you like.
