8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

4 thick bacon slices
1 small red onion, sliced
2 tablespoons cider vinegar
2 teaspoons Dijon mustard
1 teaspoon sugar
Salt and pepper
1 (10-ounce) bag fresh spinach, rinsed, patted dry and torn into bite-size pieces
1 McIntosh apple, cored and sliced thinly

Steps:

  • In a skillet set over moderate heat cook the bacon until it is crisp. Transfer the bacon to a plate lined with paper towel and let it drain. Pour off all but 2 tablespoons fat from the skillet.
  • Add the onion to the skillet and cook it, stirring occasionally, for 3 minutes, or until it is wilted. Add the vinegar, mustard, sugar and salt and pepper, to taste and bring the mixture to a boil, stirring. In a serving bowl combine the spinach and apple. Add the hot dressing and toss to combine and serve.

You wouldn't normally think of a salad as being comfort food, but this is a salad you can really cozy up to thanks to the warm bacon and cider dressing. The warm dressing wilts the spinach so it is softened but retains its shape and toothsomeness. I am also comforted by this salad because even though it is decadent- with bacon- I can relax knowing I don't have to feel the least bit guilty about eating it.

Number Of Ingredients 10

10 ounces pre-washed baby spinach
2 slices bacon, finely chopped
3 ounces Canadian bacon, finely chopped
2 teaspoons olive oil
1/2 red onion, sliced (about 1 cup)
1 pound button mushrooms, coarsely chopped
1 cup apple cider
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
Salt and pepper

Steps:

  • Place spinach into a large bowl. Cook bacon in a large skillet over medium heat for about 4 minutes, or until it is just crispy. Add Canadian bacon to the skillet and cook for 2 more minutes, stirring frequently. Remove meat from pan and place on a plate lined with paper towels. Drain any remaining fat from the skillet. Add olive oil and onions to the skillet and cook for about 2 minutes, or until onions soften slightly.
  • Add mushrooms to the pan and cook, stirring frequently, for 2 more minutes. Put onions and mushrooms on top of the spinach. Add apple cider and vinegar to the skillet and turn the heat up to medium-high. Stir to scrape up any bits that are stuck to the bottom of the pan and cook for 8 to 10 minutes or until cider is reduced to about 1/2 cup. Whisk in mustard, salt and pepper, to taste.
  • Pour warm cider dressing over the mushrooms and spinach and toss until the vegetables are well coated. Sprinkle the bacon on top and serve.

1 lb fresh spinach leaves, washed & stems removed
1 apple, unpeeled, cored and sliced
3 green onions, thinly sliced
1/4 cup salted sunflower seeds or 1/4 cup toasted sliced almonds
3 tablespoons white wine vinegar
1 teaspoon sugar
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil or 1/4 cup salad oil

Steps:

  • Crumble bacon. Toss with spinach, apples, and onions in salad bowl.
  • In small bowl, whisk together vinegar, sugar, mustard, salt and pepper. Whisk in the oil until well blended.

1/4 lb sliced bacon
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
3/4 teaspoon salt

1/3 cup cooking oil
2/3 lb smoked chicken breast, sliced
1 lb fresh spinach, stems removed, leaves washed (about 9 cups)
1 small red onion, chopped fine
1 granny smith apple, peeled, cored, and cut in 1/2-inch slices

Steps:

  • Heat the oven to 350 degrees. Toast the walnuts until golden brown, about 8 minutes. Let cool.
  • In a large frying pan, cook the bacon until it is crisp. Drain the bacon on paper towels and then crumble it.
  • In a small glass or stainless-steel bowl, whisk the vinegar with the mustard, salt, and pepper. Whisk in the oil.
  • In a large bowl, combine 2 tablespoons of the dressing with the chicken. Let sit for about 5 minutes so that the chicken absorbs the dressing. Add the walnuts, bacon, spinach, onion, apple, and the remaining dressing and toss.

1 Granny Smith apple, halved, cored and thinly sliced
6 slices bacon, sliced into 1/4" strips
1 small shallot, chopped
1 tsp. Dijon mustard
