1-1/2 pounds beef stew meat, cut into 1/2-inch cubes
1 tablespoon canola oil
1 medium onion, chopped
3 cans (14-1/2 ounces each) beef broth
1 cup medium pearl barley
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
4 medium carrots, sliced
2 tablespoons chopped fresh parsley

Steps:

  • In a large saucepan or Dutch oven, brown meat in oil in batches. Remove and set aside. In the same pan, saute onion until crisp-tender. Add the broth, barley, seasonings and beef; bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add carrots; bring to a boil. Reduce heat; cover and simmer 30-40 minutes or until meat and carrots are tender. Add parsley just before serving.

8 cups low-sodium chicken or vegetable broth
1 pound mix of dried beans, such as navy and pinto, rinsed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 stalks celery, diced
2 carrots, diced
2 cloves garlic, minced
1 medium yellow onion, chopped
1 bay leaf
A few sprigs fresh thyme
8 ounces dried barley
8 ounces baby spinach
Toasted crusty bread or baguette, for serving

Steps:

  • Combine the broth, bean mix, salt, pepper, celery, carrots, garlic, onions, bay leaf, thyme and 2 cups water in a slow cooker. Cover and cook on low for 7 hours. Add the barley and, if the broth looks low, another cup of water. Cover and cook on low an additional 1 hour (8 hours total).
  • Just before serving, stir in the spinach to wilt. Serve in a big bowl with toasted crusty bread or baguette.

1-1/2 pounds beef stew meat, cut into 1-inch pieces
1 medium onion, chopped
2 tablespoons canola oil
4 cups water
1 can (15 ounces) tomato sauce
5 medium carrots, cut into 1/2-inch pieces
1 celery rib, thinly sliced
2 teaspoons salt
1/2 teaspoon dried oregano
1/2 teaspoon paprika

Steps:

  • In a large skillet, brown beef and onion in oil until meat is no longer pink; drain. Transfer to a 5-qt. slow cooker. Add water, tomato sauce, carrots, celery, salt, oregano, paprika and pepper. , Cover and cook on low for 4-5 hours. Add the beans, corn and barley; cover and cook on low 2 hours longer or until barley, beef and vegetables are tender. Freeze option: Place individual portions of cooled stew in freezer containers and freeze up to 3 months. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

2 leeks, white and green parts, diced
1 bunch cilantro, leaves and stems separated
1 cup finely diced fennel, fronds reserved (1/2 large fennel bulb)
3 garlic cloves, finely chopped
2 1/2 tablespoons baharat (see note)
1/2 cinnamon stick
2 tablespoons tomato paste
2 quarts chicken or vegetable broth
1/2 cup pearled barley
2 1/2 teaspoons kosher salt, more as needed
Large pinch saffron, crumbled (optional)
4 cups cooked beans or chickpeas
2 cups peeled and diced butternut squash (1 small squash)
3/4 cup peeled and diced turnip (1 medium)

Steps:

  • In a large pot over medium heat, heat oil and cook leeks until they begin to brown, 10 to 12 minutes.
  • Finely chop cilantro stems. Stir into pot, along with diced fennel and garlic. Cook for 2 minutes. Stir in baharat, cinnamon and tomato paste, and cook until paste begins to caramelize, about 2 minutes.
  • Stir in broth, 3 cups water, the barley and the salt. Bring to a gentle boil, stir in saffron, if using, and reduce heat to medium. Simmer uncovered for 40 minutes. Stir in beans, squash, turnip and lentils; cook until barley is tender, about another 20 to 30 minutes. Taste and adjust seasonings, if desired. Remove cinnamon stick.
  • Ladle stew into bowls. Spoon a dollop of yogurt on top and drizzle with olive oil. Garnish with cilantro leaves, fennel fronds and Aleppo pepper or paprika.

Steps:

  • In a large resealable plastic bag, combine the flour, paprika, salt and cayenne. Add beef, a few pieces at a time, and shake to coat. In a Dutch oven over medium heat, brown beef in 2 tablespoons oil. Remove with a slotted spoon; set aside. , In the same pan, saute onions in the remaining oil until crisp-tender. Add the water, tomato paste, sage and thyme. Return beef to pan. Bring to a boil; reduce heat. Cover and simmer for 1-1/4 hours, stirring occasionally. , Add more water if needed. Stir in beans. This is what I consider the ultimate beef soup. Great on a frosty day. For beef stock, I use 2 1/2 quarts water and 6 teaspoons beef base. Also, use inexpensive red wine. No need for the good stuff here, and cheaper actually works better! Try with leftover pot roast.

