GOMAE - JAPANESE STYLE SPINACH SALAD
This is Chef floWers version of Spinach Gomae. It's a side dish I often ordered at my favourite Japanese restaurant (before it closed down.) I found a visual version on you tube and since I couldn't find a recipe on www.recipezaar.com I thought I would add it to Zaar's collection. We all love this salad and my daughter can eat the whole serving (if I let her). I often double the recipe, so she can have extra greens, well it worked for Popeye The Sailor Man. Ayyye

Steps:
- Toast sesame seeds until slightly brown, you will smell the scent of the sesame seeds when it's ready.
- Reserve small amount of the sesame seed for the garnish.
- Place the rest on a plate and crush (you could do this in a processor as well), then place in a bowl.
- Add water, soy, sugar into the bowl with the sesame seed. (If you are using the food processor then add these ingredients into the processor). Set aside until Spinach is ready.
- To cook the spinach: Add a pinch of salt into a pot of boiling hot water. Mix then add spinach for one minute (ONLY ONE MINUTE or the recipe is ruined).
- Pour the spinach and water into a colander and run cold tap water to cool down the spinach, this will stop it from cooking more.
- Squish the spinach with your hands, until all the moister is out of the spinach (you are only left with a small hand full of spinach).
- Cut spinach into strips (You could skip this part).
- Place spinach onto serving bowls and drizzle the dressing onto the spinach, then add reserved sesame seed as garnish.

SUPER SIMPLE SPINACH SALAD
A simple but divine spinach salad with homemade balsamic vinaigrette!

Steps:
- Put your spinach into a big bowl. If you're using any add-ins, go ahead and add them now. (See notes for ideas.)
- Mix all of the dressing ingredients together in a small jar or container with a tight-fitting lid. Shake them up until it's well mixed.
- Pour the dressing over the spinach right before you're ready to serve.
- Enjoy!

SPINACH SIDE SALAD
Since I was a teenager there was a fabulous spinach salad that I used to always get at The Metropolitan Grill in Seattle. At the time I lived a few hours away and was only able to get to Seattle every month or so...so I improvised and tried to duplicate the salad at home. Nothing beats The Metro but this really is a fantastic salad...goes great with so many different dishes.

- For the dressing-in a small bowl whisk the oil,vinegar,salt and pepper, and sugar or splenda all together until everything is disolved.
- In a large bowl place the spinach in then gently add the mushrooms and the mozerella.
- Give the dressing one last whisk and pour it over the salad.
- Gently toss the salad and plate them up.
- If using the optional ingredients neatly garnish the salads with them now.
- You can also add a bit of freshly ground black pepper.
- I try to chill my salad dishes before using them when I have the chance.

- Prepare recipe for chicken breast.
- On high heat, heat 1 Tbsp oil in a skillet. Sear chicken 2 minutes on both sides. Turn heat down to low, close lid of the skillet and cook another 5-6 minutes, until chicken is tender.
- Meanwhile, in a small bowl, combine the ingredients for the spinach salad dressing.
- Prepare all the ingredients for the salad ingredients and arrange them in a large salad bowl.
- Slice the chicken and add to the salad. Drizzle with the homemade dressing and toss.

- Optional: To toast the walnuts*. Add walnuts to a small ungreased skillet over medium heat. Let the diced walnuts warm up, stirring occasionally until they just begin to darken and become fragrant, this usually takes about 5-6 minutes. Remove the skillet from the heat, give the walnuts a little shake, and let the walnuts rest on the warm skillet 2-3 more minutes to finish toasting until ready to add to the salad.
