Light, fluffy, and flavorful gluten-free flatbread, made in 1 bowl in just 20 minutes! The perfect companion for dips, spreads, wraps, and more!

1 cup light coconut milk (canned), plus more as needed
1 Tbsp olive oil ((if oil-free, omit or try subbing tahini))
1 tsp apple cider vinegar
2 tsp baking powder
1/2 heaping tsp sea salt
3/4 tsp garlic powder
3/4 tsp dried oregano
1/2 cup coconut flour*
3/4 cup oat flour* ((ground from gluten-free oats))
3/4 cup potato starch ((NOT flour // potato starch is pretty key here for fluffy texture, so we recommend against subbing it out))
1/4 cup gluten-free all-purpose flour

Steps:

  • In a medium mixing bowl add light coconut milk, olive oil, and apple cider vinegar and whisk to combine.
  • Add baking powder, sea salt, garlic powder, and dried oregano and whisk to combine. The mixture will likely fluff up and foam from the reaction of the baking powder and apple cider vinegar. This is normal and good!
  • Next, add coconut flour, oat flour, and potato starch and stir with a wooden spoon to combine. Let rest 5 minutes uncovered.
  • At this point you should have a dough that is malleable and very slightly tacky but doesn't stick to your hands. The dough should start pulling away from the sides of the bowl when the right amount of moisture is achieved, and it shouldn't be crumbly at all. Add a bit more of each flour until you reach the right consistency.
  • Scoop out 1 ball of dough (~3 Tbsp in size) and place between two pieces of parchment paper. Use a rolling pin to roll into a thin oval shape slightly larger than 1/8-inch thick. For fluffier, thicker flatbread roll to slightly less than 1/4-inch thick and cook slightly longer. NOTE: If sticking or too tacky, add a light dusting of GF flour to the dough while rolling out (optional - shouldn't be necessary).
  • Heat a skillet (cast iron is best, or non-stick) over medium/medium-high heat. Once hot, spray or drizzle with a little oil. Then use hands to carefully transfer the dough to the pan. If it cracks at all, just carefully and quickly patch back together with your hands (be careful not to touch the hot skillet).
  • Cook for 2-3 minutes or until the underside is golden brown. Bubbles may form while it's cooking - that's normal and good. Flip carefully and cook for another 2-3 minutes. Lower heat as needed to ensure it doesn't burn. You'll know it's done when both sides are golden brown.
  • Repeat this process until all dough is used (~6 large or 10-12 mini flatbreads as the original recipe is written).
  • Store leftovers covered in the refrigerator or at room temperature for up to 2-3 days. To freeze, place cooked, cooled flatbread in a freezer-safe container or bag (adding parchment paper between each flatbread will prevent sticking) and freeze for up to 1 month. As with most bread, best when fresh.
  • To serve, either heat from frozen in a toaster oven, thaw overnight and then heat in a skillet, or microwave from frozen until warm.

2 1/2 cups all purpose gluten free flour blend ((I used Better Batter))
1 1/4 teaspoons xanthan gum (omit if your blend already contains it)
3 tablespoons whole grain teff (whole or ground into a flour)
9 tablespoons certified gluten free oat flour ((I just grind old fashioned gluten free rolled oats into a powder))
1/4 teaspoon cream of tartar
1/4 teaspoon baking soda
2 tablespoons granulated sugar
1 tablespoon instant yeast ((See Recipe Notes))
1 1/2 teaspoons kosher salt
5 tablespoons unsalted butter (at room temperature)
1 teaspoon apple cider vinegar
1 tablespoon unsulphured molasses
2 egg whites (at room temperature)
1 1/2 cups warm milk ((about 95°F))

Steps:

  • Grease and line a standard 9-inch x 5-inch loaf pan or a 1 1/2-pound Pullman loaf pan and set it aside.
  • In the bowl of your stand mixer fitted with the paddle attachment, place the flour, xanthan gum, teff, oat flour, cream of tartar, baking soda, sugar and yeast.
  • Whisk with a separate handheld whisk to combine well. Add the salt and whisk again to combine.
  • Add the butter, vinegar, molasses, egg whites and milk, and mix on low speed with the paddle attachment until the dough starts to come together, then mix on high for about 5 minutes.
  • Transfer the dough to the prepared loaf pan and smooth the top with a wet spatula. Cover the dough with oiled with plastic wrap or the top of the Pullman pan.
  • Place the covered pan in a warm, draft-free area to rise until the dough is about 150% of its original volume.
  • When the dough is nearly finished rising, preheat your oven to 375°F.
  • Remove the plastic wrap and place the loaf pan in the center of the preheated oven. Remove the plastic wrap. If using a Pullman pan, keep the cover in place.
  • If using a standard loaf pan, bake for about 30 minutes or until the loaf is firm enough to take out of the pan.
  • If using a Pullman pan, bake for 40 minutes before removing the pan cover.
  • In both cases, remove the bread from the loaf pan and place it on a rimmed baking sheet. Return the bread on the pan to the oven, and bake for another 15 to 20 minutes, or until the top is nicely browned, and the loaf sounds hollow when tapped.
  • Remove from the oven, allow to cool on the baking sheet for 10 minutes. Transfer to a wire rack to cool completely before slicing and serving.