2 thick slices beef shank
kosher salt and ground black pepper to taste
1 tablespoon vegetable oil
1 large onion, diced
4 cloves garlic, minced
2 tablespoons tomato paste
4 cups chicken broth, or more as needed
⅔ cup diced celery
⅔ cup diced carrots
1 bay leaf
¼ teaspoon dried rosemary
½ cup pearl barley
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Season beef all over with kosher salt and black pepper.
  • Heat vegetable oil in a large pot over high heat. Cook beef in hot oil until browned on both sides, about 10 minutes. Transfer beef to a plate.
  • Reduce heat to medium, and stir onion into the same pot with a pinch of salt. Cook and stir until onion is soft and translucent, 4 to 5 minutes. Stir garlic into onion; cook and stir until fragrant, about 1 minute.

1 medium sweet onion, diced

1/3 cup dry red or white wine
8 cups beef stock
1 cup pearled barley, rinsed

  • Heat olive oil in a large stockpot or Dutch oven over medium heat. Season steak with salt and pepper, to taste. Add to the stockpot and cook, stirring occasionally, until evenly browned, about 6-8 minutes; set aside. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. 1 1/2-2 cups dried pink beans or 1 1/2-2 cups some of the heirloom dried beans, rinsed and soaked overnight, then rinsed again
3 tablespoons olive oil
2 lbs beef stew meat or 2 lbs short rib of beef
1 large onion, chopped
2 stalks celery, sliced thinly
4 carrots, sliced thinly
2 bay leaves
2 garlic cloves, minced
2 tablespoons salt
3/4 cup pearl barley
1 tablespoon paprika
1 tablespoon parsley flakes (or 3 T chopped fresh parsley)
1 teaspoon dill weed or 2 sprigs fresh dill
black pepper, to taste
tomato paste

Steps:

  • Heat oil in large soup pot, sauté onion and beef until brown, add vegetables and continue to sauté for 2 minutes, add remaining spices and barley. Stir and sauté another 2 minutes.
  • Add remaining vegetables (optional) and tomato paste (optional) and enough water to bring volume to about 6 quarts. Bring to a slow simmer and simmer for 12 hours. Remove fat.
  • This can be eaten after 4 or 5 hours, but it improves with longer cooking.

450 g dry pinto beans
450 g dry pinto beans
150 g pearl barley
2 tablespoons sunflower oil
2 onions, chopped (about 250 g)
4 garlic cloves, chopped
300 g smoked pork necks, diced
1 carrot, peeled (150 g)
100 g celery root, peeled
100 g parsley roots, peeled
1 red horn pepper, cut into chunks
1 dried bay leaf
1 celery, leaf
1500 ml water
1 teaspoon sea salt
1 teaspoon ground black pepper

Steps:

  • Soak dry pinto beans in plenty of water overnight. Drain and rinse the beans.
  • Soak pearled barley in plenty of water overnight. Drain and rinse the barley. Cook al dente in a double amount of water. Drain and set aside.
  • In a large pot sauté onions and garlic in sunflower oil for 5 minutes until soft, stirring frequently. Add diced smoked pork neck, stir and sauté for 5 more minutes.
  • Meanwhile, make a mirepoix (soffritto or Holy trinity) from carrot, celery and parsley root and red horn pepper: cut the root vegetables into smaller pieces and coarsely chop in a blender. Add horn pepper chunks and pulse once or twice.
  • Add mirepoix to onions and smoked meat, stir and cook for 1-2 minutes.
  • Add beans, bay and celery leaf, water, and salt and bring to the boil. Turn down the heat, cover the pot and continue to cook for 25 - 30 minutes.
  • Stir in cooked barley, continue to cook for 5 minutes or until the beans are cooked (al dente).
  • Season with ground black pepper and serve.

2 tablespoons olive oil
1 large onion (peeled and finely sliced)
1 lb chuck steak (cut in chunks roughly 1 inch square)
generous half cup pearl barley (rinsed)
1 and a half cups Guinness
2 cups beef stock (you may need a bit more)
2 tablespoons Worcestershire sauce
1 tablespoon of tomato puree
1 cup of quartered mushrooms (optional)
2 to 3 cups root vegetables of your choice (carrots, parsnips, turnips etc, peeled and cut in chunks (I used all parsnips this time))
1 large bay leaf or two small
good twist of ground pepper
½ cup frozen peas (optional)

Steps:

  • Preheat the oven to about 325℉ (or about 170℃ - 160℃ for a fan oven).
  • You need an oven safe casserole with a lid that you can also use on the stove top. (I use a Le Creuset casserole.) Alternatively, you can use a large frying pan for the first part, and transfer everything to a casserole with a lid before you put it in the oven.
  • Heat the olive oil over medium heat in an oven safe casserole with a lid that you can also use on the stove top.
  • Sauté the onion until it begins to look translucent.
  • Add the beef and brown it in the oniony oil.
  • When the beef has begun to brown, stir in the barley and let it get coated in the oil too.
  • Now add the beer, the stock, the Worcester sauce and the tomato puree and stir though.
  • Stir in the mushrooms, if using.
  • Tip in the vegetables and stir gently.
  • Stir through the pepper and add the bay leaf before covering with the lid.
  • Put the casserole in the oven for an hour and a half, stirring every half hour. You may need to add more stock as the barley absorbs the liquid. The amount of liquid you need will be affected by what kind of vegetables you use and the amount of them that there are.
  • Keep the heat nice and low, you want to cook low and slow.
  • Remove the casserole from the oven, and take out the bay leaf.
  • Add the peas, if using, and a bit more stock again if necessary. Put the lid back on the pan and return it to the oven for about 20 minutes, just to cook the peas and bring everything together.
  • Serve in warmed bowls.

