4 slices sourdough or multigrain bread
4 slices Monterey Jack cheese (3/4 ounce each)
1/2 cup water-packed artichoke hearts, rinsed, drained and halved
1/2 cup fresh baby spinach
4 slices tomato
1 tablespoon butter, softened

Steps:

  • Top two slices of bread with a slice of cheese each; layer each with 1/4 cup artichokes, 1/4 cup spinach, two tomato slices and remaining cheese. Top with remaining bread. Spread butter over outside of sandwiches. , Cook on a panini maker or indoor grill until bread is toasted and cheese is melted.

Spinach, Artichoke and Monterey Jack Grilled Cheese image

Turn the classic flavors of spinach and artichokes into a decadent grilled cheese by layering them with gooey, melty monterey jack cheese.

Number Of Ingredients 10

2 tablespoons olive oil
2 garlic cloves, peeled and smashed
4 cups fresh baby spinach, coarsely chopped
1/2 cup coarsely chopped water-packed artichoke hearts, rinsed and drained
3 tablespoons sour cream
1/8 teaspoon ground nutmeg
Salt and pepper to taste
8 slices firm white bread
4 ounces Red Barn Monterey Jack cheese, shredded (1 cup)
4 tablespoons butter, softened

Steps:

  • Instructions Warm olive oil in a large saucepan over medium heat. Add garlic; cook and stir for 1 minute. Remove garlic with a slotted spoon and discard. Add spinach; cook and stir until wilted. Reduce heat to low. Stir in the artichoke hearts, sour cream and nutmeg; heat through. (Do not boil.) Remove from the heat. Season with salt and pepper to taste. Top four slices of bread with 2 tablespoons monterey jack. Layer with spinach-artichoke mixture. Top with remaining monterey jack and bread. Spread butter on the outside of sandwiches. Toast one sandwich, covered, in a large skillet over medium heat for 2-3 minutes or until the side is golden brown. Flip sandwich; cook, uncovered, 2-4 minutes longer or until bread is lightly golden brown and cheese is melted. Repeat step with remaining sandwiches.

1 1/2 cups half-and-half
8 oz. grated Monterey Jack cheese
8 oz. light cream cheese
1 tsp. garlic powder
1 1/2 tsp. Worcestershire sauce
1/2 tsp. salt
Fresh ground pepper to taste
3/4 lb. fresh spinach (stemmed and chopped)
2-14 oz cans of artichoke hearts (rinsed, drained and chopped)
4 green onions, chopped
tortilla chips, pita, etc. for dipping

Steps:

  • Bring the cream to a simmer over medium heat and add the Monterey Jack, cream cheese, garlic powder, Worcestershire, salt and fresh pepper. Continuously stir to prevent sticking until the cheeses melt.
  • While slowly stirring, add the spinach, artichoke hearts, and scallions. Stir until mixed and the spinach is wilted.
  • This dip can be served immediately or served chilled.

Number Of Ingredients 11

2 -3 tablespoons olive oil
5 -6 ounces Baby Spinach
1 (15 ounce) can artichoke hearts, chopped
5 -6 minced garlic cloves
1 tablespoon olive oil
6 tablespoons sour cream
1/2 cup parmesan cheese
3 cups shredded monterey jack cheese
12 pieces sliced bread (French or Sourdough)
salt and pepper
margarine or cooking spray

Steps:

  • Heat olive oil in large saute pan.
  • Add minced garlic and saute for 30 seconds. Add spinach and a pinch of salt and cook for a few minutes until wilted.
  • Add chopped artichoke hearts and cook for about 2 minutes more.
  • Remove from heat and stir in sour cream and parmesan cheese. Add salt and pepper to taste.
  • Heat griddle or pan for frying. (You can use a panini press, but don't press down too hard or it will make a mess.).
  • Meanwhile, spread margarine on one side of each piece of bread, or spray with cooking spray.
  • On opposite side of 6 slices of bread sprinkle some jack cheese, then spread about 1/4 cup of spinach artichoke mixture. Top with some more shredded jack. Place top piece of bread, butter side out, on top, making 6 sandwiches.
  • Grill until browned on each side.
  • Let cool slightly before eating or you'll burn your mouth!
