Steps:

  • Heat grill to medium heat.
  • Cook and stir Alfredo sauce in medium saucepan on medium heat 4 to 5 min. or until heated through. Stir in spinach and crushed pepper. Remove from heat.

2 pkg instant pizza crust mix (if using lg cookie sheet as in pic)
1 c fresh spinach leaves or enough to spread over entire pizza
1 c chopped broccoli florets
1 jar(s) alfredo sauce
1 pkg shredded mozzerella

Steps:

  • 1. Prepare pizza crust as directed. (Some have different temp settings. So just keep an eye on them when baking.) Preheat oven to setting recommended on package.
  • 2. Chop broccoli florets into smaller pieces if you like. Keep spinach whole. It will shrink up when cooked.
  • 3. When dough is ready, spread on cookie sheet. Spread jar of alfredo sauce evenly over dough. Place as little or as much fresh spinach as you desire over sauce. Add chopped broccoli. Sprinkle shredded mozzarella evenly. Bake about 10 - 20 min or until cheese is melted & crust is golden brown.

1 (3/4 pound) boneless skinless chicken breast
Kosher salt and freshly ground black pepper
2 tablespoons butter
1 clove garlic, minced
1 teaspoon red pepper flakes
1 tablespoon all-purpose flour, plus more for work surface
1 cup heavy cream
1/4 cup grated Parmesan
1 (16-ounce) ball pizza dough, store-bought
2 cups baby spinach, well washed and dried
1 cup grape tomatoes, red and yellow
1 cup grated mozzarella
Olive oil, for brushing crust

Steps:

  • Preheat the oven to 375 degrees F. Adjust racks to the middle of the oven. Put pizza stone in the oven to preheat while you begin the sauce.
  • Preheat a grill pan over medium heat.
  • Season the chicken with salt and pepper, to taste. Put the chicken on the grill pan and grill until cooked through. Remove to a cutting board and dice. Set aside.
  • Melt the butter in a medium-sized saucepan over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Add the flour and cook until light blonde in color. Whisk in the cream, reduce the heat to low, and let simmer until thickened, about 2 minutes. Stir in Parmesan and season lightly with salt and pepper, to taste.
  • Flour your work surface and roll the pizza dough into a 13-inch diameter. Carefully remove the pizza stone from the oven and put the dough on top. Ladle the sauce to cover the bottom of the pizza. Evenly top with the baby spinach, grape tomatoes, grilled chicken and the mozzarella. Brush the edge of the crust with olive oil and season with salt and pepper, to taste. Bake the pizza until crisp and golden, about 25 minutes. Remove from oven and immediately top with another handful of spinach. Slice and serve.

4 Tbsp unsalted butter ((1/2 stick))
1/2 cup heavy cream
1 dash ground nutmeg
1 cup freshly grated Parmesan cheese
salt
black pepper
1 12" Parmesan Black Pepper Pizza Crust ((or your favorite crust))
1 cup shredded mozzarella
1 cup broccoli (chopped)
1/2 cup spinach leaves
1/2 cup cherry tomatoes (cut in half)
1/4 cup freshly grated Parmesan cheese
1/4 cup fresh basil (finely sliced or chopped, optional)

Steps:

  • To make the sauce, melt the butter in a medium saucepan over medium heat.
  • Add the nutmeg and cream to the butter. Whisk to combine. Simmer until the cream is heated through.
  • Turn the heat down to medium low. Add the Parmesan cheese. Stir occasionally until the cheese is melted. You do not want the heat too hot as it will cause the cheese to break and get lumpy.
  • When melted, add salt and pepper to taste. The sauce should be rather thick, much thicker than a normal pasta sauce. Set aside.
  • Prepare the pizza dough if not completed already. If following one of our recipes, follow instructions until the crust is par-baked (just barely cooked) and set aside.
  • Preheat oven to 450F. Place your pizza stone or baking sheet in the oven to heat.
  • Place your pizza crust on a peel or another surface that will allow you to easily transfer it to the oven. Something like a thin and flexible cutting board should work.
  • Season the crust edge if desired by lightly brushing the crust with a little olive oil and sprinkling with some Parmesan, garlic salt, or black pepper.
  • Spread out the alfredo sauce across the pizza to taste. The sauce should be pretty thick in texture.
  • Spread the mozzarella out across the pizza, with more or less to taste.
  • Spread your spinach, broccoli, and tomatoes (or vegetables of choice) over the pizza. Sprinkle with the fresh Parmesan.
  • When the oven is finished preheating, transfer the pizza to your pizza stone or baking sheet.
  • Cook until the cheese has started to turn brown, approximately 10-12 minutes (or to your desired doneness).
  • Remove the pizza from the oven. Sprinkle the fresh basil on top and some red pepper flakes if desired for an extra kick. Serve warm.

