GREEN BURGERS
This vegetarian burger recipe can be frozen, letting you get ahead on busy days. It's craftily packed with spinach - one of the trickier veg to get into kids!

Steps:
- Heat half the oil in a frying pan and gently fry the onions for about 10 mins until pale and soft, then leave to cool a little.
- Finely chop the spinach in a food processor and tip into a bowl. Add the cooled onion, breadcrumbs, nutmeg, cheddar and Parmesan, and mash together. Add the beaten egg, a little at a time (you may not need all of it), until the mixture holds together. Divide into eight (see tip below) and shape into fat burgers.
- Put the flour in a shallow bowl, season well and dip the burgers into the flour to coat. Store in a plastic container between layers of baking parchment. Either chill until ready to cook, or freeze.
- Heat the remaining oil in the frying pan and fry for about 5 mins each side until browned all over. Serve in the crusty rolls, with a couple of slices of tomato, ketchup and sweet potato fries on the side, if you like.

- Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
- Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
- Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
- Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
- Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
- Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
- When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
- Timing for a countertop grill:
- For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
- For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
- For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
- Combine all ingredients.

- Preheat oven to 400°F.
- In a non-stick fry pan, soften onion, then brown hamburger. Add frozen spinach, cover and cook until spinach thaws, scraping spinach as it melts.
- Stir in soup, soy sauce, pepper, Cajun seasoning and 1/3 cup cheese. Cook until cheese melts, then place in a greased 2-quart casserole.
- Sprinkle with the 1/4 cup cheese and bread crumbs.
- Bake at 400°F for about 10 minutes or until cheese melts.

- Add navy beans, lentils, breadcrumbs, minced onion, garlic powder, and eggs to food processor. Process 1 minute or until thoroughly mixed.
- Removed from food processor into large bowl and mix the spinach in with a large spoon, or with your hands. If you have some who don't like spicy food, go ahead and shape a couple burgers now. Then add red pepper flake and mix thoroughly.
- Add oil to large fry pan and preheat. While heating pan, shape mix into burgers. These do not shrink like ground beef, so make them the size you would like the finished result to be.
- Fry 3-5 minutes per side until golden brown.

EASY VEGAN LENTIL BURGER RECIPE
These vegan lentil burgers are jam packed with yummy ingredients like lentils, mushrooms, quinoa and spinach. They're so hearty and delicious and sure to be on your regular burger rotation!

- Cook quinoa according to package instructions. Set aside.
- Heat olive oil in 12-inch non-stick frying pan or skillet over medium heat.
- Add shallot and garlic. Cook, stirring often, for 5 minutes.
- Stir in mushrooms and cook, stirring occasionally, for 5 minutes or until mushrooms have released some of their moisture.
- Add spinach and cook for 1 to 2 minutes, stirring every so often, until spinach has wilted. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Transfer to a plate and set aside to let cool for 5 minutes or so.
- Meanwhile, in small bowl, mix flaxseed meal with water and let sit for 5 minutes.
- Add lentils to processor, along with cumin, smoked paprika, cayenne pepper, oats, walnuts, mushroom/spinach mixture, flax/water mixture, remaining 1 teaspoon of salt and remaining 1/2 teaspoon of black pepper. Process until the mixture comes together. Don't overmix; you want a little texture.
- Add cooked quinoa and process until just combined (again, don't overmix).
- Once done, you can transfer the mixture to a bowl. Form into patties (about a standard sized ice cream scoop and a half or about 6 tablespoons per burger) and place onto a wax paper-lined baking sheet. Note: I like to get the quantity I need and roll around in my hands to form a ball and then press down to form patties. Freeze for 15 minutes.
- Wipe out the pan or skillet you used to cook the mushrooms and spinach in, then spray with cooking spray (or grease with cooking oil) and set over medium heat.
- Once hot, place three burgers in the pan (cook them in batches, replacing the oil in the pan, as necessary, between batches) and cook for 3 minutes per side or until heated through.
- Serve the lentil burgers on hamburger buns with your favourite burger toppings. Enjoy!
