CLAM BISQUE

Clam Bisque image

This rich, velvety bisque has been a centerpiece presentation for special meals. I've been making it since 1972 and cannot remember how I came up with it other than needing to use an overabundance of cream from my neighboring farmer.

Provided by Judith Sheppard

Categories     Cream Soups

Time 40m

Number Of Ingredients 9

8 Tbsp salted butter
1/2 c finely minced sweet onion
8 Tbsp flour
8 can(s) minced clams
8 bottle clam juice
1/4 can(s) freshly squeezed lemon juice
2 qt 1/2 and 1/2 (really daring? try some heavy cream)
salt and white pepper to taste
freshly minced parsley

Steps:

  • 1. Saute onions until just translucent (do not brown) in 6 tablespoons butter. Stir flour in until mixed, but do not brown.
  • 2. Stirring slowly, add the clam juice. When thickened, add the lemon juice, then the cream. Bring it to a simmer over low heat stirring occasionally.
  • 3. Add the clams to the warm bisque and stir occasionally to avoid scalding on the bottom. You add the clams last to just heat them through or otherwise clams can become tough and chewy. Before serving, stir in the remaining butter. Garnish the soup with bright green parsley.

PIPI SOUP (NZ CLAM CHOWDER)

Pipi Soup (Nz Clam Chowder) image

Pipi chowder is similar to a milk-based clam chowder, it is made with surf clams that are small clam from NZ, so if you can't get surf clams, get another small type. I really like it with the basil but some of the people I have made it before didn't like it, so if you haven't had a clam chower with basil before, maybe you shoud just take a bit out and add some basil and try it that way first. Based on this recipe: http://australianfood.about.com/od/pacificislandpolynesian/r/PipiSoup.htm

Categories     Chowders

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 11

20 -25 surf clams, rinsed in cold water
1 medium white onion, diced
2 garlic cloves, finely chopped
1 tablespoon of finely chopped flat leaf parsley
1 tablespoon of finely chopped sweet basil
4 -5 young potatoes, diced
1/4 sea salt
1 tablespoon flour, dissolved in 2 Tbsp of cold water
1 tablespoon sherry wine
700 ml milk
1 tablespoon butter

Steps:

  • In a steamer or a stock pot, steam the clams in 1/2 cup of water for 5 minutes or until opened.
  • Remove clams from pot and reserve liquid for the soup.
  • Remove the clam meat from shells and chop roughly.
  • Discard shells and set clam meat aside.
  • In a stock pot, saute the onion in butter on a low heat for 5 minutes or until translucent.
  • Add the garlic and fry for 1 minute. Add the parsley and continue to fry for another minute.
  • Turn up the heat and add the sherry.
  • Let the alcohol evaporate --this will take about 1 minute.
  • Then add the clam liquid and salt. Stir again and simmer for 3 minutes.
  • Add the milk and diced potatoes. Simmer for 10 minutes.
  • Now add the flour/water mixture and stir well to thicken.
  • After about 5 minutes, or just before serving, add the chopped clams to the soup, don't do this too early so that you don't overcook them.
  • Add the chopped basil and stir well. Taste the soup and add more salt if it's needed.
  • Serve soup with a piece of garlic buttered toast.

YAM AND CLAM BISQUE

Yam and Clam Bisque image

DH had sampled a sweet potato and chorizo soup that he thought interesting. That soup inspired him to create the Yam and Clam Bisque which marries the sweetness of yam, with the brininess of clam, and the smokiness of bacon.

Time 35m

Yield 6 serving(s)

Number Of Ingredients 14

1 teaspoon olive oil
1 slice smoked bacon (your favorite will do)
3/4 cup onion, diced
1/4 cup celery, diced
1 garlic clove, minced
1 pinch salt and black pepper
1/4 cup white wine
3 cups yams, peeled and cubed (red skinned sweet potatoes)
1 cup potato, peeled and cubed (about 1 small)
16 ounces clam juice
1 dash Tabasco sauce (optional)
1/4 teaspoon salt
1/2 cup half-and-half
1 (10 ounce) can baby clams, drained

Steps:

  • In a three-quart saucepan, heat the oil over medium heat.
  • Add the bacon and cook until crisp and the fat is rendered, about 5-6 minutes.
  • Remove bacon from pot, drain and set aside.
  • With about 1 tablespoon of drippings, add onion, celery, and pinch of salt and pepper to the pot and sauté over medium heat until the onion is tender, about 4-5 minutes.
  • Add the garlic and sauté one minute longer.
  • Add the wine and deglaze the pan, reduce liquid to half, about one minute.
  • Add the yams and white potatoes and clam juice to the pot.
  • Add salt and optional Tabasco.
  • Bring pot to boil, reduce heat, cover and simmer until potatoes are soft-tender, about 15 minutes.
  • Remove pot from heat.
  • Puree soup in a food processor in two batches or use an immersion blender. Process until smooth. Soup should be quite thick at this point.
  • Add the half and half and clams. If soup is still too thick, add additional half and half or milk until it is your desired consistency.
  • Reheat soup but do not boil.
  • Correct seasoning. Additional salt may be required. A pinch of sugar may be necessary depending on the sweetness of your yams.
  • Garnish with crumbled reserved bacon.

BC FERRIES MANHATTAN CLAM CHOWDER

Bc Ferries Manhattan Clam Chowder image

This is from a free recipe card that they used to give out on the BC ferries. It is a tomato based chowder and is very good. The recipe calls for clam nectar but the recipe zaar software changes it to clam juice. I'm pretty sure it's the same but you never know.

B C FERRIES MANHATTAN CLAM CHOWDER FOR FIRST CLASS PASSENGERS

B C Ferries Manhattan Clam Chowder for First Class Passengers image

In British Columbia, Canada, the Ferries that travel the beautiful trip between the Mainland and Vancouver Island, are famous for their "Manhattan" styled Clam Chowder. In the small village by Horseshoe Bay terminal, one of the little bistro's has it's own kicked up version. This is my copycat version of their version! NOTE - this is on the spicy/hot side so if you aren't a fan of that, don't add the red pepper flakes. Serve up with a crusty white artisan bread and a crisp, dry white wine. May I recommend BC's Sonoma Ranch Pinot Grigio. UPDATE: Sept 3, 2012 - Upped the flavour factor on this tasty soup last night by adding in a small chopped zucchini, a small finely chopped fennel bulb and instead of using tomato paste I added 2 TBSP of chipotle adobe sauce. If you don't like the spice of peppers you could add some liquid smoke or smoked paprika instead. Because of the added ingredients I added a bit more clamato and a bit more wine.
