VEGETARIAN SPINACH AND MUSHROOM ENCHILADAS

Vegetarian Spinach and Mushroom Enchiladas image

Delicious meatless enchiladas. You can vary the amounts of cheese and cream sauce to make them as light or heavy as you like. I use 3 to 5 varieties of mushrooms. Various oyster varieties, buttons, and baby portobello.

Time 1h5m

Yield 10

Number Of Ingredients 12

3 tablespoons butter
1 pound mushrooms, cleaned and sliced
1 cup coarsely chopped onion
8 ounces fresh spinach - washed, stemmed, and coarsely chopped
salt and ground black pepper to taste
1 (10 ounce) can Mexican-style diced tomatoes with lime and cilantro (such as Rotel®), half drained
1 (8 ounce) package neufchatel cheese
1 (16 ounce) container sour cream, divided
½ teaspoon ground cumin
20 corn tortillas
1 pound shredded Monterey Jack cheese
1 (8 ounce) jar salsa, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Heat a skillet over high heat. Add butter, mushrooms, and onion and cook until onions are translucent, 7 to 10 minutes. Add spinach and toss until wilted, about 3 minutes more. Season with salt and pepper. Remove from heat and set aside.
  • Heat a small saucepan over medium heat. Add diced tomatoes, neufchatel cheese, 8 ounces sour cream, and cumin. Stir until thoroughly mixed, about 1 minute, and remove from heat.
  • Place tortillas between 2 paper towels and heat in a microwave oven until warm, 30 seconds to 1 minute.
  • Scoop about 2 tablespoons spinach mixture, 1 tablespoon cream mixture, and 1 to 2 tablespoons shredded Monterey Jack cheese into a tortilla. Roll up and place seam-side down in the prepared baking dish. Repeat with remaining tortillas. Spread any remaining cream mixture on top of enchiladas. Sprinkle any remaining Monterey Jack cheese on top. Cover.
  • Bake in the preheated oven until heated through, about 20 minutes.
  • Garnish individual servings with remaining sour cream and salsa.

Some time ago there was a post in the Tex-Mex/Mexican Food Forum asking if it was possible to find reduced fat recipes. This recipe is proof positive that it can be done. I have not tried this yet but will soon.

LOW FAT BEEF ENCHILADAS

Low Fat Beef Enchiladas image

SPINACH ENCHILADAS

Spinach Enchiladas image

I found this recipe on a site I never go on, so thought I'd post it here with my alterations. In the original recipe, they used 1 cup ricotta cheese, yet I didn't have any, and didn't have a full cup of cottage cheese as a substitute. Olives in this recipe are an estimate, since we had some left over from dinner, so I just chopped those up. I'd say as an estimate, probably slightly less than 1/4 cup. You could use whatever cheese you prefer, I used a 3 cheese blend, which turned out wonderful.

Time 40m

Yield 7 enchiladas, 7 serving(s)

Number Of Ingredients 11

1 tablespoon butter
1/2 cup diced onion
2 garlic cloves, minced
1 bunch spinach
1/2 cup low fat cottage cheese
1/2 cup sour cream
1/2 cup corn
1/4 cup pitted black olives, diced
2 cups four-cheese Mexican blend cheese, shredded
20 ounces enchilada sauce
7 corn tortillas

Steps:

  • Preheat oven to 375 degrees Farenheit.
  • Pinch off woody ends of spinach, place in boiling water for about 30 seconds, or until vibrant green, drain, and squeeze out excess water.
  • Place butter in skillet, melt, and added in onions and garlic, cook until fragrant, not brown.
  • Add in spinach, corn, and black olives, cook for 5 minutes, stirring often.
  • Remove from heat, stir in cottage cheese, sour cream, and 1 cup cheese.
  • Warm tortillas in the microwave, (I did mine all at once, it took forever, and they didn't turn out correctly), I'd recommend one at a time, for probably 10-15 seconds each.
  • Spoon roughly 1/4 cup of the mixture into each tortilla and roll up and place seam-side down in a 9x13 in baking dish.
  • Cover with enchilada sauce and remaining 1 cup cheese.
  • Bake for 15-20 minutes, or until sauce is bubbling, and cheese is lightly brown at the edges.
