Steps:
- Brush the bottom and sides of a 13x9-in. baking dish with 1 tablespoon butter; set aside. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining butter. Stir in the spinach, cheeses and onion. Spread in prepared pan. , Bake, uncovered, at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean and edges are lightly browned. Cut into squares. Garnish with pimientos if desired.

KETO SPINACH SQUARES
Keto spinach squares. This is a great breakfast recipe for those on a low-carb or keto diet.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Place butter in a 9x13-inch baking pan, and put in the oven to melt while preheating.
- Beat eggs in a medium bowl. Combine flour, baking powder, nutmeg, and salt in another bowl.
- Add flour mixture to the eggs alternating with the almond milk. Stir in spinach and Monterey Jack cheese. Pour into the melted butter in the baking pan.
- Bake in the preheated oven until set, 35 to 40 minutes.
- Remove from the oven and allow to cool for 45 minutes before cutting into 10 squares.

This recipe is a favorite at every Christmas party. Note: This recipe freezes well. To serve, defrost and reheat at 325 degrees F (165 degrees C) for 12 to 15 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.
- In large mixing bowl, beat eggs well. Mix in flour, milk and baking powder. When the dough is well combined, mix in cheese, spinach, and onion. Spoon mixture into the baking dish with melted butter.
- Bake for 35 minutes. Let cool 45 minutes then cut into bite-size squares.

SPINACH SUPREME
This recipe comes from Pampered Chef's "Recipes From the Heart" fundraiser cookbook. I don't know if they make the book anymore, but I keep losing this recipe (lost my book years ago) so I am posting it here for safe keeping. Luckily, my mom still has her copy of the recipe. My kids LOVE it when I make it creamier, add artichokes, and serve it with tortilla chips. Makes a great spinach-artichoke dip.

- Preheat oven to 300.
- In Small skillet melt butter over medium heat.
- Add crumbs.
- Cook and Stir until light and browned.
- Set aside.
- In medium bowl, combine spinach, 1 Celsius cheese, sour cream, and soup mix.
- Pour into greased 11x7 baking dish.
- Sprinkle with ½ Celsius cheese and top with browned crumbs.
- Bake 45 minutes or until cheese is lightly browned and bubbly.

- Cook spinach according to package instructions and drain.
- Preheat oven to 350.
- Melt butter in a 9x13" baking pan (don't let it burn).
- Remove from oven.
- Combine remaining ingredients with spinach and mix well.
- Turn into pan with melted butter, stirring in butter and spreading evenly.
- Bake 30 minutes.
- Cool 5 minutes.
