6 sheets phyllo dough (14x9 inches)
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2-1/2 cups shredded part-skim mozzarella cheese
1-1/2 cups shredded reduced-fat cheddar cheese
1-1/2 cups fat-free cottage cheese
4 large eggs
1-1/2 teaspoons dried parsley flakes
3/4 teaspoon salt
6 large egg whites
1-1/2 cups fat-free milk

Steps:

  • Layer three phyllo sheets in a 13x9-in. baking dish coated with cooking spray, lightly spraying the top of each sheet with cooking spray., In a large bowl, combine the spinach, cheese, 2 eggs, parsley flakes and salt; spread over phyllo dough. Top with remaining phyllo sheets, lightly spraying the top of each sheet with cooking spray. Using a sharp knife, cut into 12 squares; cover and chill for 1 hour. , In a large bowl, beat the egg whites, milk and remaining eggs until blended; pour over casserole. Cover and refrigerate overnight., Remove from the refrigerator 1 hour before baking. Bake, uncovered, at 375° for 40-50 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

This is an authentic, really rich pie stuffed with spinach, onions, cheeses and herbs that are all enfolded by crispy, flaky phyllo dough.

3 tablespoons olive oil
1 large onion, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
2 pounds spinach, rinsed and chopped
½ cup chopped fresh parsley
2 eggs, lightly beaten
½ cup ricotta cheese
1 cup crumbled feta cheese
8 sheets phyllo dough
¼ cup olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
  • Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
  • In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.
  • Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.

1/2 cup thinly sliced roasted red bell peppers (from a jar)
1 can (2 1/4 oz) sliced ripe olives, drained

1 cup shredded Cheddar cheese (4 oz)
1 cup ricotta cheese
1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
16 sheets frozen phyllo (filo) pastry (18x14 inch), thawed
1/2 cup butter, melted

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook sausage over medium heat, stirring occasionally, until no longer pink; drain. Cool slightly. Stir in roasted peppers, olives, mozzarella cheese and eggs.
  • In medium bowl, mix Cheddar cheese, ricotta cheese and spinach.
  • Unroll phyllo pastry; cover with plastic wrap or towel. Place 1 sheet of phyllo in ungreased 13x9-inch (3-quart) glass baking dish, folding to fit. Brush lightly with melted butter. Continue layering and brushing with butter 3 more sheets of phyllo.
  • Spoon half of the sausage mixture over phyllo in baking dish. Layer and brush with butter 4 more phyllo sheets. Top with spinach mixture. Layer and brush with butter 4 more phyllo sheets. Top with remaining sausage mixture. Layer and brush with butter remaining 4 phyllo sheets. Score top of phyllo in diamond shapes.
  • Bake 50 to 60 minutes or until puffed and golden brown. Let stand 5 minutes before serving.

1 tablespoon olive oil
1 pound spicy Italian chicken sausage (removed from casings)
5 eggs
1/2 cup kalamata olives (sliced)
1/2 cup oil packed sun dried tomatoes*
10 ounce package frozen spinach (thawed and drained)
1/2 cup greek yogurt
2 tablespoons chopped fresh basil (or 2 teaspoons dried)
1 teaspoon chopped fresh thyme leaves
1 tablespoon black pepper
1 pinch salt
1 teaspoons crushed red pepper flakes
2 1/2 cups shredded Havarti cheese
1/2 cup cheddar cheese (shredded)
1/2 cup mozzarella cheese shredded
40 phyllo pastry sheets (thawed)
1/2 cup canola oil or butter (melted)

Steps:

  • In a large skillet, melt 1 tablespoon olive oil over medium heat. Brown sausage until cooked through and no longer pink. Set aside.
  • In a medium bowl, beat 5 eggs well, add the 1/2 cup of greek yogurt. Mix well. Mix in the basil, thyme, black pepper, crushed red pepper flakes and salt. Add the sausage and spinach and mix until combined.
  • Unroll phyllo sheets and cover with a damp paper towel. Place one sheet in a 13×9 glass baking dish. Brush with some of the canola oil. Add eight additional phyllo sheets, brushing each with canola oil. Spread half of the cheddar cheese over the top of the dough. Dollop half of the spinach sausage mixture over the cheese and then top with half the Havarti cheese and half of the olives. Layer and brush with butter nine more sheets phyllo dough. Spread with the rest of the cheddar cheese and then the rest of the spinach sausage mixture. Top with the remaining Havarti Cheese and olives. Layer and brush with canola oil eight more sheets phyllo dough. Top with mozzarella cheese . Layer remaining phyllo sheets on top, brushing each with canola oil.
  • Bake at 350 for hour to an hour and 15 minutes.

