SPINACH PESTO PASTA WITH PORTOBELLO MUSHROOMS OR BACON
Wonderful for winter, and unbelievably good over pasta, then topped with portobello mushrooms or bacon. Please everyone in the house with this flexible veggie or carnie recipe.
Provided by Kare for Kitchen Treaty
Number Of Ingredients 20
Steps:
- Cook the pasta according to package directions.
- While the pasta is boiling, make the spinach pesto: In a food processor (or a blender in a pinch), pulse the spinach, garlic, walnuts, olive oil, and Parmesan cheese. Don't pulse it to a paste - leave it a little chunky - some texture is good.
- Okay, now pick your track! Are you going all veggie, all carnie, or a split between the two?

Steps:
- In a large skillet over medium heat, add the canola oil. Add the reserved onions, Italian seasoning, red pepper flakes, and garlic and cook for 1 minute. Stir in the reserved spinach and cook until warmed through, about 2 minutes. Toss in the pasta and cook until it is warmed through, about 2 minutes. At the last minute, stir in the basil, cheese, and olive oil. Serve immediately.

- In a large bowl, beat together 1 egg with a generous pinch of salt and pepper. Whisk in 1 tablespoon canola oil. Add half the spaghetti (reserve the other half for another use). Toss it well to coat and press it into a 9-inch deep dish pie pan to form a crust.
- In a skillet over medium-high heat, add the remaining oil. When it is hot, add the onion and cook until it is softened, about 5 minutes. Add the garlic and cook for 1 minute. Remove from the heat and set aside (reserve half the cooked onions for another use).
- In a large bowl, whisk together the remaining 2 eggs, milk, Italian seasoning, and salt and pepper, to taste. Stir in the cheese, spinach (reserve 3/4 cup spinach for another use), and remaining half of the cooked onions. - Turn your Instant Pot to the saute function. While it heats up, chop up your mushrooms. When the display reads HOT add in your oil. Then add in your mushrooms, salt and pepper and saute for about 5 minutes. Add in your pasta and water.
- Cover and secure the lid into place. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes (if cooking with another type of pasta read my note below). When the time is up move the valve to venting. Remove the lid.
- Stir in the spinach. And then stir in the pesto and cheese. If there is too much liquid you can use a cornstarch slurry to thicken the sauce by mixing 1 Tbsp of cornstarch with 1 Tbsp of water and then stirring the mixture into the pot.
- Scoop the pasta into serving dishes and enjoy! Store leftovers in an airtight container in the refrigerator for up to a week.

- Combine all the ingredients except the olive oil in a blender. Start with about 2 Tablespoons of the olive oil and puree. Continue to add more olive oil until desired consistency is reached. Taste. Add salt if desired. Note: This stuff thickens quite a bit when refrigerated, so if you make it ahead of time you'll likely need to add some oil to thin it a bit.
- Bring a medium sized pot of salted water to a boil. Add pasta and cook according to package directions.
- Meanwhile, heat the oil in a medium skillet. Add sliced mushrooms and saute until golden on both sides, about 6-8 minutes. In the last minute, add the cherry tomatoes to warm them.
- When the pasta is done and drained, return to the pot and toss with mushrooms, tomatoes, and spinach pesto. Serve with fresh shaved Parmesan flakes and additional salt and pepper, if desired.
