3 pounds spinach, rinsed
2 teaspoons olive oil
2 tablespoons toasted pine nuts
1 teaspoon minced garlic
freshly ground black pepper

Steps:

  • Wash the spinach, but allow the water to cling to the leaves. Cook the spinach until it wilts in a skillet over medium-high heat, about 3 minutes.
  • Heat the oil in a skillet over medium-high heat. Add the spinach, pine nuts, and garlic and cook for 2 minutes. Season with pepper and serve.

Spinach, feta and pine nut salad image

This salad is great with lamb, or just on its own. The vinegar cuts through the saltiness of the cheese, and the spinach and pine nuts are just a fantastic flavour combination. With a GI of 45 this meal is high protein, low GI and provides 437 kcal per portion.

450g/1lb baby spinach
450g/1lb feta cheese, cut into chunks or cubed
8 tsp pine nuts, lightly toasted
1 red onion, sliced finely
sherry vinegar, to taste
light and fruity olive oil, to drizzle

Steps:

  • Place the washed spinach with the feta, onion and pine nuts in a bowl.
  • Sprinkle with sherry vinegar, then drizzle with the oil, which allows the dressing to coat all the ingredients.
  • Serve alongside grilled lamb, chicken or just with some crusty bread.

WARM SPINACH SALAD WITH PANCETTA DRESSING

10 ounces fresh baby spinach, stems removed
1/2 medium red onion, thinly sliced
2 tablespoons olive oil
8 ounces white mushrooms, sliced
Kosher salt
6 ounces thinly sliced pancetta, cut into 1 1/2-inch strips
1/4 cup red wine vinegar
1 tablespoon honey
1/2 teaspoon Dijon mustard
Freshly ground black pepper
2 ounces pine nuts, toasted (about 1/3 cup)

Steps:

  • Combine the spinach and red onions in a large bowl.
  • Heat the olive oil in a medium saute pan over medium-high heat until hot and shimmering. Add the mushrooms and salt to taste, and cook, stirring with a wooden spoon, until they start to release their moisture and begin to shrink, 2 to 3 minutes. Now let the mushrooms cook undisturbed until their liquid evaporates and they have turned deep golden brown on one side, 5 to 7 minutes. Stir and continue cooking until nicely browned on both sides, 3 to 5 minutes more. With a slotted spoon, remove the mushrooms from the pan and toss with the spinach and onions.
  • In a separate, heavy-bottomed saucepan, cook the pancetta over medium-low heat until dark and crispy, about 15 minutes. Remove from the pan with a slotted spoon and reserve.
  • To the rendered fat in the pan, add the vinegar, honey and mustard. Bring to a boil and whisk to combine. Add salt and pepper to taste and then pour the warm dressing over the spinach, mushrooms and onions. Add the reserved pancetta and toss to distribute the heat and dressing.
  • Serve in a salad bowl, garnished with pine nuts.

It's best to put the tomatoes on the salad just before serving so they won't wilt from the heat and moisture. 1 cup pine nuts
1 garlic clove, minced
1/2 teaspoon dried basil

1 tablespoon butter
2 packages (6 ounces each) fresh baby spinach
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup balsamic vinegar
2 cups crumbled feta cheese
1 large tomato, finely chopped

Steps:

  • In a large saucepan, cook pasta according to package directions. , Meanwhile, in a Dutch oven over medium heat, cook the pine nuts, garlic, basil and pepper flakes in oil and butter just until nuts are lightly browned., Add the spinach, salt and pepper; cook and stir just until spinach is wilted, 4-5 minutes longer. Transfer to a large bowl., Drain pasta. Stir into spinach mixture. Drizzle with vinegar; sprinkle with cheese and tomato.

1kg fresh spinach , or 500g frozen leaf spinach
3 tbsp olive oil
3 tbsp pine nut
2 garlic cloves , finely chopped or crushed

Steps:

  • Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
  • Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
  • Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

12 slices pancetta
50 g pine nuts
balsamic vinegar
extra virgin olive oil (good quality)
6 avocados (ripe)
4 cups baby spinach leaves (washed)
salt and pepper

Steps:

  • Heat a frying pan and fry the pancetta until crispy.
  • Remove from the pan and set aside.
  • In the same pan, lightly toast the pine nuts. (This happens quickly, don't abandon them.).
  • Make your dressing by combining 1 tbsp olive oil and season with salt and freshly ground black pepper.
  • Taste to make sure your dressing is balanced; add a little more oil or vinegar if needed.
  • On serving plates, lay out the avocado.
  • Sprinkle over the spinach leaves, pancetta and pine nuts.

4 slices streaky bacon, cut into 1 cm pieces
2 tablespoons pine nuts
2 cloves garlic, finely chopped
1 lb spinach leaves, trimmed,washed and spun dry
1 tablespoon balsamic vinegar
1 tablespoon grated parmesan cheese

Steps:

  • Heat 1 tbsp of oil in heavy frying pan over medium- high heat until hot, but not smoking.
  • Add the bacon and saute, stirring occasionally for 4 mins or until browned.
  • Reduce heat to a minimum, add pine nuts and cook for 1 min, stirring occasionally Add the garlic and cook, stirring for 30 seconds.
  • Add the spinach, vinegar and remaining tbsp of oil and cook, tossing gently for 15 seconds, or until the spinach is warm and a bit wilted.
  • Transfer to serving plates, sprinkle with parmesan and serve immediately.