1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup ATHENOS Traditional Crumbled Feta Cheese
1 tub (7.5 oz.) PHILADELPHIA Garden Vegetable 1/3 Less Fat than Cream Cheese
4 green onions, finely chopped
1 egg, beaten
15 sheets frozen phyllo dough (14x9 inch), thawed
1/3 cup butter, melted

Steps:

  • Mix first 5 ingredients until blended.
  • Brush 1 phyllo sheet lightly with butter; top with 2 more phyllo sheets, lightly brushing each layer with some of the remaining butter. Place remaining phyllo sheet between 2 sheets of plastic wrap until ready to use; set aside.
  • Spread 1/5 of the spinach mixture along one short side of phyllo stack. Fold in long sides of phyllo; roll up from one short side to make log. Repeat with remaining phyllo sheets and spinach mixture to make 4 additional logs. Brush with remaining butter. Make small cuts in tops of logs at 1-inch intervals. Place in large freezer-weight resealable plastic bags or wrap tightly in plastic wrap.
  • Freeze up to 3 months. When ready to bake, remove desired number of logs from freezer. Refrigerate, tightly wrapped, several hours or overnight until thawed. Unwrap, then place on baking sheet.
  • Bake in 375°F oven 25 min. or until golden brown. Cool 5 min. Transfer to cutting board. Use serrated knife to cut each log into 6 slices.

1/2 cup pine nuts
2 tablespoons (1/4 stick) unsalted butter
1 tablespoon olive oil
2 yellow onions, diced
2 garlic cloves, minced
Three 20-ounce bags frozen chopped spinach, thawed and squeezed of excess water
4 extra-large eggs, lightly beaten
2 cups crumbled feta cheese
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 tablespoon freshly ground black pepper
2 teaspoons kosher salt
Pinch nutmeg
8 sheets frozen phyllo dough, thawed
3 tablespoon unsalted butter, melted
2 teaspoons za'atar (if you can't find za'atar, use sesame seeds)

Steps:

  • For the spinach and cheese mixture: Preheat the oven to 375 degrees F. Grease a 13-by-9-inch baking dish with cooking spray or butter.
  • In a large dry skillet over medium heat, lightly toast the pine nuts. Remove and reserve. In the same skillet, melt the butter with the olive oil. Add the onions and saute until translucent, about 10 minutes. Add the garlic and saute 2 to 3 minutes. Stir in the spinach. Cook until tender and any excess water evaporates, about 5 minutes. Remove from heat and let cool.
  • In a large bowl, mix the eggs, feta, ricotta, Parmesan, pine nuts, pepper, salt and nutmeg. Add the reserved spinach mixture and stir to combine. Transfer to the baking dish, pressing to make sure it is even.
  • For the phyllo dough crust: Layer sheets of phyllo onto the spinach mixture, brushing each sheet with melted butter before adding the next. Fold the edges to make a crust and brush with butter. Sprinkle with za'atar or sesame seeds. Bake until golden brown, 55 to 60 minutes.

Steps:

  • Preheat oven to 375 F (190 C). Saute onions in chicken broth until broth has evaporated.

1 onion (chopped)

Steps:

  • Preheat the oven to 350F and coat a 9x13 pan with non stick spray.
  • Heat 2 tbsp olive oil in a large pan and saute onion until golden. Add in garlic and saute for a couple of minutes.
  • Add in chopped spinach and cook until wilted. Turn the heat off.
  • Transfer the spinach mixture to a large bowl and let it cool. Drain the excess water the spinach releases.
  • To the spinach, add chopped parsley, dill and green onions and mix well.
  • Add in the eggs and feta cheese. Stir well to everything is combined.
  • To assemble, place one sheet of phyllo dough at the bottom of the pan, make sure it covers the sides of the pan as well.
  • Brush the phyllo dough with olive oil and add another sheet of phyllo.
  • Repeat until you have 5 sheets of phyllo dough layered.
  • Spread the spinach and feta mixture evenly on the phyllo dough.
  • Place another phyllo sheet on the spinach mixture. Brush with olive oil and top with another layer. Repeat until you have 5 to 7 sheets of phyllo dough layered.
  • Fold the excess phyllo dough that's hanging from the sides onto the pie. It's okay if they break or tear.
  • Brush the top and the sides with olive oil.
  • Bake in the oven for one hour until the top is golden and crispy.
  • Let the spanakopita cool for a few minutes and then slice it into squares.
  • Serve warm or at room temperature.

1 small onion, chopped
4 ounces shiitake mushrooms, trimmed and thinly sliced
Kosher salt
5 ounces baby spinach
3 cups diced cooked chicken (from 1 rotisserie chicken)
1/3 cup all-purpose flour
2 1/4 cups low-sodium chicken broth
1 tablespoon fresh lemon juice
1 tablespoon coarsely chopped fresh rosemary
8 sheets frozen phyllo dough (9-by-13-inch sheets), thawed according to the package?s instructions

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt 1 tablespoon of the butter with the olive oil in a large nonstick skillet over medium-high heat, then add the onions. Cook, stirring, until just soft, about 4 minutes. Add the mushrooms and 1/2 teaspoon salt and continue stirring until softened, about 4 minutes. Gradually add the spinach and stir until completely wilted, about 2 minutes. These Spanakopita Triangles are Greek pastry hand pies filled with spinach and feta cheese.

