1 Haas avocado, halved, pitted, peeled, and diced
1 tablespoon fresh lemon juice
Coarse salt and ground pepper
4 large eggs plus 4 large egg whites
1/4 cup fortified low-fat milk
1/2 teaspoon dried rosemary, crumbled
3 tablespoons canola oil
1/2 cup minced onion
1 small jalapeno pepper (ribs and seeds discarded), minced
2 cups fresh baby spinach, shredded
1 bunch chives, thinly sliced
1 cup shredded reduced-fat Swiss cheese
Sliced mango and kiwi, for serving

Steps:

  • In a small bowl, toss the avocado with the lemon juice, season with salt and pepper, and set aside.
  • In a medium bowl, whisk together eggs, egg whites, milk, rosemary, salt, and pepper.
  • In a nonstick skillet, heat 1 tablespoon oil over medium. Add onion and cook until tender, about 4 minutes. Add jalapeno and spinach; cook until the spinach has wilted, about 1 minute. Transfer to a bowl; stir in chives and cheese; set aside.
  • Wipe the skillet and add 1 tablespoon oil. Add half the egg mixture and cook until nearly set, 1 to 2 minutes. Spoon half of the spinach mixture into the center, fold the omelet over, halve crosswise, and place on serving plate. Top with half the avocado. Repeat with remaining tablespoon of oil, egg and spinach mixtures, and avocado. Serve with mango and kiwi.

These paper-thin omelettes, filled with spinach and herbs that can double as a wrap are quick and easy to make.

2 large eggs
2 Tablespoons heavy cream or coconut milk
A few fresh herbs such as chives, flat leaf parsley, tarragon and chervil
1 small handful of baby spinach, washed
Pinch fine sea salt
Freshly ground black pepper
Butter or coconut oil for pan
Lightly dressed salad greens of your choice
1 or 2 ounces fresh goat cheese, crumbled (optional)

Steps:

  • Soak the eggs in warm tap water for a few minutes to bring them to room temperature (this allows for the omelette to cook faster and more evenly.)
  • In the bowl of a food processor pulse the fresh herbs and spinach until finely chopped.
  • Add the eggs, cream, a pinch of salt and pepper and pulse until well combined.
  • In a non-stick omelet or crêpe pan, melt a pat of butter or spoonful of coconut oil over medium-high heat, tilting the pan so that it coats the surface evenly.
  • When the butter is just beginning to brown, add the egg mixture swirling quickly so that it forms an even layer over the bottom of the pan.
  • Cook just until the egg is set (this should only take a minute or two). It's done when the edges are dry and the top is just set.
  • Run a spatula around the edges and lift slightly to loosen it from the pan.
  • Repeat with remaining egg mixture.
  • Plate and fill with salad greens and crumbled cheese (if using), folding half of the omelette over the filling.

1/2 tablespoon medium chopped fresh Italian parsley
1/2 tablespoon medium chopped fresh chervil
3/4 tablespoon thin sliced fresh chives
1/2 teaspoon thin sliced fresh tarragon
2 extra-large eggs
2 tablespoons milk
Pinch kosher salt
1/8 teaspoon freshly ground black pepper
1 tablespoon extra-virgin olive oil
2 ounces plain goat cheese
2 ounces roasted red peppers, julienned

Steps:

  • To make the Fines Herbs, combine the parsley, chervil, chives and tarragon in a small bowl and set aside.
  • Break the eggs into a small bowl, and then add the milk, 2 tablespoons Fines Herbs, salt and pepper and whisk with a fork.
  • Preheat an 8-inch nonstick saute pan over medium hot heat and swirl the olive oil into the pan. Pour in the egg mixture and swirl it in the pan. For a few seconds, gently stir the egg mixture with a heat resistant rubber spatula (as if you were going to make scrambled eggs) and then swirl the eggs in the pan to make a nice round appearance. Reduce the heat to avoid any color or scorching. Continue cooking for about 1 minute. The eggs will be set on the bottom, but slightly liquid on top.
  • Flip the omelet, and remove it from the heat. Crumble the goat cheese over the center of the omelet and top it off with the roasted peppers. Tri-fold the omelet and plate immediately.

Delicious omelette filled with cheese and an herb, mushroom and onion mix. The flavors go exceptionally well together and create a completely new flavor inside the egg. Omelette making technique is from Julia Child's "Mastering the Art of French Cooking."

4 white mushrooms
1/2 small white onion
1 teaspoon minced garlic
2 slices American cheese
3 eggs
1 1/4 tablespoons butter
1 teaspoon basil
1 pinch table salt
1 pinch black pepper

Steps:

