SPINACH SALAD WITH WARM BACON DRESSING



Spinach Salad with Warm Bacon Dressing image

5 slices bacon, roughly chopped
1/4 cup white wine vinegar
1 teaspoon sugar or honey
1 teaspoon dijon mustard
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 pound spinach (not baby), tough stems removed
2 cups seedless red grapes, halved
4 ounces blue cheese, crumbled (about 3/4 cup)
Croutons, for topping

Steps:

  • Cook the bacon in a medium skillet over medium heat, stirring occasionally, until crisp, 9 to 11 minutes. Remove to paper towels; reserve the drippings in the skillet.
  • Whisk the vinegar, sugar, mustard and 1/4 teaspoon each salt and pepper into the drippings. Slowly whisk in the olive oil until emulsified.
  • Place the spinach in a large bowl and pour the warm dressing on top; add the grapes, blue cheese and the reserved bacon and toss. Season with salt and pepper. Top with croutons.

1/2 pound hickory smoked bacon slices, roughly chopped
1/2 cup pecans, toasted and roughly chopped
Two 6-ounce containers baby spinach
1/2 small red onion, thinly sliced
1 cup dried cranberries
1/2 cup Danish blue cheese, crumbled
1/4 cup buttermilk
1/4 cup sour cream
1/4 teaspoon sugar
Salt and freshly cracked black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Fry chopped bacon in a medium skillet over medium-high heat until brown and crisp. Using slotted spoon, transfer to a paper towel-lined 1/4-sheet tray to drain.
  • Toast pecans in the oven on a 1/4-sheet tray until lightly golden and fragrant, about 6 minutes.
  • In a medium bowl mash the blue cheese with a fork. Mix in the buttermilk, sour cream, sugar, salt and pepper, to taste.
  • Combine baby spinach, red onion, pecans, dried cranberries and bacon in large bowl. Toss with the dressing immediately before serving.

1 red apple, chopped core removed
1 green apple, chopped core removed
1 small red onion, very thinly sliced
1/3 cup blue cheese, crumbled
1/3 cup pecans, chopped
1/2 cup olive oil
2/3 cup red wine vinegar
2 teaspoons brown sugar
2 cloves garlic, minced
salt and pepper

Steps:

  • Place dressing ingredients in a sealed jar or cruet and shake well to mix.

A friend brought this salad for my family when my daughter was sick. I added the blue cheese and chives because they sounded good. It's now my favorite salad and just in time for spring spinach leaves.

8 cups baby spinach leaves
1/2 cup roasted sunflower seeds, salted
3/4 cup crumbled good quality blue cheese (such as gorgonzola or stilton)
1 large sweet apple, cut into 1/4 inch dice (no need to peel)
1/4 cup finely chopped fresh chives
roasted garlic vinaigrette dressing (I use T. Marzetti's refrigerated brand, but your favorite will do. Just be sure there's some garlic)
fresh ground black pepper

Steps:

  • Wash the spinach leaves and dry thoroughly. Place in serving bowl.
  • Chop apple and toss with a small amount of dressing to prevent browning. Set aside.
  • Top spinach with sunflower seeds, cheese, chopped chives, and chopped apples.
  • Add black pepper to taste.
  • Drizzle lightly with vinaigrette and toss. Add more dressing if needed.
  • Serve immediately.
