12 ounces cavatelli pasta
1/4 cup extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
3/4 cup torn fresh basil
1 28-ounce can whole San Marzano tomatoes, crushed by hand
1 cup ricotta cheese
1/4 cup grated pecorino romano cheese
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the cavatelli and cook as the label directs. Reserve 1/4 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic, 1/2 teaspoon salt and the red pepper flakes and cook until the garlic is soft but not browned, 3 to 4 minutes. Stir in the basil and tomatoes with their juice. Increase the heat to high and cook until the sauce is thickened, about 10 minutes.
  • Add the cavatelli and the reserved cooking water to the skillet; cook, tossing, until warmed through, 2 to 3 minutes. Divide among bowls and top with the ricotta and pecorino. Season with salt and pepper.

16 ounces whole-milk ricotta, drained of excess water
3 large eggs
1/2 teaspoon kosher salt
3 cups all-purpose flour, plus more for the surface

Steps:

  • Combine the ricotta, eggs and salt in a large bowl, then stir into the flour. Gently combine with your hands to bring together into a dough. Knead the dough together, adding additional flour until the dough is firm and not sticky. Tightly wrap in plastic and rest in the refrigerator for at least 1 hour and up to overnight.
  • Cut the dough into quarters. Working with one quarter at a time, roll the dough on a lightly-floured surface into a 1/4-inch-thick rope. With a knife, cut the rope into 1/2-inch pieces. Use a bench scraper or your index and third fingers held together to gently press down on each piece, beginning at the top and moving down toward the bottom, dragging the bench scraper toward you and causing the pasta to roll over on itself. Transfer the formed pasta to a lightly-floured baking sheet and let dry at room temperature for at least 30 minutes. (At this point, the pasta can be frozen in a single layer and stored in a resealable plastic bag in the freezer.)
  • Bring a saucepan of salted water to a boil. Add the pasta and cook until the cavatelli are al dente and begin to float to the top, 3 to 5 minutes.

3 cups all-purpose flour, plus more for dusting and kneading
16 ounces whole-milk ricotta
3 large eggs
Kosher salt
Semolina, for dusting
2 cups leftover tomato sauce from Grandma's Pizza day or any pureed tomato sauce
1 1/2 cups leftover pulled chicken from Grilled Chicken Piccata day or any pulled cooked chicken
4 ounces Parmesan, grated
4 tablespoons butter, cut into pieces
1 cup fresh basil, torn
Olive oil, for serving
Freshly cracked pepper

Steps:

  • For the cavatelli: Add the flour to a large bowl and set aside. In a medium bowl, stir together the ricotta, eggs and 1/2 teaspoon salt. Stir the ricotta mixture into the flour.
  • Transfer the mixture to a floured work surface and, using your hands, gently bring the ingredients together to form a dough. Knead the dough together, adding additional flour as necessary, until the dough is firm and not sticky. Tightly wrap the dough with plastic wrap and allow to rest in the refrigerator for at least 1 hour and up to overnight.
  • On a lightly floured surface, cut the dough into 6 pieces, then roll the pieces into ropes about 1/4 inch in diameter. Cut the ropes into 1/2-inch pieces. Using your thumb or the dull side of a butter knife, press on each piece of dough and pull across the length of it. Continue until all the pasta dough is used. Transfer the pieces to a baking sheet dusted with semolina.
  • For the sauce: Warm the tomato sauce with the pulled chicken in a saucepan over medium heat.
  • Bring a large pot of water to a boil and salt liberally. Drop in the cavatelli, give them a gentle stir and boil until they begin to float, 3 to 4 minutes.
  • Transfer the cavatelli to the sauce along with 3/4 cup of the pasta cooking water. Stir until the pasta is thoroughly combined with the sauce. Remove from the heat and stir in the Parmesan, butter and basil, Serve with olive oil and cracked black pepper.

1 28-ounce can no-salt-added whole peeled tomatoes in puree
8 large fresh basil leaves

1 10-ounce package frozen chopped spinach, thawed, squeezed dry and finely chopped
2 cups whole-milk ricotta cheese

Steps:

  • Heat 2 tablespoons olive oil in a medium saucepan over medium heat. Add the garlic and cook, stirring, until softened, 1 to 2 minutes. Stir in the tomatoes and mash into a chunky sauce using a wooden spoon. Bring to a boil, then reduce the heat to a gentle simmer and cook, stirring occasionally, until the sauce thickens, about 12 minutes. Stir in the basil and season with salt and pepper. Remove from the heat and transfer to a blender; puree.
  • Dust a rimmed baking sheet with flour; set aside. Mix the spinach, ricotta, parmesan, egg yolks, nutmeg and 1 teaspoon each salt and pepper in a large bowl. Add the flour and stir until just combined. Drop tablespoonfuls of the dough onto the flour-dusted pan, shaking the pan from side to side to coat the dumplings in the flour and smooth out their edges. Refrigerate 10 minutes.
  • Meanwhile, bring a large pot of water to a boil. Reduce the heat to maintain a steady simmer. Add the chilled dumplings and cook until they float to the top and are tender, 4 to 5 minutes. Remove with a slotted spoon and transfer to a paper towel¿lined plate to drain. Serve on top of the tomato sauce and drizzle with the remaining 2 tablespoons olive oil. Sprinkle with more parmesan.

