RASPBERRY CRUMBLE BARS

These Raspberry Crumble Bars are THE BEST! So soft, buttery, and delicious. My favorite summer dessert.

Number Of Ingredients 11

two 12-ounce bags of frozen raspberries (see notes)
1/2 cup granulated sugar (more depending on tartness of your berries)
2 tablespoons flour
1 tablespoon cornstarch
juice of one lemon
3 cups rolled oats
3 cups flour
2 cups brown sugar (loosely packed)
1 teaspoon baking powder
1 1/2 cups melted butter (I prefer salted)
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees. Place raspberries in a large colander. Run warm water over them for a minute, and then let the liquid drain out for about an hour until softened and thoroughly drained (see notes). Mix raspberries with sugar, flour, cornstarch, and lemon juice.
  • Mix the oats, flour, sugar, baking powder, butter, and salt together into a crumble-like mixture. Press two thirds of the crumble into the bottom of a 9×13 pan lined with parchment paper. Bake for 10 minutes.
  • Arrange the raspberry layer on top of the baked bottom layer. Sprinkle with remaining crumble. Bake for another 25-30 minutes.
  • Remove from oven. They will need a little time to set up into "bar" formation, so chill them for a few hours to get them really solid. Orrrr... cut into it right away and eat it like a soft fruit crisp! You should be able to remove them from the pan easily by pulling up on the edges of the parchment paper.

Number Of Ingredients 13

1 ¾ cups old-fashioned rolled oats
¾ cup all-purpose flour (or gluten-free baking flour blend, see Notes below for suggestions)
⅓ cup brown sugar, packed
Zest of 1 lemon (~2 tsp.)
½ tsp. baking powder
¼ tsp. cinnamon
¼ tsp. salt
½ cup (8 Tbsp.) unsalted butter, softened to room temperature - may substitute coconut oil or vegan butter for dairy-free and/or vegan
½ tsp. pure vanilla extract
2 ½ cups fresh berries (we used 1 cup each diced strawberries and blueberries + ½ cup raspberries)
½ cup fruit-sweetened strawberry or raspberry jam (such as Crofters, Trader Joe's or Thrive Market)
½ tsp. pure vanilla extract
Pinch of salt

Steps:

  • Preheat the oven to 375℉. Line an 8×8-inch square baking pan with parchment paper.
  • In a bowl, mix together the oats, flour, brown sugar, lemon zest, baking powder, cinnamon, and salt.
  • Add the softened butter and vanilla and, using a large spoon or your hands, work the butter into the oat mixture until you get a crumbly dough that will stick together if you pinch it between your fingers.
  • Measure out 1 ½ cups of the crust and crumb topping mixture and set aside in the refrigerator.
  • Press the remaining crust mixture into the bottom of the parchment paper-lined baking pan using the back of a spoon or spatula or slightly damp fingers. Press the mixture into the pan firmly then use a fork to prick the crust 8-10 times.
  • Bake the crust for 10-12 minutes or until the edges look just slightly brown and the crust starts to puff and look set.
  • While the crust is baking, wipe out the bowl you used to mix the crust and add the filling ingredients. Stir to combine.
  • Remove the crust from the oven then spread the filling in an even layer over the hot crust. Crumble the remaining crust mixture over the top of the filling.
  • Bake for 30-35 minutes or until the crust is lightly browned and the filling is bubbling.
  • Remove from the oven and place the pan on a wire rack and allow the bars to cool completely then transfer the pan to the fridge for at least 2 hours before cutting.
  • To cut cooled bars, use the parchment paper to lift the bars onto a cutting board then cut into 16 squares.
  • Store leftover bars in a covered container in the fridge for up to 4 days.

I like to think of these fruit and oat bars as a grownup version of one of my favorite lunchbox snacks. I'll bake these through spring and summer and bring them to picnics and cookouts every chance I get. The oat crumble comes together super quickly and the fruit layer works with just about any fresh or frozen berries that are on hand.