  • Cut mushrooms into slices of desired size.
  • Chop small white onion into pieces.
  • Melt 1/4 tablespoon butter in a small pan over medium heat. When the melted butter has coated the pan, add the mushroom slices and onions. Sprinkle the basil over the ingredients in the pan and stir. Saute over medium heat until the mushrooms start to turn brown on the edges, about 10 minutes. When done, put to the side.
  • While the mushrooms and onions are cooking, break the eggs into a mixing bowl and add the pinches of salt and pepper. Using a fork, wisk the eggs until the yolk is just mixed with the whites.
  • THE NEXT STEPS MUST BE DONE AFTER PREPARATION IS COMPLETE, AS IT GOES VERY QUICKLY (< 1 MINUTE).
  • On high heat, melt a table spoon of butter in a pan that has a cooking surface of about 7 inches in diameter.
  • When the butter stops foaming and is about to turn brown, add the egg mixture into the pan.
  • Quickly, whisk the egg in the pan until it looks like a broken custard material. Add the cheese and mushroom/herb mixture from before and let cook for another 10 to 15 seconds.
  • Use the fork to make sure the omelette didn't stick to the pan.
  • Use the fork to flip the edge of the omelette up, and hold the pan at 45°. Use the fork and the pan itself to make the omelette roll down on itself. This technique is tricky and requires some practice, but if done right, the omelette can just roll onto a plate.
  • Garnish with parsley if desired.
  • *NOTE* - I use American cheese because it melts fast, but it is entirely possible to use other types of cheese, but take a grater to it first. Enjoy!

This is mostly greens and very little egg. This recipes makes a lot extra so you can have greens kept in the freezer to pull out and add egg to make in a jiffy. Half a mixing bowl of greens will yield one Kuku omelette for 2 people or slice like pizza and serve for appetizers with pita bread.

2 leeks
2 bunches flat leaf parsley
3 bunches cilantro
2 bunches scallions
dill (dried or fresh)
1 bunch Baby Spinach or 1/2 bunch regular fresh spinach
2 -3 eggs
olive oil
salt
pepper
cumin
turmeric
ground coriander
coriander seed, if you can find them

Steps:

  • Clean and dry all the fresh herbs well.
  • Chop up all the herbs (this recipe makes enough to freeze a lot of the herbs in a large tupperware for future use.
  • In a medium size mixing bowl combine herbs - fill bowl almost halfway.
  • Add a few shakes of each spice (be careful not to overdo the cumin. I go heavy on the coriander (both forms- ground and seeds).
  • Gently mix in 2 eggs with the herbs.
  • Add olive oil to the bottom of a large teflon frying pan (I also add some more spices to the oil).
  • Put mixture of herbs and eggs (it looks very green and not very eggy at all) into the pan and flatten to an omelette shape. I like to make it very thin so it cooks very well throughout.
  • Cook until brown and flip - I usually slide it onto a plate and then add a little more oil to the pan and flip the omelette from the plate to the pan to finish browning the other side.
  • When browned slide Kuku onto a plate add some salt if preferred and serve with pita bread. Good with plain yogurt too. Healthy and delish! Enjoy! My friends love when I make this for them.

1 pound spinach, washed and stemmed
1 tablespoon butter
1 shallot, minced
Kosher salt and freshly ground black pepper
Pinch nutmeg
4 eggs, separated
2 tablespoons finely grated fresh Parmesan cheese or Gruyere

Steps:

  • Wash the spinach and cut off the stems. Spin the excess water out. Drop the spinach into a large pot on the stove to wilt, about 3 minutes. (There will be enough water still clinging to the leaves to steam it.) When the spinach is cooked, drain, and plunge it into an ice-bath to seize the color. Remove the spinach and squeeze dry in a tea towel. Chop the spinach. Heat half the butter in a frying pan, and gently saute the shallot. Add the spinach, and season with salt, pepper, and nutmeg. When hot, turn off the heat, and set aside. Put the yolks in a metal bowl and set over a pot of gently simmering water (make sure the water does not touch the bottom of the bowl.) Season the eggs with salt, and pepper, and whisk until thick and frothy. Remove the bowl from the heat. In a separate bowl, beat the whites to stiff peaks, and fold into the yolk mixture. Heat the remaining butter in a large frying pan for the omelet. Cook's Note: a no-stick pan will simplify your life. Pour the egg into the pan and cook until the bottom is set, and golden, and the top is still fluffy and soft, about 3 to 5 minutes. Scatter the spinach mixture all over the omelet, then the cheese. Cover the pan for a few minutes to soften the cheese. Uncover, and fold the omelet in half, and slide it onto a plate. Serve immediately.;

  • Heat the olive oil in a medium-sized, nonstick skillet. Add the onion and saute until lightly browned. Add the garlic, spinach leaves, and 1 tablespoon parsley. Cook, tossing, until the spinach is nice and wilty. Remove the spinach-onion mixture to a plate and set aside.
  • With a paper towel, wipe out the nonstick pan. Spray the pan well with olive oil and heat over medium heat. Lightly mix in the salt, pepper, Old Bay, and 1 tablespoon parsley into the egg whites. Add the egg whites to the pan. Let cook until just about cooked through (don't touch it!). Add the spinach-onion mixture down the middle of the pan over the egg whites. Sprinkle 1 tablespoon feta cheese.
  • Using a spatula (or two - I use a spatula and rubber spatula together), gently fold one side of the egg whites over top the spinach. Repeat with the other side to form the omelet (it will probably tear a little since the egg whites are delicate - this is ok! mine did).
  • Transfer omelet to serving plate. Sprinkle the remaining feta and parsley over top and serve. Yield: 1 omelet.