5 oz. baby spinach (roughly chopped)
3 oz. cottage cheese (small curd)
8 oz. feta
3 eggs (beaten)

Steps:

  • Microwave 5 oz spinach until wilted, about 1 minute, or put in a skillet, cover with lid and allow to wilt over medium-low heat.
  • Take away about 4 tablespoons of beaten egg into a separate bowl. Add the remaining egg to 8 ounces feta, 3 ounces cottage cheese (or homemade farmer's cheese) and mix together until everything is well combined. Now add the spinach and mix again.
  • Take about half of your phyllo sheets and cut them into 3 long strips (about 3 inches wide each). Roll up the rest of the phyllo sheets and cover with a towel, to prevent them from drying.
  • Drizzle couple teaspoons of butter all over the sheet. Add 1 tablespoon of feta-spinach filling to the end of each strip that's closest to you. Now grab two layers of sheets and start folding like pictured, into a triangle. Try to move fast or the phyllo dough will dry out.
  • Place the triangles on a baking sheet and brush each triangle with either butter or the beaten egg. If you brush it with the beaten egg, they will have a sheen to it.
  • Try to bake them as soon as you form them, or the wet filling will soften the phyllo and they will break while baking (see last picture in the post). Bake at 350F, for about 20-25 minutes or until golden in color.
  • Eat warm or cold with refreshing Cucumber and Yogurt dip (recipe for Tzatziki dip here). Re-crisp leftovers by placing back in the oven for about 5-7 minutes, at 350°F.

Greek Spinach Chicken Casserole in Phyllo image

Even if you don't like Greek food you will adore this melt in your mouth dish. The flavors mingle so well and the phyllo is light, crisp and buttery! It is rich and light at the same time and is sure to be a favorite with your family! Note: Cook time does not include pre-cooking chicken.

1 (10 ounce) packet frozen chopped spinach (thawed)
2 chicken breasts (cooked and shredded)
2 chopped fresh garlic cloves
1 teaspoon parsley
1 cup low-fat mayonnaise
1/2 cup milk or 1/2 cup half-and-half
1 cup shredded mozzarella cheese
6 sheets phyllo dough
1/2 cup melted butter
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • In large mixing bowl, combine spinach, shredded chicken, garlic, parsley, mayo, and milk.
  • Layer this mixture evenly in 9x9" glass dish.
  • Sprinkle mozzarella evely over top.
  • Tear phyllo into pieces about the size of the palm of your hand and layer over cheese.
  • Pour melted butter over phyllo and cover dish with foil and bake 30 minutes covered; try not to let foil rest on phyllo, but create a little "tent".
  • After 30 minutes, remove foil and sprinkle with parmesan.
  • Broil for 5-10 minutes until phyllo is golden and crisp.
  • Serve with green salad and fresh rolls!

  • Pre-heat your oven to 375 degrees. Lightly mist a 9x13 baking dish with cooking spray and set aside.
  • Mist a large saute pan or walled skillet with cooking spray and bring to medium-high heat. Add the chicken and onions and cook for 7-10 minutes, breaking up the chicken into bite-sized pieces with a wooden spoon or spatula, until the chicken is cooked through and the onions are softened. Drain if liquid is present. Add the pepper, oregano, salt, nutmeg, red pepper flakes and garlic and stir to combine. Cook for another minute until fragrant. Add the spinach and stir until well combined. Cook for a few additional minutes (if the spinach produces liquid allow it to evaporate) and then transfer to a large mixing bowl. Allow to cool a bit for 8- 10 minutes. Add the beaten eggs, feta and mozzarella cheese and stir together until well combined.
  • Remove the defrosted phyllo sheets from packaging and place them under a layer of plastic wrap covered by a damp towel to prevent drying. Take out one sheet at a time (a total of 8 sheets) and lay it in the bottom of the prepared baking dish, misting the entire sheet with cooking spray before adding the next sheet until you have a stack of 8 sheets layered in the bottom of the dish. Mist the top phyllo layer and then top with the spinach/chicken mixture. Spread the mixture evenly across the phyllo in the baking dish. Top with another 8 sheets of phyllo dough, misting each layer with cooking spray in between and top with a final mist of cooking spray. Cut the casserole into 8 servings (if you try to do this after baking it will be very messy/flaky).

  • Brush a 9-by-13-by-2-inch baking dish with olive oil. Line the bottom of the dish with half of the phyllo sheets (10 to 12 sheets), layering them one at a time; press smooth, gently pressing the dough into the corners of the dish, and brush each sheet with olive oil before adding the next sheet. Allow any excess to come up the sides of the dish. Keep the stack of phyllo you’re not working with covered with a damp kitchen towel.