1/2 cup sun-dried tomato (not packed in oil)
2 teaspoons olive oil
2 lbs plum tomatoes, cored and quartered
4 garlic cloves, smashed
1 cup finely chopped fresh basil
1/2 cup chicken broth
salt & freshly ground black pepper
2 tablespoons freshly grated parmesan cheese
2 teaspoons freshly grated parmesan cheese
1 1/4 cups low-fat ricotta cheese (12 ounces)
1/4 cup thawed frozen spinach, squeezed dry and chopped
1 large egg yolk
1 tablespoon olive oil
1 3/4 cups all-purpose flour
1 cup semolina
1 tablespoon salt
1/2 teaspoon fresh ground white pepper

Steps:

  • Make the cavatelli: Put the ricotta, spinach, egg yolk and olive oil in a food processor and process to a paste.
  • Add the flour, semolina, salt and white pepper and process until the mixture comes together to form a ball.
  • Scrape the dough out onto a lightly floured work surface and knead briefly.
  • Wrap the dough in plastic and let stand at room temperature for 30 minutes.
  • Make the sauce: Cover the sun-dried tomatoes with hot water and let soak until plumped, about 25 minutes. Drain well and coarsely chop, then transfer to a mini-processor and puree.
  • Heat the oil in a saucepan. Add the fresh tomatoes and garlic and cook over moderate heat, stirring, until the tomatoes release their juices, about 3 minutes.
  • Add the basil and Chicken Stock, cover and simmer over low heat until the tomatoes are very soft, about 5 minutes. Strain the sauce, pressing on the tomatoes to extract as much sauce as possible. Stir in the sun-dried tomatoes and season with salt and black pepper.
  • Cut the cavatelli dough into 10 equal pieces. On a lightly floured work surface, using both hands, roll out each piece of dough into a 1/2 -inch-thick rope.
  • With a fork, cut the rope into 1/2 -inch pieces. Press the side of the fork lengthwise into the center of each piece. Set the cavatelli on a lightly floured baking sheet.
  • In a large pot of boiling salted water, cook the cavatelli in batches, stirring, until they rise to the surface, about 4 minutes. Drain the cavatelli and divide them among 8 shallow bowls.
  • Pour 1/2 cup of the hot tomato sauce over each portion and sprinkle each with 1 teaspoon of the Parmesan cheese.

My mother in-law is an awesome cook and this was the first meal she made for me when my husband and I were dating. Since then anyone I have ever made this for raves about it and makes it themselves. My kids absolutely love it (they are 5 and 7) and the spinach doesn't scare them away. Even our black lab knows when it's being served for dinner and waits to lick the plates, although there is not much left at the end of this meal. .

2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, chopped
1 (14 ounce) package fresh spinach (stems removed)
3 (14 1/2 ounce) cans petite diced tomatoes (not drained)
3 chicken bouillon cubes
1 pinch sugar
fresh basil, to taste
salt and pepper
1 lb thin spaghetti

Steps:

  • Wash and remove stems of spinach, place in a large pot and fill a quarter of the way with water, add salt if desired.
  • Bring to a boil and press down spinach, as it wilts, into boiling water.
  • Cover for 5 minutes. Than drain and remove most of the water but not necessary to remove all. Set aside.
  • Heat olive oil in medium saucepan, cook diced onion and garlic 5 -7 minutes just until translucent.
  • Add diced tomatoes, bouillon cubes, basil, pinch of sugar and Salt and pepper to saucepan.
  • Bring to just a boil than lower heat to medium low and cook for 20 minutes.
  • While that's cooking use the same pot that you boiled the spinach in to boil more water for your pasta and cook according to package directions.
  • Chop already cooked spinach.
  • During the last 5 minutes of cooking pasta add the spinach to your tomato sauce.
  • Drain pasta and put back into pot, add a ladel full of sauce and mix so spaghetti does not stick together.
  • Place pasta on serving plates and spoon sauce over pasta.
  • Sprinkle with Romano cheese and serve.

So easy and so good! Note: I made a very quick tomato sauce for this. You can use jar sauce if you'd like but since this sauce only takes 20 minutes to cook, I think it's worth the effort because it really does make a difference. I served this with a side salad and garlic bread.

1 (28 ounce) can crushed tomatoes (I used tuttorosso brand no salt added)
1 medium whole onion, skin removed
4 garlic cloves, smashed
2 teaspoons sea salt

1/4 cup unsalted butter
2 (10 ounce) boxes frozen spinach, thawed and squeezed dry of all liquid
1 (15 ounce) jar ricotta cheese (I use sorrento brand)
1/4 teaspoon fresh ground black pepper
1/4 cup grated parmesan cheese
2 tablespoons olive oil
cooking spray, for greasing crock pot
1 egg
1 (16 ounce) box ziti pasta, rinsed with cold water in collander

Steps:

  • For the sauce:.
  • Heat a medium sauce pan over medium heat. Add olive oil and garlic. Brown garlic about 2 minutes then discard the garlic but reserve the oil. To the garlic flavored oil, add the crushed tomatoes, whole onion, butter, 1 teaspoons sea salt, and crushed red pepper flakes. Bring to a boil, then reduce to simmer partially covered for 20 minutes. Remove onion and discard when done.
  • In a large bowl, combine ricotta cheese, egg, spinach, 2 tablespoons parmesan cheese, 1 teaspoons salt and fresh ground black pepper. Mix well to combine. Add ziti, toss to combine.
  • Spray the crock pot with cooking spray. Add about 1/2 cup of sauce, then add 1/4 of the pasta mixture. Repeat 3 more layers (4 layers in total) ending with sauce. Sprinkle 2 tablespoons of parmesan cheese over the top.
  • Cover and cook on low for 4 to 5 hours depending on your slow cooker.
  • If you have any sauce left over. Save it in case you want to add more to the finished dish.
