APPLE SPINACH SALAD
This classic apple spinach salad is easy to make with fresh ingredients, tossed with a quick apple cider vinaigrette, and easy to customize with your favorite add-ins.

Steps:
- Combine all of the vinaigrette ingredients together in a bowl and whisk vigorously (or shake them together in a mason jar) to combine.
- Add spinach, apples, red onion, walnuts, dried cranberries, and half of the goat cheese to a large bowl. Drizzle with the vinaigrette, and toss to combine.
- Serve immediately, garnished with the remaining goat cheese, and enjoy!
ALMOND APPLE SPINACH SALAD WITH SUMAC DRESSING

- In a small bowl, whisk together olive oil, dijon mustard, sumac, and lemon juice. Taste and season as needed with salt and pepper. Set aside
- In a large bowl, combine spinach, sliced apples, and chopped onions. Dress with sumac dressing and toss to combine

A simple salad that lets you enjoy your fall harvest of apples. Sweetened with a crunchy punch of lightly toasted almonds.

- In a small bowl, thoroughly mix together the onion, vinegars, sesame seeds and paprika. Stir in the 2 Tablespoons sugar. Gradually whisk in the olive oil then season to taste with salt and pepper.
- Melt the butter in a large skillet over medium heat. Toss in the almonds and cook until the almonds begin to brown, about 2 minutes, stirring frequently to avoid burning. Sprinkle the remaining 1 Tablespoon sugar evenly over the almonds and toss until the sugar melts and begins to turn golden, about 2 more minutes. Transfer toasted almonds to a plate to cool.
- In a large bowl, combine the spinach leaves and sliced apples. Toss with just enough dressing to coat. Mix in the almonds and cheese. Serve the salad with the remaining dressing separately.

- 1. Combine onion, vinegars, sesame seeds and paprika in a small bowl. Mix in 2 Tbsp. sugar. Gradually whisk in olive oil. Season with salt and pepper.
- 2. Melt butter in a heavy skillet over medium heat. Add almonds and stir until they begin to color about 2 minutes. Sprinkle remaining 1 Tbsp. sugar over the almonds and stir until they turn golden, about 2 minutes longer. Transfer almonds to a bowl and cool. Break up almonds as they cool if they begin sticking together. (Dressing and almonds may be prepared several hours ahead. Cover separately and let stand at room temperature.)
- 3. Combine spinach and apples in a large bowl. Toss with dressing. Mix in almonds.

- Melt butter in heavy large skillet over medium heat. Add almonds. Stir until almonds begin to color, about 2 minutes. Sprinkle remaining 1 tablespoon sugar over. Stir until sugar melts and begins to turn golden, about 2 minutes longer. Transfer almonds to bowl and cool. (Dressing and almonds can be prepared 4 hours ahead. Cover separately and let stand at room temperature.)
- Combine spinach and apples in large bowl. Toss with enough dressing to coat. Mix in almonds. Serve salad, passing any remaining dressing separately.