1 pound short pasta, such as penne or gemelli
1 cup ricotta cheese
2 tablespoons chopped fresh parsley
Zest of 1 lemon
7 tablespoons butter
One 10-ounce container mushrooms, sliced
Kosher salt and freshly ground black pepper
One 8-ounce bag fresh spinach
2 cloves garlic, minced
1 cup dry white wine or low-sodium vegetable broth
1 cup half-and-half
1/2 cup heavy cream
Low-sodium vegetable broth, as needed, for thinning
1 cup grated Parmesan
3/4 cup panko breadcrumbs

Steps:

  • Bring a large pot of water to a boil. Cook the pasta in the boiling water, draining it about 2 minutes before the time on the package. It should still be a bit firm. Rinse it in cold water to stop the cooking process and set aside.
  • Mix the ricotta with the parsley and lemon zest in a small bowl and set aside.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • In a large deep skillet over medium-high heat, melt 2 tablespoons of butter. Add the mushrooms and season with salt and pepper. Cook until the mushrooms have given up their liquid, 5 to 6 minutes. Add the spinach and garlic and cook, stirring frequently, until the spinach has wilted. Remove the vegetables and set aside, leaving any liquid in the skillet.
  • Add 2 tablespoons of butter to the skillet. Pour in the wine and let it bubble up and reduce for 1 1/2 to 2 minutes. Add the half-and-half and cream, season with salt and pepper and cook, whisking, until it's all combined. If it gets too thick as it cooks, you can thin it with a little vegetable broth. When the sauce looks good, remove it from the heat and stir in 3/4 cup of the Parmesan.
  • Melt the remaining 2 tablespoons butter in a small pan. Remove from the heat and stir in the breadcrumbs and remaining 1/4 cup Parmesan.
  • In the buttered baking dish, stir together the pasta, vegetables and sauce. (Add a splash of broth if needed). Add spoonfuls of the ricotta mixture, pushing them a bit into the pasta. Sprinkle the breadcrumb mixture over the top of the pasta. Cover and bake for 20 minutes. Uncover and cook until the top is brown and the mixture is bubbling, about 20 minutes more.

This is my favorite homemade pizza; these are the basic toppings though I vary sometimes depending on what's on hand. I make the dough in my bread machine and add a little garlic powder and basil or italian seasonings to the dough ingredients for extra flavor. Some measurements are approximate.

1 pizza dough
1 cup prepared alfredo sauce
1 (10 ounce) package frozen chopped spinach, cooked and drained
2 -3 boneless chicken breasts, cooked or grilled and diced
1/2 medium sweet onion, thinly sliced
1/3 cup sliced black olives, well drained
2 -3 tablespoons feta cheese, crumbled
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Roll dough out thin; put on lightly greased cookie sheet and prick holes all over to minimize bubbling.
  • Prebake the pizza dough at 425°F for 5-7 minutes, remove from oven.
  • Spread alfredo sauce to within 1" of edges.
  • Top with chicken, spinach, onion, feta and olives, then mozzarella and parmesan last.
  • If you like you can brush some olive oil around the edges of the crust.
  • Return to oven and bake at 425°F for 10-12 minutes or until done and bottom is browned.
  • Remove from oven and let stand a few minutes before slicing.
  • Delicious and even better warmed up the next day; I have also added mushrooms when I had them on hand.
