Spinach Salad With Pepper Jelly Vinaigrette Food

SPINACH SALAD WITH PEPPER JELLY VINAIGRETTE

Steps:

• Vinaigrette Directions: Combine all ingredients and mix well in blender.
• Salad Directions: Combine spinach, 1/3 cup ONLY of vinaigrette, tomatoes, pecans and raisins in large mixing bowl.
• Toss until leaves are evenly coated with vinaigrette.
• Garnish with blue cheese and olives.

SPINACH SALAD WITH GORGONZOLA & PEPPER JELLY VINAIGRETTE

Steps:

• Place jelly in a 1-cup glass measure. Microwave at HIGH 30 seconds. Add cider vinegar, oil, salt, and black pepper, stirring with a whisk until blended. Cool to room temperature.
• Combine spinach and cheese in a large bowl. Drizzle vinegar mixture over spinach mixture; toss well. Sprinkle with nuts. Serve immediately.

SHRIMP & SPINACH SALAD WITH VINAIGRETTE

Steps:

• Place lemon juice in a small bowl and whisk in salt, pepper and mustard.
• Slowing whisk in oil, adding a little at a time until thickened Add rest of the ingredients.
• Let stand an hour.
• Mix salad ingredients together in a bowl.
• Dress w/ vinaigrette.
