GRILLED SPINACH-ARTICHOKE SANDWICHES

- Combine half of the onion, the vinegar and a pinch of salt in a medium microwave-safe bowl. Microwave until hot; set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the remaining onion and cook, stirring, 3 minutes. Add the artichokes and heat through, 4 minutes. Stir in half of the spinach and cook until wilted, 2 more minutes. Remove from the heat and stir in the asiago, goat cheese, mayonnaise and the remaining spinach.
- Heat a grill pan over medium heat. Sandwich the spinach-artichoke mixture between the bread slices. Brush the sandwiches with olive oil and add to the grill pan. Grill 3 minutes per side. Let rest 2 minutes; cut in half.
- Drain the reserved onion. Drizzle with olive oil, then add the tomatoes, parsley, and salt and pepper to taste; toss. Serve with the sandwiches.

Steps:
- Heat olive oil in large saute pan.
- Add minced garlic and saute for 30 seconds. Add spinach and a pinch of salt and cook for a few minutes until wilted.
- Add chopped artichoke hearts and cook for about 2 minutes more.
- Remove from heat and stir in sour cream and parmesan cheese. Add salt and pepper to taste.
- Heat griddle or pan for frying. (You can use a panini press, but don't press down too hard or it will make a mess.).
- Meanwhile, spread margarine on one side of each piece of bread, or spray with cooking spray.
- On opposite side of 6 slices of bread sprinkle some jack cheese, then spread about 1/4 cup of spinach artichoke mixture. Top with some more shredded jack. Place top piece of bread, butter side out, on top, making 6 sandwiches.
- Grill until browned on each side.
- Let cool slightly before eating or you'll burn your mouth!

- Heat oven to 400°F. Lightly spray cookie sheet with cooking spray.
- Unroll dough onto cookie sheet; press into 14x9-inch rectangle. Bake 5 minutes. Remove from oven. Use spatula to carefully flip dough over. Return to oven; bake 5 minutes longer. Remove from oven; cut into 8 equal-size rectangles.
- In medium microwavable bowl, stir together spinach, artichokes, mayonnaise, garlic powder and Parmesan cheese. Microwave on High 30 seconds. Stir; microwave 30 seconds longer.
- Spread butter on one side of 1 slice of pizza dough; place buttered side down on hot griddle. Top with one-fourth of the spinach mixture. Butter another slice of pizza dough; place buttered side up on spinach mixture, forming a sandwich. Cook about 2 minutes. Turn sandwich; cook 2 minutes longer. Repeat with remaining pizza dough slices and spinach mixture to make 3 more sandwiches.

- Saute garlic and spinach: Heat 1 tsp butter in large non-stick skillet over medium heat. Add garlic and saute until lightly golden and fragrant, about 30 - 60 seconds. Add in spinach and artichokes, season with salt and saute until the spinach wilts.
- Remove excess moisture from spinach: Transfer mixture to several layers of paper towels. Once it's cool enough to handle wrap with paper towels and squeeze excess moisture from the spinach and artichokes.
- Assemble sandwiches: butter the outsides of all the slices of bread**. Then on the non-buttered side of 3 slices of bread layer half the cheese, then layer with the spinach artichoke mixture, dollop tiny spoonfuls of the sour cream over the spinach artichoke layer, then sprinkle remaining cheese over then top each with the remaining slices of bread (buttered side up).

- Mince the garlic. Drain and chop the artichokes. Wash and stem the spinach, then chop it coarsely.
- Heat about the olive oil in a skillet. Add the garlic and saute for 30 seconds. Then add the spinach and 1 pinch okosher salt, and saute for a few minutes until just limp. Add the artichokes and saute for another minute or so, until heated through. Drain off any liquid from the pan. Stir in the sour cream and another pinch of kosher salt.
- Spread butter (or olive oil) on one side of each of the bread pieces. Heat a griddle pan to medium high heat. Place 2 pieces of bread on the griddle, buttered side down. On each piece, spread some shredded cheese, the spinach artichoke filling, some more cheese (1/2 cup cheese per sandwich), and the other piece of bread. When the bottom bread is browned, flip the sandwich and cook until the bread is toasted and the cheese is melted.