1 cup tapioca flour
3 teaspoons xanthan gum
1 1/2 teaspoons salt

1 1/2 cups lukewarm water

2 tablespoons butter or 2 tablespoons margarine, melted
3 egg whites, beaten slightly
1 teaspoon vinegar

Steps:

  • In the bowl of a heavy-duty mixer, place flours, xanthan gum, salt, and egg replacer (if used).Blend with mixer on low.
  • In a small bowl dissolve the sugar in the water, and add yeast.
  • Wait until the mixture foams slightly, then blend into the dry ingredients.
  • Add the butter, egg whites, and vinegar.Beat on high for 3 minutes.
  • To form loaves, spoon dough onto greased and cornmeal-dusted cookie sheets in two long French-loaf shapes or spoon into special French-bread pans.
  • Slash diagonally every few inches.If desired, brush with melted butter.
  • Cover the dough and let rise in a warm place until doubled in bulk, 20 to 25 minutes.
  • Preheat oven to 400 degrees. Bake for 40 to 45 minutes.
  • Remove from pan to cool.

2 tablespoons light brown sugar or 2 tablespoons dark brown sugar
1/8 teaspoon ground ginger
1 1/2 teaspoons salt
1 1/2 cups bread flour
1 1/2 cups whole wheat flour
1 package active dry yeast
2 tablespoons cornmeal, for dusting baking sheet

Steps:

  • Add all ingredients except cornmeal to bread machine pan in the order recommended by your machine's manufacturer.
  • Select dough cycle and start machine.

  • In large bowl, dissolve yeast, brown sugar, and ginger in warm water.
  • Let stand 5 minutes until yeast foams.
  • Add salt and bread flour; beat well.
  • Stir in whole wheat flour to make a stiff dough.
  • Turn out onto lightly floured board and knead 10 minutes or until dough is springy, smooth and satiny.
  • Wash bowl, grease it, and add dough to bowl; turn over to grease top.
  • Let rise in a warm place until doubled in bulk, about 1 hour.

  • Lightly oil or grease a 14x17" baking sheet and sprinkle with cornmeal; set aside.
  • Punch down the dough.
  • Divide in half and, on a lightly floured surface, shape into long loaves, rolling each piece first into a 5x12" rectangle, then rolling each up along the long side to make a long, narrow loaf.
  • Pinch edges to seal, and taper ends.
  • Place loaves, seam side down, on prepared baking sheet.
  • Let rise until doubled, about 45 minutes.
  • Make 4-5 slashes across each loaf with sharp knife or razor blade.
  • Brush each loaf with water and sprinkle with whole wheat flour.
  • Bake in a preheated 400 degree F oven for 15-20 minutes, until loaves are browned and crisp.
  • Remove to a wire rack to cool completely.
  • NOTE: I also use a spray bottle filled with water and spray the loaves and oven walls once or twice at 5-minute intervals at the beginning of baking.
  • You could also make this into one large oblong loaf or a round loaf, but baking time would need to be increased.

It is hard to believe that something as ordinary as a loaf of bread could nearly bring tears to my eyes - But that is what happened the other night when I sliced into the loaf of fresh-baked bread I had just pulled from the oven. I can't take full credit - It's based on a recipe by a woman named Laurie on the Celiac.com forums. But this is really some stellar bread - Hands down the best gluten-free bread I've had. It stays pliable and delicious without freezing or toasting. Don't skip out on the flaxseeds, they add nutrition and texture without too much "flaxy" taste.

1/2 cup brown rice flour
1/2 cup sorghum flour
1/4 cup amaranth flour
1/4 cup tapioca starch
1/4 cup cornstarch or 1/4 cup arrowroot
1/4 cup flax seed meal (ground flax seeds)
3 teaspoons xanthan gum
2 teaspoons active dry yeast
1 teaspoon salt
2 eggs
2 additional egg whites
1 cup water, room temperature
2 tablespoons vegetable oil
2 tablespoons honey or 2 tablespoons agave nectar
2 teaspoons apple cider vinegar

Steps:

  • Preheat the oven to 200°F.
  • Sift the flours, yeast and all other dry ingredients together into a medium bowl. Stir in flax meal and combine.
  • Combine the wet ingredients in a separate large bowl using a hand-mixer on low or medium speed. When fully combined, slowly add dry ingredient mixture and mix until fully blended, with no lumps. Scrape the sides regularly.
  • Grease a 9x5" bread pan, and pour the dough into the pan. Turn off the oven and immediately place the pan in it. Do not open the door again, if possible. Allow the dough to rise for 90 minutes. It should rise to the very top of the pan.
  • Increase heat to 350F and bake for approximately 40 minutes. The crust should be golden-brown. Allow to cool slightly before removing it from the pan to finish cooling. Do not slice until the bread is no longer hot.
  • This loaf does not need to be frozen, but if there are leftovers after a few days, place slices in airtight bags and freeze.