Nonstick baking spray
2 1/2 cups fresh or frozen berries (I like a mix of blueberries and quartered strawberries)
1 tablespoon granulated or brown sugar
1 lemon, zested, then 1/2 the lemon, juiced
1 teaspoon pure vanilla extract
Pinch fine salt
1 1/2 cups all-purpose flour
1 1/2 cups rolled oats
1 cup lightly packed light brown sugar
1 teaspoon fine salt
10 tablespoons unsalted butter, at room temperature

Steps:

  • Preheat the oven to 375 degrees F. Spray a 9-inch square baking pan with baking spray and line with parchment paper, leaving an overhang on two sides of the pan (for easy removal after baking).
  • For the fruit: In a medium bowl, toss together the berries, sugar, lemon zest and juice, vanilla and salt. Set aside.
  • For the crumble: In a large bowl, combine the flour, oats, brown sugar and salt. Add the butter and use your hands to work the butter into the oat mixture until crumbly and combined.
  • Press a little more than half of the crumble into your prepared pan. Pour the sugared berries over the pressed crust and top with the remaining crumble.
  • Bake the bars for 25 minutes, then reduce the oven temperature to 350 degrees F and continue baking until the center is bubbly and the topping is golden, 30 to 35 minutes. Let cool completely, lift out of the pan and slice into 16 bars.

  • Spread fruit mixture on top. Crumble remaining oat mixture on top of fruit; pat down slightly.
  • Microwave on HIGH 2 to 4 minutes or until set; check after 2 minutes.
  • Let stand 20 minutes before cutting.

1 teaspoon baking soda
3/4 teaspoon salt
1 1/4 teaspoons ground cinnamon
4 cups quick-cooking oats
1 1/2 cups packed light-brown sugar
1 1/2 cups (3 sticks) unsalted butter, cut into 1/2-inch pieces

Steps:

  • Heat oven to 375 degrees. In a large bowl, whisk together flour, baking soda, salt, and cinnamon. Stir in oats and brown sugar. Using your fingers, work butter into mixture until combined; mixture should be crumbly but hold together.
  • Line an 11-by-17-inch baking pan with parchment paper. Press 5 cups oat mixture into bottom of pan. Spread desired filling over oat mixture. Sprinkle remaining oat mixture over filling. Bake until golden, about 40 minutes. Transfer pan to a wire rack to cool. Cut into 1 1/4-by-2 1/2-inch pieces; makes about 60.

These are your basic oatmeal-on-the-top-and-bottom-with-fruit-in-the-middle dessert bars. I usually make them for a potluck or a get-together (along with something else), because they make quite a few, they're good if someone doesn't want chocolate, and most everyone likes them. Also, you can choose whatever flavor of pie filling you want for the middle. They also freeze REALLY well and taste really good cold (not that I would know from personal experience ;) ). Adapted from the Better Homes and Gardens New Baking Book.

2 1/2 cups quick-cooking rolled oats
1 1/2 cups brown sugar, packed

1 (21 ounce) can pie filling, any flavor of choice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, stir together flour, oats, brown sugar, and baking soda.
  • Stir in melted butter until combined. Set 2 cups of the mixture aside for topping.
  • Press the remaining mixture into the bottom of an ungreased, foil-lined 15x10x1-inch baking pan. Bake at 350 degrees F for 12 minutes.
  • Cut large pieces of fruit in pie filling so they are smaller. Carefully spread pie filling on top of baked crust.
  • Sprinkle the reserved topping mixture over the pie filling, and gently pat the mixture into the filling.
  • Bake at 350 degrees F for 20-25 minutes more (I usually only do 21 minutes) or until the top is golden.
  • Cool in pan on a wire rack. When cool, cut into bars.

1/2 yellow or white cake mix
1 1/2 c old fashioned oats
2/3 stick butter,melted
1/2 jar(s) preserves of your choice
2 Tbsp warm water

Steps:

  • 1. Mix cake mix & oats in bowl. Pour in melted butter stir until crumbly.
  • 2. In another bowl put preserves & water stirring well to thin out preserves.
  • 3. Pat 1/2 of the crumb mixture in ungreased 8x8 pan patting well to make crust.
  • 4. Spread preserves over bottom layer stopping about 1/4 inch in from all the sides (don't spread preserves to edge of pan they will burn)
  • 5. Sprinkle remaining crumb mixture over top completely covering preserve mixture, pat top down evening out layer of topping.
  • 6. Bake for about 18-20 minutes at 375 degrees (they will be light colored not brown at all but don't cook for any longer than 20 minutes cause the bottom will burn. Remove from oven and cool. When cool cut into bars... enjoy