1 (28-ounce) can crushed tomatoes
3 cups AB's Beefy Broth, recipe follows
1/2 cup pearl barley
3 large carrots, peeled, halved and cut into 1/2-inch slices
2 stalks celery, cut into 1/2-inch slices
1 large russet potato, peeled and diced
1 medium yellow onion, diced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried marjoram
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Malt, balsamic or sherry vinegar, for serving
Vegetable oil
Salt and pepper
3 pounds combined beef shank and oxtail pieces
2 onions, quartered
2 ribs celery, halved
2 carrots, halved
3 cloves garlic
1 bunch fresh parsley
1 teaspoon whole black peppercorns
2 quarts water

Steps:

  • Brown the beef in the pressure cooker over high heat, 5 to 7 minutes. Drain off any fat. Add the tomatoes, broth and barley and return to high heat. Close the pressure cooker and bring to up to full pressure. Reduce the heat until the cooker barley hisses, and cook for 10 minutes.
  • Release the pressure using the cooker's release device (read the manual), or cool the cooker by running cold water over the lid for 30 seconds. Open carefully, remove the lid and add the vegetables, herbs, salt and pepper.
  • Put the lid back on the pressure cooker and heat to full pressure over high heat. Reduce the heat to maintain pressure and cook another 10 minutes. Release the pressure as above. Remove the lid and cool for 5 minutes, and then serve with vinegar.
  • Place the pressure cooker over high heat. Oil and salt the oxtail and shank pieces then sear in batches. Add the remaining ingredients and cover with water, being careful not to fill above the cookers "maximum fill" line. Bring to a boil and skim off any foam that gathers at the surface. Cover and lock the lid. Once the pressure builds up inside the cooker, reduce the heat so that you barely hear hissing from the pot. Cook for 50 minutes.
  • Release the pressure using your cooker's release device (read the manual), or cool the cooker by running cold water over the lid for 30 seconds. Carefully open the lid and strain , squeezing the solids before feeding to the compost pile or the dogs. Strain through a fine sieve or several layers of cheesecloth. Season and serve or use as a base for other soup recipes.

455g (16oz) of stewing beef, uncooked
200g (7oz) onion, finely chopped
3 cloves of garlic, crushed
300g (10.5oz) of carrots, finely chopped
125g (4.5 oz) of mushrooms, chopped
3 cups (720ml) of chicken stock
3 cups (720ml) of beef stock
3 tablespoon of tomato paste
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
1 teaspoon of paprika (not smoked)
3 to 4 handfuls of chopped kale
125g (4.5oz) of pearl barley, uncooked
salt and black pepper
cooking oil spray (I used avocado)

Steps:

  • Spray a large pot over a medium high heat with some cooking oil spray
  • Add the beef in batches, seasoning with salt and black pepper and fry till lightly golden, remove and set aside
  • Add the onion, and fry to soften. Add a couple of spoonfuls of either stock just to deglaze the pan.
  • Add the garlic, carrot, mushrooms, thyme and rosemary, paprika, splash of balsamic vinegar and tomato paste
  • Add back in the stewing beef (including juices) and stir to coat.
  • Add all the stock and bring to a boil, reduce heat to low, cover with a lid and simmer for approx 30 mins

2 lbs beef stew meat, cut into 1-inch pieces
1/2 cup flour, to coat
2 tablespoons oil
1 onion, chopped
2 garlic cloves, minced
1 tablespoon Worcestershire sauce
1 teaspoon fresh ground black pepper (or to taste)
1/2 teaspoon salt (optional)
1 teaspoon oregano
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 -6 cups beef stock
3 large red potatoes, cut into chunks
1 (14 1/2 ounce) can diced tomatoes, undrained
1/4 cup pearl barley
1 cup baby carrots
1/2 cup celery, chopped

Steps:

  • Trim any fat from the meat and cut into bite-sized pieces, in a large zip lock bag place flour and meat coating all the meat really well with the flour.
  • In a large skillet brown the beef in the hot oil, browning on all sides, remove meat and set aside.
  • Add onion and garlic to skillet beef drippings and cook until onion is translucent.
  • In a large dutch oven or soup pot add the meat, onions, garlic, beef broth and pearl barley, cover and simmer on medium low heat for 45 minutes.
  • Next add the fresh ground pepper, Worcestershire sauce, herbs, carrots, potatoes, tin tomatoes and celery, simmer until meat is very tender, about another 40-45 minutes.

  • Heat 2 tbsp oil in a large pan then add the garlic, carrots, celery and leeks and cook until softened. Add the stock, tomato purée and barley.
